The Biography of a Chocolate Bar
In America we look at chocolate as a delicacy and never look at the behind the scenes, like where does it come from? Or who makes it? It’s time we take a look closer and tell the story of its life from the farming, the story of its life from the farming of its ingredients to the production and consumption.
First, let's look at its history and the ingredients that go into it. According to Leaf.tv, the origins of chocolate can be traced back to Mesoamerica. "In ancient Mesoamerica between 250 and 900 A.D., cacao seeds were first grown, harvested, fermented, and ground into a paste." Since then, chocolate has become a phenomenon, with various flavors such as white, milk, and dark chocolate emerging. Most chocolate contains the following ingredients: sugar, cocoa butter, full cream milk powder, cocoa liquor, lecithin, vanilla, and cocoa. (LeafTv Contributor, What Are the Ingredients in Chocolate? ). Despite the fact that the chocolate has different flavors, the ingredients are the same. What are the origins of these ingredients? According to Lake Champlain Chocolates, "the process for making chocolate is essentially the same regardless of the origin of the cocoa beans, whether it's a blend of Latin American and African cacao or a single-origin chocolate bar." And it all begins with the tree, pod, and bean" (Lake Champlain Chocolates, 2021). Though we love to indulge in chocolate we never look into the lives of the people that make this delicious treat.
More than 70% of the world’s supply of cocoa comes from two countries nestled on the southern shore of West Africa: Cote d’Ivoire and Ghana. There, whole communities are dedicated to growing the crop that is lucrative for governments and international traders, but brings below-poverty wages for the farmers who produce it. Low wages mean farmers cannot hire the labor needed to harvest the crop, and perpetuates the child trafficking and worst forms of child labor that have plagued the industry. Children are exposed to chemicals, long working hours, and the denial of a decent education. Low prices in the cocoa industry have left smallholder farmers with impoverished incomes and with no choice but to pull their children from school and have them help on the plantation.” (Industries Cocoa, 2006). This gives an insight on how the people live and their working conditions especially children.
The laborers are not paid nearly as well as the distributors believed they should be because they go through so much trouble making cocoa. The ripe pods must be hacked apart with machetes after harvesting to extract the beans. After that, the cocoa beans must be fermented, dried, cleaned, and packed. Farmers are ready to sell the product to middlemen once the beans are wrapped into cocoa sacks. The price of cocoa is set in the commodities market, which is driven by supply and demand." says Foodarticle. nother element in pricing is when corporations try to monopolize the market in order to maintain a stable price, but this only makes the market more inefficient. According to Statista.com, The Hershey Chocolate Company has been a market leader for a long time, controlling around 44 percent of the industry.
It had to be regulated, just like any other food or treat that was offered and sold in bundles. The Food and Drug Administration regulates chocolate in the United States (FDA). It will be shipped to major distributors such as Walmart, Target, and a variety of other places as soon as it is controlled. I buy most of my chocolate from Walmart; I'm not a frequent shopper of chocolate, but the proprietors profit handsomely from my one purchase. "For more common chocolate, anticipate to pay roughly $7 to $10 per pound," for example. Add an extra 10% to the pricing if you want to include special event wrapping.
