Ayam Goreng Bumbu Lengkuas
Wooowwwwww, dah sampe masa masa dimana kayaknya harus menulis resep masakan secara konsisten, karena kadang tiap masak ngerasa kaya ada yang kurang. Setelah masakannya jadi baru keinget lupa masukin apalah dan apalah wkwk. Beberapa waktu ini lagi mager mikirin, masak apa ya besok wkwkwk, jadi kata gua mah daripada bingung mo masak apa, ada baiknya gua stock makanan aja 🥲.
Ayam goreng ungkep bumbu lengkuas ini jadi menu andalan keluarga gua kata gua mah, soalnya gua liat liat, kayanya ini menu nih, selalu ada di rumah uwak gua, kalo nenek gua ngebekelin anak cucunya yg semisal mau pergi jauh, sampe mama gua kalo ngebekelin anaknya mo ngerantau juga kayanya ada menu ini. Ga lain dan ga bukan, selain ini menu yg enak banget, tinggal goreng juga, kata gua mah, ini menu agak lumayan worth it untuk disimpan di kulkas dalam waktu lumayan agak lama (sekitar 2 mingguan ayam ungkep ini oke kalo disimpen di chiller, kalo mau makan tinggal goreng aja). Lets go coba kita save resepnya 🏂.
Bahan- bahan :
- 1/2 kg ayam, potong potong sesuai selera (gue potong kicik kicik, soalnya kalo gede banget, suka ngeri makannya)
- 4 potong Tahu (opsional, bisa pake tahu atau tempe juga boleh atau ga pake tahu atau tempe juga oke).
- Sereh 1 buah, geprek.
- 2 lembar daun salam.
- 10 buah lengkuas ukuran sedang (aku pake agak banyak soalnya pengen bumbu ayamnya pas di goreng agak banyak🤤)
- 1 ½ buah Kunyit (ukuran sepanjang ibu jari)
- 1 ½ sendok makan ketumbar
- 5 siung bawang merah
- 3 siung bawang putih
- 2 buah cabe merah
- sejumput garam
- penyedap (kalo ini di skip juga gapapa, sesuai selera)
- minyak untuk menumis
- Air 6 gelas
Cara memasak :
1. Blender bawang merah, bawang putih, kunyit, cabe merah, ketumbar sampe halus, sisihkan.
2. Potong potong lengkuas supaya bisa di blender, terus diperes ya air dari lengkuas ini (btw kalo lu tinggal di Jakarta, lu bisa ke pasar ke tukang bumbu langsung beli Lengkuas giling, lu bisa beli goceng/5.000 aja, tapi kalo ga ada yaudah blender aja shayyy!!)
3. Panaskan minyak, masukan bumbu yg sudah di giling, masukan juga sereh yang sudah di geprek, daun salam.
4. Setelah harum tambahkan air dan lengkuas yang sudah di peras. Masak hingga air mendidih
5. Tambahkan garam dan penyedap rasa, koreksi rasa.
6. Masukan ayam, masak hingga empuk.
7. Setelah ayam empuk, masukkan tahu/tempe yg sudah di potong sesuai selera.
8. Masak hingga air menjadi sat/kering.
(ketika ngungkep ayam nanti bakalan blebeg blebeg airnya,pastiin ketika di masak pancinya ditutup, biar ga nyiprat kemana-mana).
9. Setelah ayam ungkep lu sat/kering, dinginin dulu, setelah itu baru lu bisa pindahin ke wadah untuk disimpan di chiller. Inget! Jangan disimpen di freezer ya! Mau bikin es ayam lu pada 🫵😩
Nih, misal lu mau goreng tu ayam ungkep, cara gorengnya:
1. Panaskan minyak, jangan terlalu banyak jangan terlalu dikit minyaknya.
2. Goreng dulu tuh ayam, sampe kering, baru tahu/tempenya.
3. NAH INI NIH! Kan ada si bumbu lengkuas nih, bumbu lengkuas jangan digoreng barengan sama si ayam/tempe, si bumbu lengkuasnya di goreng terakhir! Supaya nanti ga gosong!!!
Ps : bumbu racik ayam ungkep emang dah ada di jual dimana mana, tapi percaya lah, rasa bumbu racik sangat beda dibanding bumbu yang lu bikin sendiri!! Jadi, mari eksplore bumbu masakan lu sendiri, kurang kurangin pake bumbu racik 😊😚, selain bisa nambah ilmu masak lu, lu juga bisa tau bumbu apa yg masuk ke badan lu. Sekian 👯
