Detroit-Style Pizza This Detroit-style pizza is sealed around the edges with a lot of cheese, which fries as it bakes, giving it its distinctively crunchy, crispy, cheese-filled crust.

[All right, let's get into it. We're going to make the dough for the Detroit-style pizza. High-gluten flour. I'm going to start this up.]

[ID: Six images of homemade pizzas. In the first three, a square pizza with sauce atop the cheese awaits baking, then appears after being baked, and the third image shows just the corner of it, with crispy edges and a black-edged pepperoni. The next set of three images show a round pizza in a cast iron pan, again first unbaked, then baked, and then out of the pan, in cross-section, showing the sauce, cheese, and crumb of the crust.]
I continue to push the boundaries of homemade pizza! This time around I was doing experiments -- I've been making square "Sicilian" style for a while, but I thought I'd try "Detroit" style, which puts the sauce on top. I really liked it; the sauce thickens and sweetens, and the cheese doesn't seem harmed by it. It will burn the hell out of your mouth when you try it straight from the pan, though.
For the Detroit style I used up the last of my "old" pizza sauce; my sauce has been two parts plain tomato sauce to one part Trader Joe's pesto rosso, with Italian seasoning to taste. I'd make up a pot of the stuff and freeze it in two-cup portions. About four months ago Trader Joe's stopped selling pesto rosso and I happened to mention to a colleague how heartbreaking this was. The next time we were in the office she plonked down two jars of Aldi brand pesto rosso on my desk as a gift. Despite Aldi owning Trader Joe's, their pesto rosso is a different formulation, darker and chunkier, with a higher oil content. I was grateful but wondered if it would make a good substitute.
This weekend I made up a batch of sauce with it and baked it on the round pizza, and it turns out it's better -- it's already got seasoning, there's just enough red pepper for some bite, and the texture is slightly thicker, so it makes an awesome sauce. It tasted good in the saucepan, but it really steps up the flavor of the pizza.
I may not have a lot of life figured out but by god I've got pizza pinned down properly.

my quest for the best gluten free pizza is finished for now, my dad won first place and made a pizza so good and gluten-like i cried tears of joy; coincidentally the pizza was really similar to the last gluten pizza i ate last year which is a funny circle since back then i cried very sad tears and couldn鈥檛 imagine life without gluten and now it鈥檚 not all that bad
i love food, i love life

Explanation:
CIGAR GUY and GLASSES GUY ordered an eight-piece rectangular pizza to share, with two corner pieces and two middle pieces on each half.
Sitting on opposite sides of the pizza and each taking four pieces in turn, CIGAR GUY accused GLASSES GUY of breaching pizza etiquette when GLASSES GUY took not only both corner pieces from the half closest to himself, but also "reached across" and took one corner piece from the half closest to CIGAR GUY. This left CIGAR GUY with only one corner piece and three middle pieces, and GLASSES GUY with the inverse.
CIGAR GUY asserts that GLASSES GUY is only entitled to the pieces of pizza on the half he originally chose pieces from, and is essentially arguing that pizza-sharing must be done not just numerically (even amount of pieces) but symmetrically (all shared pieces must correspond).
GLASSES GUY disagrees, and says that not only is he under no obligation to only take from his original half (since it's purely circumstantial, if anything), but that he took the third corner piece specifically because it was smaller than the remaining middle piece on his half.
Whether corner pieces are uniquely desirable (i.e., the best part) or if this argument is just a matter of principle is unknown.

Done with finals exams, assignments, and discussion threads.
Have a job interview for Friday.
And I'm shamelessly going to feast on these this morning as a little celebration in my part like a loser hahaha.
Anyways - I'm really proud of myself for being able to put myself first and finish this subterm course on a high note.
