The Borrowdale seal of Captain Hobson Reed, 1787 ย  ย  ย  ย 
The Borrowdale was the youngest of the three storeships of the First Fleet, which consisted of 11 ships, the other two store ships being the Fishburn and the Golden Grove. The First Fleet set sail from Portsmouth, England on Sunday 13 May 1787, under the command of Commander-in-Chief Arthur Phillip, with a total of 1 787 people on board, embarking on an epic voyage of over 13 000 miles (24 000 km), establishing the nation of Australia. On the afternoon of Friday 18 January 1788, 252 days after leaving Portsmouth, the brig HMS Supply led the rest of the fleet to Botany Bay, which had been suggested by Captain James Cook as a suitable place to establish a settlement in Australia.
Having found Botany Bay unsuitable for settlement, Commander Phillip and Second Lieutenant Philip Gidley King decided on 21 January to use three longboats to explore Port Jackson, which had been discovered by Captain Cook in 1770 while sailing past. Needless to say, they found paradise. Philip, King and their crew arrived back at Botany Bay on the evening of 23 January and spent the next day packing their belongings and preparing for the voyage to Port Jackson, which began at dawn the next morning. On 25 January, a strong south-easterly wind delayed the departure and only HMS Supply managed to get through Botany Bay. Around 7pm she dropped anchor in Sydney Cove. The rest of the fleet anchored there on the afternoon of 26 January, bringing this epic voyage to a close.
A celebration was held in the evening, with most crew members agreeing that this was the most beautiful and safest harbour in the world.

