A two way with sweet potato mash - 'Fire cracker' Sausages & mash.
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
• 2 Large sweet potato
• 1 medium white potato
• 4 Sausages
• Oil - 2tsp
• 1 Onion
• White wine vinegar 1 tbsp
• Marmalade 1 tbsp
• English mustard  ½ tsp.
• Cheese grated, a handful to taste
𝙈𝙚𝙩𝙝𝙤𝙙
1) Bring a medium saucepan of water to the boil. Wash & chop the sweet potato & white potato - put into a pan. Cook for 20 minutes.
2) Prick the sausages & put them into a medium frying pan or sauté pan with the oil. Peel & slice the onion - slices like hot dog onions - and add to the pan.
3) Once the onions have softened, add 1 finely sliced chilli, the vinegar, marmalade and mustard, and cook on a medium heat, stirring to encourage the onions to absorb all of the spicy sweet flavours and turning the sausages to brown and cook through.
4) When the potatoes are soft, drain them, leaving them slightly wet to mash. Finely slice the remaining chilli and toss it into the potato pan along with the grated cheese. Mash with a fork or potato masher according to desired consistency. Spoon the mash into a bowl, top with the spicy sausages & onions, and enjoy.
Cottage Pie
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
• 400 g beef mince
• 1 onion, finely chopped
• 1 leek halved lengthways & thinly sliced
• 1 large carrot, finely diced
• 1 celery stick, finely diced
• 2 tbsp. tomato puree
• 2 tbsp. plain flour
• 2 tbsp. Worcestershire sauce
• 500 ml beef stock
• 2 Large sweet potato
• 1 medium white potato
• 50 g butter
• 2 tbsp milk
• 200 g frozen peas
• 75g grated Cheddar
𝙈𝙚𝙩𝙝𝙤𝙙
Do as above for the mash.
1) Preheat oven to 200°C. Heat a large frying pan over medium-high heat and once hot add the beef mince. Cook the mince until golden brown all over, about 5-6 minutes.
2) Then add onion, leek, carrot & celery, adding a drizzle of oil if the pan has started to dry out. Cook the vegetables until lightly browned & softened, a further 5-6 minutes
3) Add tomato puree & flour & cook, stirring, for 2 minutes then add Worcestershire sauce, beef stock & thyme. Season, simmer until thickened.
4) Plate up then layer the mash, sprinkle cheese on top.
