Diet Crystal Pepsi. Frito Lay Lemonade. Watermelon-flavored Oreos. Through the years, the shelves of stores have been filled with products that turned out to be flops, failures, duds, and losers. But only briefly filled with them, of course, because products like these tend to get yanked from stores quickly, leaving most consumers to wonder: Who exactly buys these things, anyway? Now a published study co-authored by two MIT professors answers that question. Amazingly, the same group of consumers has an outsized tendency to purchase all kinds of failed products, time after time, flop after flop, Diet Crystal Pepsi after Diet Crystal Pepsi. The study calls the people in this group “harbingers of failure” and suggests they provide a new window into consumer behavior. “These harbingers of failure have the unusual property that they keep on buying products that are taken from the shelves,” says MIT marketing professor Catherine Tucker, co-author of a paper detailing the study’s results. Significantly, Tucker adds, these star-crossed consumers can sniff out flop-worthy products of all kinds. “This is a cross-category effect,” Tucker explains. “If you’re the kind of person who bought something that really didn’t resonate with the market, say, coffee-flavored Coca-Cola, then that also means you’re more likely to buy a type of toothpaste or laundry detergent that fails to resonate with the market.”
Let me just say, this is a hell of a way to find out they quit making that coffee-flavored coke you liked.

Your latest bread success made me wonder if you've tried or had much luck making gluten free bread? I'm so tired of most commercially available options, they all seem to dissolve instantly. Awful for burgers or anything with sauce. I miss sourdough.
I'm afraid I haven't done much work with gluten-free baking; the problem is the gluten tax. As I'm sure you know, gluten-free anything, even just ingredients, are more expensive, and the process of baking is more labor intensive and time-consuming for a product that isn't the same. Even the best gluten-free bread, lacking gluten, is lacking one of the defining characteristics of the thing it's emulating.
Since I can eat gluten and am not regularly responsible for feeding anyone who can't, there's no real motivation to do it. I try to always have gluten-free options when I'm hosting, but that's usually stuff like crudite and dip, charcuterie, or fruit -- things that can also avoid other allergens, and depending on the item be eaten by vegetarians or vegans.
Now, all that said, I can recommend King Arthur's Cup For Cup GF flour for baking; it makes the process fairly smooth and the final product seems pretty sturdy, although admittedly the flour is about twice the price of their normal bread flour per pound. I haven't encountered Bob's Red Mill GF flour in a while, but partly that's because when we stopped using them they hadn't really reformulated in a few decades and their GF flour was pretty coarse, and sometimes made from beans my family members couldn't tolerate. They may have advanced since, this was like 10-15 years ago at least.
The King Arthur website has a variety of GF baking recipes as well as mixes and I do have some experience making their GF bagels, which are pretty good, although I think they're actually better if you halve the size (easier to manage, easier to store, since they really need to be kept cold, preferably frozen, and eaten warmed). I baked those regularly for a while for a colleague's kid who was allergic to wheat, and they weren't much more work than baking regular bagels, just required more delicate handling pre-bake.
I realize this is basic and you've probably tried it, but just in case, any GF product you're going to be saucing (as you say, like burgers), you might try griddling first -- little scrape of butter, toss it in a hot pan for a few minutes. In regular bread it helps to both create a flat barrier so the sauce doesn't sink into the bread, and it also dries it out a little so that it can take more moisture to begin with. This is theoretical though, I've never done it with GF buns. I do know that generally King Arthur recommends toasting GF products baked with its recipes.

HAVEN’T DONE ONE OF THESE IN A WHILE! I mean, I’ve been cooking, but between not having to make lunches to take to work and dealing with various pandemic shortages, it’s been a while since I’ve been able to just roll up with a day of cooking. 
However, I cleaned out my fridge and freezer and realized I was a little short on precooked food and long on various sauces, and I didn’t cook much in December because it was a Stressful Time, so I’ve got groceries on the way and today I shall be cooking:
Slow-cooker Pulled Pork -- I’d post a recipe but I’m not using one, it’s just pork butt, a sauce of your own devising, and a slow cooker until that sucker hits 190F. My sauce is a mixture of Haks Smoked Sweet Mustard, Trader Joe’s truffle mustard, honey, Worcestershire sauce, roasted garlic, and celery salt, with a bit of water added. Eventually I’m going to take some, chop it fine, and make pulled pork ravioli. 
King Arthur Alaskan Sourdough -- It’s from a mix and not true sourdough but I don’t fuck with real sourdough, that shit takes three days of prep, and the mix is delicious. 
Impossible Beef Sloppy Joe -- they sell “ground” impossible beef now and I’d like to see how it is; I haven’t had Impossible meat yet but I hope it’s better than the Beyond burger. If not, well, sloppy joe sauce covers a lot of sins. 
Caramelized mushrooms -- I always like to have some cooked frozen mushrooms on hand and I used the last of it making ravioli. I think once I’m done with these I’ll cook some bucatini, toss it with some cheese and the mushrooms, and try it out.