POTAGE CRร‰CY (1903)
Stormy days have returned, calling for a nice, piping hot soup! Or potage, rather. Accordingly, my nextย Tasting History dish isย Potage Crรฉcy, a creamy carrot and potato soup from 1903. This recipe comes, again, from the quintessential work by famed French chef Auguste Escoffier: Le Guide Culinaire. This specific potage was one served aboard the ship that came to the rescue of the Titanic as it went down on April 15, 1912, the RMS Carpathia of the Cunard Line. One of the first meals served to Titanic survivors brought aboard the Carpathia was soup - a warm comfort after drifting in the cold Atlantic in lifeboats. While we are not sure which type of soup was served to the Titanic survivors, Potage Crรฉcy did appear on one of the menus of the Carpathia. It was lucky the Carpathia came to the rescue at all, as most staff had gone to bed, save for Harold Cottom, the wireless operator. He was about to go to bed when, at 12:25am on April 15, 1912, he received a message from Jack Phillips, wireless operator of the Titanic, saying "Come at once, we have struck a berg. It's a CQD, OM." The last initials stood for "Come Quick, Danger, Old Man" ('old man' was what friendly wireless operators would often call each other). Cottom notified Carpathia's captain, Arthur Rostron, at once; he steered the Carpathia toward the Titanic's position, and originally expected to find the ship only slightly damaged. That was, until he received another message from the Titanic: "We are putting passengers off in small boats. Women and children. Cannot last much longer. Losing power... Engine room flooded". The Carpathia had 60 miles to travel to reach the Titanic's position, and Rostron realized then that by the time they got there, there might not be a ship left to reach. At 2:05am, the signal from the Titanic disappeared completely, and only fifteen minutes later, the ship would plunge down into the depths, leaving lifeboats of survivors to watch in horror as their friends and family went down with it. The Carpathia was meanwhile navigating through the treacherous icefield that brought the Titanic down, and it was a wonder they didn't befall the same fate. At 4:10am, the first Titanic lifeboat came aboard the Carpathia. Makeshift hospitals were set up in the dining saloons; the survivors were given soup, tea, coffee, whiskey, and brandy; and dormitories were set up in the smoking room, lounge, and library. While the Carpathia had prepared 3000 breakfasts to accommodate for the passengers from the Titanic, only 710 Titanic survivors made it aboard. The Carpathia held a remembrance service, then turned around to head back to New York instead of continuing on to Europe, arriving on April 18th. I can only imagine how something as simple as a soup could do its best to comfort those who had lost nearly everything. My experience making it:
I halved the recipe, since I was just making soup for the two of us. Since Max says to use the best butter you have on hand, I decided to use my favourite Breton sea salt butter. Overall, I refuse to pay for bottle water when there is perfectly good water coming straight from the tap, so I did not use mineral water, I just used tap water. Since I had parsley on hand, I used that for a garnish.
As usual, I started out by preparing and measuring out my ingredients: peeling, dicing, chopping, and portioning. I then melted the smaller portion of butter in a large pot over medium-low heat. When it began to sizzle a little, I added the carrots (sliced thin), onions, thyme, salt, and sugar. I gave it a stir here and there to coat everything, turned the heat down to low, and let it simmer with the lid on for 5 minutes. It was already smelling wonderful! Next, I added the water, stirred in the potatoes, and let it come back to a simmer. I let it simmer for 15 minutes (being sure the potatoes were submerged) with the lid on while the potatoes softened. After this time was up, I noticed the potatoes were not yet all the way soft, so I let it simmer an extra couples minutes until I could squash them with a fork. After removing the thyme and taking the pot off the heat, I plugged in the immersion blender I had borrowed from a gracious friend and began blending. I had actually never used an immersion blender before, but it was pretty straightforward to figure out. However, I never quite got it blended to the 'purรฉe' level, but after 15 minutes of blending, I was getting impatient and decided to just start pushing the mixture through a sieve into a smaller pot. It took a bit of time, but the potage was indeed looking quite smooth and uniform! I put the pot back on the stove on low heat and stirred in the cream and melted in the larger portion of butter. The orange colour of the soup became more of a dark, rich, yellow colour at this point, in contrast to Max's bright orange finished product. While the soup continued to heat up, I melted some ghee in a frying pan on medium heat and tossed in some French baguette I had chopped into cubes. They crisped up quite nice! I poured the soup into our bowls, chopped off a few leaves of parsley to garnish in the middle, and added the croutons around after letting them dry for a minute on a paper towel. The soup looked lovely with the little design on top, and it smelled pretty good, too! I served the Potage Crรฉcy up with the remaining French bread, so we could dip it in.
My experience tasting it:
My first spoonful, just the potage, tasted much sweeter than I expected, with a strong carrot flavour. I liked it, but knew it needed a pinch more of salt, and perhaps a quick crack of pepper! The texture reminded me of a butternut squash or pumpkin soup - the potatoes had done a great job of thickening the soup, as carrots wouldn't have provided the right texture. Like Max mentions, this soup is fairly buttery, but I mostly noticed this in the smooth texture. For my next bite, I had a bit of parsley and a crouton with the soup, and it was quite wonderful! The crouton had an awesome crunch to it that really perfected the texture in combination with the silky soup. The parsley also added some nice complexity, as this soup, in general, is pretty simple as far as flavour goes. I decided to add some salt and pepper, and that was what took the soup from a decent soup to a really damn tasty soup! I polished off the entire bowl quicker than I meant to, as a result. While the soup was pretty tasty and Max even said he has added it into his fall and winter meal rotation, I can't say I will do the same. While tasty and simple enough to make, it still does take a bit of time, and I just really don't like having to press anything through a sieve on the regular. However, if I did make this again, I would definitely add a few extra herbs and spices in there to liven it up a bit - perhaps some oregano, sage, paprika, or a bit of cumin. Maybe even a quick squirt of lemon juice. At the end of the day though, a simple, warm bowl of soup is always pleasant, even without those extra herbs and spices. Potage Crรฉcy original recipe (1851)
Sourced fromย Le Guide Culinaire by Auguste Escoffier (1903).
Stew the carrots in butter with onions as for Purรฉe Crรฉcy but replace the thickening of rice with 250g potatoes and moisten with 1 litre water; season with salt. When cooked pass through a fine sieve and adjust the consistency with 2 dl very fresh cream; pass through a fine strainer at the last moment and add 150g butter. This soup does not now require any further simmering or skimming. Garnish with chervil and small Croutons of bread fried in butter.
Modern Recipe
Based onย the recipe from Le Guide Culinaire by Auguste Escoffier (1903) and Max Millerโ€™s version in his Tasting History video.
Ingredients:
Potage
75 g plus 150 g butter*, separated
100 g sliced onion
600 g carrots, thinly sliced in rounds
1 sprig thyme
2 pinches salt
1 pinch sugar
1 L mineral water
250g russet potatoes peeled and chopped into about 1/2-inch cubes
200 ml heavy cream
A few leaves of chervil, parsley, or cilantro, for garnish
Croutons
A handful of about 1/2-inch cubes of French bread
1 to 2 tablespoons butter or better yet, clarified butter or ghee**, for frying
*The butter is a key ingredient in this recipe, so I highly recommend splurging on some high-quality butter.
**Butter will work fine, but clarified butter and ghee have higher smoke points.
Method:
For the soup:ย In a large pot over medium-low heat, melt the 75 g of butter. Throughout this recipe, you never want the heat to go above medium - itโ€™s best to keep it closer to low the whole time.
Once the butter is melted, add the onions, carrots, thyme, salt, and sugar. Stir so that everything gets coated with the butter. Let the butter slowly come to a sizzle. The goal here is to cook the vegetables without letting the onion get any color at all. When the butter is sizzling at the bottom of the pan, place the lid on the pot and cook for 5 minutes. Essentially, youโ€™re just letting the carrots and onions steam.
After 5 minutes, add the mineral water and potatoes and stir. Let it slowly come up to a low simmer, just so you can see a little bubbling, then set the lid back on and cook for another 15 minutes, or until you can mash the potato easily with a fork.
Remove the thyme. To purรฉe the soup, you can either push everything through a strainer, which is in the original recipe, or you can use an immersion blender. Either way, once you have a smooth purรฉe, pass it through a fine sieve to make it even smoother.
Return the purรฉed and sieved soup to a pot and add the cream and the 150 g of butter. Stir until the butter has completely melted, and slowly heat the soup to the desired serving temperature.
For the croutons:ย While the soup heats, melt the butter or ghee in a pan. Toss in the bread cubes and stir to coat them with the butter. Keep stirring as they toast up to a nice golden brown, this shouldnโ€™t take more than a few minutes. Set them on a paper towel-lined plate to soak up any excess butter.
To serve:ย Once the soup is to the temperature that you like, ladle it into bowls. Top each bowl with some croutons and a few leaves of chervil, parsley, or cilantro, and serve it forth.

