4 strips bacon, sliced ½-inch thick
680g ground beef
1 medium yellow onion, diced
1 green bell pepper, diced
3 garlic cloves, minced
2 tbsp chili powder
1 tbsp ground cumin
2 tsp paprika, or smoked paprika
1 tsp dried oregano
1 tsp teaspoon salt
2 tbsp tomato paste
1 can fire-roasted diced tomatoes, diced or crushed
1 can black beans, drained and rinsed
1 can red kidney beans, drained and rinsed
2 cups beef broth
1 bay leaf
Optional garnish: avocado, red onion, shredded cheese or sour cream
METHOD:
Heat a large pot on medium heat, add the sliced bacon and cook until crispy, stirring occasionally and scraping any browned bits from the bottom of the pan, about 10 minutes. Reduce heat if bacon is browning too quickly.
Add the onion, and bell pepper to the pot, stirring frequently. Cook for 4 to 5 minutes or until vegetables have softened. Add the garlic and stir for another 30 seconds.
Add the ground beef, breaking into small pieces with a spatula, until cooked through. Strain off any accumulated liquid and fat from the pot.
Reduce the heat to medium-low. Stir in the tomato paste, and dried spices, and cook until they are fragrant, about 2 minutes.
Add the canned tomatoes with juices, drained beans, beef broth, and bay leaf. Give it a stir.
Increase the heat to high until the chili comes to a boil. Reduce heat to medium-low and simmer for 30 minutes uncovered, stirring occasionally.
To serve, remove bay leaf. Ladle servings into individual bowls. Garnish with avocado, red onion, cheese, cilantro or any other toppings.
Serving size: This recipe makes 9 cups.

McDonald’s Singapore is back with a trio of Cheesy Truffle Burgers. All three burgers featured melted cheddar and truffle cheese sauce while the all-new creation featuring crispy mozzarella sticks stacked between a savoury beef patty and fluffy buns. I wanted to buy it on the day it was launched but alas, mum cooked dinner so had to wait till the next day.

Bought the Cheesy Truffle Beef Deluxe Meal (S$9.90) but I changed the French fries to the mildly spiced Potato Pops (+S$1) and Coca-Cola to small Ice Green Tea (+S$0.80). The burger came with three types of cheese – crispy mozzarella sticks, melted cheddar, and truffle cheese sauce with a savoury beef patty between fluffy sesame seeds buns. Munching on the burger, I can detect the aroma of the truffle among the sweet, caramelised onions, enjoyed the texture of the crispy yet stringy mozzarella cheese and appreciated the juicy beef patty. Overall, I really liked cheese and truffle combination in this new burger.

As per the usual, I got mum the Filet-O-Fish Meal (S$5.50) with a medium French fries and a small Ice Green Tea (+S$0.80). Our fish burger comes with a miserable half slice of cheese. I want to know if Filet-O-Fish in other countries comes with one or half slice of cheese?

Kūmara and Beef Shepherd's Pie

Whilst the days are still sunny, they are quite chill; and the nights are even chillier. This hearty Kūmara and Beef Shepherd's Pie thus makes an excellent, warming Sunday dinner, rather like a proper hug! Have a good one!
Ingredients (serves 4):
2 tablespoons unsalted butter
1 tablespoon olive oil
540 grams/1.20 pound beef chuck
1/4 cup plain flour
1 small onion
1 large garlic clove, minced
1 large red Bell Pepper, rinsed
1 teaspoon dried sage
1/2 teaspoon ground chilli
1/2 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1/2 cup good red wine (such as a Bordeaux or Pinot Noir)
1 cup water
2 large kūmara or sweet potatoes
1 heaped teaspoon coarse sea salt
1/2 tablespoon demerara sugar
1 tablespoon pure (Grade A) Canadian Maple Syrup
2 tablespoons unsalted butter
1/2 tablespoon demerara sugar
1/4 cup double cream
Peel and cube kūmara, and add to a large pot. Add coarse sea salt. Cover with water, and bring to the boil over medium-high heat. Once boiling, cook, about 20 minutes until tender.
In a large pot or Dutch oven, melt butter with olive oil over a high flame.
Cut beef chuck into large chunks.
Spoon flour in a shallow plate, and dredge beef chuck pieces, coating them well and shaking off excess flour.
Once the butter is foaming, add floured beef chuck pieces and brown well, on all sides. Transfer browned beef chuck pieces to a plate to rest; set aside.
Peel and finely chop onion, and stir into the Dutch oven. Reduce heat to medium-high. Stir in garlic; cook, 1 minute more.
Finely chop red Bell Pepper, and add to the pot. Cook, a couple of minutes.
Season with dried sage and ground chilli. Then, season with fleur de sel and black pepper.
Sprinkle in remaining flour, and cook out, 1 minute.
Deglaze with Bordeaux wine, stirring well to loosen brown bits. Then, stir in water. Bring to the boil.
Once boiling, reduce heat to medium, cover with a lid, and simmer, at least 45 minutes until the meat is juicy and tender, and the sauce has thickened. Remove from the heat and let cool completely.
Meanwhile, peel and cube kūmara, and add to a large pot. Add coarse sea salt. Cover with water, and bring to the boil over medium-high heat. Once boiling, cook, about 20 minutes until tender.
Once the beef has cooled enough, cut into very thin slices, and return to the pot, coating in the sauce. Add demerara sugar and Maple Syrup. Give a good stir.
Lightly oil a baking tin with olive oil, and spoon beef stew mixture in, levelling well with a spatula. Set aside.
Preheat oven to 200°C/395°F.
Drain kūmara, and return them to the pot. First, mash them thoroughly with a potato masher and stir in half of the butter, until melted. Then, process using a hand-held blender, so the mixture is very smooth. Energetically stir in remaining butter, demerara sugar and double cream with a wooden spoon, until perfectly blended and sugar and butter are melted.
Spoon kūmara mash on top of the beef mixture, levelling into an even layer with a spatula.
Place tin in the middle of the hot oven, and bake, at 200°C/395°F, for 30 to 35 minutes.
Serve Kūmara and Beef Shepherd's Pie, with a glass of Bordeaux or Waiheke Island Pinot Noir.
