Paleo Stuffed Mushrooms
Yields: 8 servings | Serving Size: 2 mushrooms | Calories: 40 | Total Fat: 2g | Saturated Fat: 1g | Trans Fat: 0g | Cholesterol: 93mg | Sodium: 111mg | Carbohydrates: 1g | Fiber: 0g | Sugar: 0g | Protein: 4g | SmartPoints: 1 |
Ingredients
16 baby bella (cremini) mushrooms, cleaned and stems removed
4 eggs, beaten
1/4 cup finely chopped parsley, optional
1/4 cup finely chopped radishes, optional
1/4 teaspoon kosher or sea salt
1/4 teaspoon black pepper
Directions
Preheat oven to 400 degrees.
Evenly distribute beaten egg into each mushroom. Place on a baking sheet, sprinkle with salt and pepper. Bake until eggs are set and mushrooms are cooked through, about 20 minutes.
Top with radishes and parsley to serve, if desired.

Gerade eben aufgestanden und ab auf die Waage, wie jeden Mittwoch. Da ich über die Ostertage einiges gegessen und gesnackt habe wusste ich das es nicht so gut wird wie in den letzten Wochen. Heute waren es nur 0,4 kg weniger, 3 schlechte Tage mehr als letzte Woche und wesentlich weniger fitpoints.
Früher hätte ich aufgegeben und aus Frust alles in mich reingestopft, heute weiß ich es besser. Ich werde weiter machen, weiter kämpfen.

The end of my first week at @weightwatchersuk and i am quite happy! I went over my points overall a little, because i learned the hard way that energy drinks are high points (no big surprise really) and the booze i like is high sugar. But hey-ho, its a learning curve! I'm not gonna beat myself up though because i also enjoyed learning what low point meals i like, eating tons of veg, and hitting my #fitpoints goal made me feel really proud! My week-end total was 27/25 so i even went over a little :) I'm excited to go to my meeting later and speak to the lovely ladies and gents i met last week and tell them all about my first week, and hear about theirs!!
