We got the car taken care of and now we need grocery money.
Hey everyone, y'all may remember a couple weeks back when my family had to raise emergency funds to get our car fixed. Well, the car is doing great now, but all the money folks very generously sent us had to go toward bills, and there's not a lot of food left in the cabinets.
I fucking despise having to do this so often, but we've got four disabled adults who are staying afloat with a single night job and about twenty different side hustles in a trench coat.

Strawberry Penna Cottas - 130 kcal/5g protein
Servings: 4 - 130 kcal/5g protein per serving
1-1/2 cups whole milk
1-1/2 teaspoons unflavored gelatin
1-1/2 pints strawberries, halved
2 tablespoons Splenda No Calorie Sweetener, Granulated
1 teaspoon vanilla extract
1 pint strawberries, sliced
Sprinkle gelatin over milk in a small saucepan; let stand 1 minute. Cook over low heat, stirring until gelatin dissolves (do not boil). Set aside to cool.
Process 1-1/2 pints strawberries in a food processor, or until pureed, stopping to scrape down sides. Press strawberries through a fine wire-mesh strainer into a bowl, discarding solids. Stir cooled milk mixture into strawberry puree. Add Splenda Granulated Sweetener and vanilla, stirring until Splenda Granulated Sweetener dissolves.
Coat 4 (6-ounce) ramekins with cooking spray. Divide strawberry mixture evenly among ramekins. Cover each ramekin with plastic wrap; refrigerate 4 hours or overnight until panna cottas are set.
Run a knife around the edge of each panna cotta and unmold onto serving plates. Serve with sliced strawberries.

Low calorie green-pink smoothie recipe:
My rating for it: 7.5/10 The spinach gives it a grassy taste that pairs really well with the light sweetness of the yoghurt.
Wish i had more yoghurt in the pic so there was more pink. May not be aesthetic but at least it was good and is an easy way to get in some veggies and fruit

SUGAR FREE STRAWBERRY JAM (NO PECTIN)
Sugar Free Strawberry Jam (no pectin) takes 10 minutes from start to finish and is pure simplicity. This healthy, low calorie recipe yields 100g of jam containing 6g carbs in total, which equates to just 0.9g carbs per serving. By far the easiest and quickest jam you'll ever make. It's smooth, spreadable but not too runny, and full of fruity flavour. Not keen on strawberries? Choose whichever berries you prefer. Blueberries, raspberries, blackberries, or hybrid berries - they'll all be fine.
