Chocolate ballz
I've got a small party today, and thought I'd try something different for snacksy dessert. Two of the attendees reacts to dairy, so I thought it might be fun to try to make it using a vegan margarine we usually use to fry with in Norway (flott). The traditional recipe calls for butter, but this was vary nice, and I am also sure it would work with straight up coconut fat also.
Chocolate balls
Mix thorougly: 300 gr vegan margarine (coconut/shea/rapeseed), room temp 1 tsp fine sea salt (unless you use butter) 3 dl sugar 6 heaped tbsp cocoa 2 tsp vanilla sugar 2tbsp hot water + 2tbsp coffee instant coffe, mixed or 4tbsp expresso 8 dl oats
Leave to harden in fridge for about an hour Roll into balls, and cover in shredded coconut or pearl sugar Keeps in fridge for a couple days, ready to eat when they are nice and cold

No Sugar Added Vegan Lemon Coconut Balls – Guilt-Free Christmas Treat
I remember the first time I made these Vegan Lemon Coconut Balls; it was during the holiday season when I was trying to create something light and healthy amidst the indulgent treats we’re surrounded by at Christmas. I had a fridge full of fresh lemons, and a craving for something both zesty and sweet. That’s when the idea for these little lemony coconut bites was born. Not only are they…

Power Bowl w/Peanut Butter, Coconut Balls. Rush Bowls. Birmingham, Alabama. 7.29.2023.
NOTE TO SELF: I always think I'm going to like bowls more than I do, but I should admit to myself that I'm a smoothie person. Those coconut balls were stupid good.

Coconut Squares
This should come out like a white brownie, but cold. Great summer snack. Get creative with anything you want to throw on top, fruit, candies, nuts, whatever you like! This is a great beginner recipe that doesn’t need any work at all.
Ingredients
5 tablespoons cornstarch
1⁄2 cup water
1 (13.5 ounce) can full-fat coconut milk, unsweetened
1⁄4 cup granulated sugar
1⁄2 teaspoon vanilla extract
optional toppings: toasted coconut, chopped nuts, mini chocolate chips, or pineapple tidbits
Instructions
Grease an 8×8-inch baking dish and line it with parchment paper.
Combine the cornstarch and water in a small bowl to create a slurry. Whisk until the cornstarch is completely dissolved. Set aside.
In a medium saucepan over medium heat, combine the coconut milk, sugar, and vanilla extract. Whisk constantly until it just starts to simmer.
Reduce the heat to low and slowly whisk in the cornstarch slurry. Continue to whisk until the pudding is thick, about 10-15 minutes. It’s ready when the mixture starts to pull away from the sides of the pan.
Pour the thickened mix into the lined pan. Use an offset spatula to smooth the top. If desired, top with toasted coconut, chopped nuts, mini chocolate chips, or pineapple (drained and patted dry).
Let the it cool at room temperature for 15 minutes, then refrigerate for 1-2 hours until completely set.
Once it’s set, cut them into 2-inch squares. Serve chilled, and enjoy!