My 3 Favorite Beaches in Sydney
Wishing you a beautiful and vibrant life! In todayโ€™s post, Iโ€™m taking you along one of the most beloved activities for Brazilians (and honestly, for anyone who enjoys a good day out): going to the beach and soaking in the beauty of nature.
Even though Iโ€™m not the type to play beach volleyball or football like many Brazilians do, I love spending time swimming, sunbathing, and simply being present. Iโ€™ve been living in Sydney for less than a year, and one of the biggest gifts has been experiencing summer near some of the most stunning beaches in the south of the city.
Before settling in Sydney, I used to work on cruise ships, which gave me short glimpses of the city. Now, I finally get to dive deeper into its wonders. Australia is world-famous for its beachesโ€”but if you're like me and prefer peaceful, lesser-known spots where you can truly connect with yourself and the ocean, then stick with me as I share my top 3 favorite beaches around Sydney.
๐ŸŒŠ Little Bay
Little Bay is a hidden gem. If you're looking for a quiet place to unwindโ€”away from the crowds of Bondi or Manlyโ€”this is your spot. Although it's a bit further from the city center (about 30 minutes by car or longer via public transport), every second spent getting there is absolutely worth it.

This beach consistently ranks as one of the cleanest in Sydney, with clear water and low bacteria levels, according to the NSW Environment website.
Fun fact: the nameย Little Bayย comes from its size compared to nearbyย Long Bay. It used to be called Yarra Junction, but residents requested a name change because mail kept getting sent to the town of the same name in Melbourne!
Some websites still say there are no facilities here, but thatโ€™s outdated infoโ€”Little Bay now has toilets and lifeguards. Itโ€™s not a surfing or boating beach, which keeps it peaceful. However, rock fishing is quite popular along the surrounding cliffs.
๐Ÿšจ One thing to keep in mind: thereโ€™s usuallyย no phone signalย here (at least not with Vodafoneโ€ฆ or maybe itโ€™s just my phone! ๐Ÿ˜„). To get to the beach, youโ€™ll pass through a golf course and take some stairs downโ€”just follow the signs, itโ€™s pretty easy.
โ˜€๏ธ My favorite time to visit? Sunrise. My perfect morning routine is watching the sun come up from the hill near the church, then heading down for a refreshing dip in the ocean.

๐ŸŒฟ Malabar Beach
Malabar is another calm and peaceful beach that's easy to reach. It's around the same distance from the city as Little Bay. Parking can be a little tricky, but since it doesnโ€™t attract the same crowds as Bondi or Manly, youโ€™ll usually find a spot along the street without too much trouble.

Malabar Beach has an interesting maritime past, with the area being named after theย MV Malabar, a ship that ran aground nearby in 1931. While itโ€™s now known for its serene atmosphere and beautiful coastal views, the beach was once an important site for maritime activities. The surrounding area also has a rich Aboriginal history, with evidence of the Cadigal people who once lived along the coastline. Over time, Malabar evolved from a remote beach into the peaceful, charming spot we enjoy today, offering a blend of natural beauty and local history.
What makes Malabar extra special for me is theย coastal walkย from Maroubra to Malabar. Itโ€™s shorter and less busy than the famous Coogeeโ€“Bondi walk, but the views are just as beautifulโ€”if not more. After a scenic walk, I love cooling off with a swim at Malabar Beach. Thereโ€™s also a public ocean pool, which is a typical feature on Australian beaches, and totally worth trying!
๐ŸŒ… La Perouse
If youโ€™re a sunset lover like me, La Perouse is the place to be. It offers the best sunset views in Sydney, in my opinion. ๐ŸŒ‡

La Perouse is named after the French explorer Jean-Franรงois de Galaup, comte de Lapรฉrouse, who arrived in Botany Bay just days after Captain Arthur Phillip in 1788. The area holds deep historical significance, including stories of hardship and resilience.
A bit of its tough past: when European settlers pushed Aboriginal communities out, La Perouse became one of the few places where they could live. At first, they could fish and sell what they caught, but later restrictions limited them to fishing only for personal use. Isolated from the city, the community endured many challenges. If you're interested in learning more, I recommend checking out this article!
Despite its past,ย La Perouse is one of my favorite places because it symbolizes transformation. While it's important to acknowledge history, being in nature reminds us that we can create new, beautiful memories. Watching the sunset hereโ€”seeing couples taking photos, families smiling, and even pregnant women having maternity shootsโ€”it fills me with hope. Itโ€™s a gentle reminder that the future can be brighter, as long as we keep doing our best, together.
