Kambingan: All-Time Favorite of Dabawenyos
A goat or “kambing” in bisaya is one of the best local foods in Davao, best served in local restaurants and “Carinderias”. Since Davao is closest to the agricultural sector, many local perks have proved them it is the best specialty of cuisine by Davaoñoes.
The best place to eat kambing is at Sasa Public Market. They serve the best steamed and exotic kambing foods in the city. They serve in different types of dishes popularly known as Afritada, Kaldireta, Tinola, Kinilaw na Kambing and many more.

Davaoeñoes love to visit the market place not to buy fruits and vegetables but because they have been known to be the best in kambingan business. You can never resist the tasty kambing dish servings they serve especially when the food is still hot. You have to grind eating the chunky meat of a goat while chewing its meat. Sutukil, is a local dish popularized by Davaoeñoes in many places of the Southern Mindanao. It stands for the name Sugba, Kilaw and Tinola. When you pair it with seafoods like Smoked Bangus, Bulad, Tuna Belly and Manga with Bagoong, your meal is complete with these pairings.
There is also this served “Pinapaitan”, a part of kambing served though tastes bitter having a quality taste that can only be found on this dish. It is also best to pair with beer and friends, a test of strength in eating this food.
The goat tastes like chicken meat and its organs such as the bladder, liver, heart and other parts taste like creamy mushrooms. Once it is on your mouth, the yummy sensation that it gives you in your tongue gives you the surprise of its madness. It’s creamy and tender meat has a magic in its taste. You’ll be asking for more with this dish but not getting enough of it. Though the meat depends on the age a goat when an old kambing is served in the plate, it’s difficult to chew. So it has to be cooked through a pressure cooker.
When cooking the dish, you have to check from time to time, limiting its time consumed in the cook. Too much pressure then the meat will deteriorate; less pressure the meat will still be tough. A goat meat has a different tender than the chicken, pork and beef. Its only difference, its inner organs gives it more volume to its taste.
Most likely, the place is always crowded with local tourists during many festivities in the city Kambingfoods are best served when it is correctly cooked because its meat with the right amount of cooking. Hence, this is to avoid overcooking and undercooking the meat.
