Ingredients: 2 cups cooked rice. 2 cups fresh spinach leaves. 1 cup diced carrots. 1 cup diced bell peppers assorted colors. 1/2 cup frozen peas. 1/4 cup sliced green onions. 3 cloves garlic, minced. 2 tablespoons soy sauce. 1 tablespoon vegetable oil. 1 teaspoon sesame oil. 1/2 teaspoon ginger paste. Salt and pepper to taste.
Instructions: In a large pan or wok, heat the vegetable oil over medium-high heat. Add the ginger paste and minced garlic, and saut for 30 seconds, or until fragrant. Stir-fry the bell peppers and diced carrots for three to four minutes, or until the vegetables start to soften. Add the sliced green onions and frozen peas, and cook for a further two minutes. When the rice is done, add it to the pan and toss it with the veggies. Stir-fry the rice mixture for 34 minutes, or until the rice is thoroughly heated and well coated with the sauce, after adding a drizzle of soy sauce and sesame oil. Add the fresh spinach leaves and cook for one to two minutes, or until they wilt. Stir-fry for one more minute after adding salt and pepper to taste. Take off the heat and serve warm. If desired, garnish with more green onions.