Where has Evie been?
“I last heard Evie she took a charter flight on a DC-10 to London, landed at Gatwick, took a bus to the center, called a friend who was selling hash, but he wasn’t in. So she wandered around until it started to rain, then took a subway back to the friend’s house and hung out there for four or five days. Saw the changing of the guards at Buckingham Palace. Ate a grapefruit next to the Thames River, which reminded her a lot of the cover of that Pink Floyd album. Wrote Calum a postcard she never sent. Bought some speed from an Italian guy she bumped into. Smoked a lot of hash that had too much tobacco in it. Took a ferry and then a bus to Dingle, Ireland where she drank too much Guiness Stout after eating spaghetti and threw it all up in front of a movie theater just as people were walking out. Stayed in a hostel but the assholes that worked there made her collect peat moss for the fire so she got a room in a bed-and-breakfast. Went to Dublin. It rained a lot, it was expensive, so she split for Amsterdam. There was someone playing saxophone at Central Station, which was kind of pretty. Stayed with some friends in someone’s basement. Smoked a lot of hash in Amsterdam too, but lost most of my stash in some museum. The museums were cool. Lots of Van Goghs and the Vermeers were intense. Wandered around, bought a lot of pastries, ate some intense waffles. The Dutch all know English so she didn’t have to speak any Dutch, which was a relief. Wanted to rent a car but couldn’t. The people she was staying with had bikes though, so she went biking one day and she saw a lot of cows and geese and canals. She pulled off to the side of the road, got stoned and fell asleep, woke up, wrote a little, took some acid, made a few drawings, and then went to the red light district in Den Haag, because she heard the whores were cleaner and better looking than the whores in Amsterdam – which they were. She fucked one so hard that she skinned her knees. Ate lunch at a Burger King, which was better and no more expensive than the States. Stayed in the Amsterdam Youth Hostel where there were some cool German guys who spoke better English than she does. They bought some coke and she cruised the red light district until she found a brunette with big tits that reminded her of Val. She gave her a hundred Guilders. She worked Evie up, mounted her, put on a good show, and in the end she pulled her up and came between her tits. Afterward they made small talk about AIDS, her Moroccan pimp, and herself. She woke to the sound of a wino singing. It was eight AM and hot as blazes. Had a beer and then headed South to Paris. Climbed the Eifel Tower with this Canadian guy named Tim for only seven Francs because the ticket machine was broke. Got the hang of the Subways. Told Tim to get lost. Met a French girl who was going to Camden. She’s pretty sure she gave her mono. Went to Pamplona for the running of the bulls. Never saw one bull but she was almost got trampled by the crowd. Dropped acid at the Museo Gala-Dalí, which was a trip. Went to the lamest circus ever, a goat and two guys on unicycles. Went to Nice and ate Mexican food at a place called Calexico – or Mexicali. Then went to Switzerland where she, ironically, couldn’t find anyone who had the time. Took the Glacier Express to Zermatt, the Matterhorn, and found out that she could ski it, which, when you’re there, you have to do – but she didn’t have gloves so she used socks instead and froze her hands. It was slushy but fun. Ate some Sourdough bread that tasted like it was made with sour milk. Eurail Pass’d into Italy and accidently slept through Florence. Ended up in Rome which was big and hot and dirty. It was just like L.A., but with ruins. She went to the Vatican but couldn’t get in because she was wearing shorts. She could get into the Sistine Chapel, which now that it’s been cleaned looked fake. At the train station she met two girls from Germany who she drank warm beer with. They’re living for a full year on only nine dollars a day. She teased them and then turn the couchette into a huge bed and they all fucked. She woke dirty and tired in Brindisi, which is hot and filthy. She went with the German girls to get a ferry to Greece, but they had to take different boats because she was on Eurail and they’re on Interail. That night she dreamt about a beautiful girl half in water, stretching her lean body. She asked Evie if she liked it and she told her she could clean fish with it. She woke well rested, masturbated in the shower, and checked out. She made her way back to London and hung out in Piccadilly Circus at a comic book shop. She met a cute girl from Amsterdam at a Whimpys while eating a Spicy Bean Burger. They got stoned and fuck at her flat to Michael Jackson records and the next morning she woke up talking to herself. She had a big bump on her head from flailing in her sleep. She got her stuff and barely made her plane back to the United States. We know longer know where she is but I’ve heard rumor she’ll be home soon.”

Side trip in Massachusetts unearths a hidden gem — Pioneer Valley

Separated from each other by the Connecticut River, Northampton and Amherst Massachusetts, and the surrounding area known as the Pioneer Valley, is home to many colleges, including Amherst College, Hampshire College, Smith College, Mount Holyoke College and the University of Massachusetts at Amherst. It is the latter where I received my graduate degree in Hotel, Restaurant and Travel Administration. Getting ready for my annual visit to my alma mater, I thought, the Pioneer Valley remains somewhat of a hidden gem. The area is the perfect weekend get-away that can be filled with one-of-a kind places to visit and tasty food stops.
My base for the exploration of the area is Hotel UMASS, 1 Campus Center Way, Amherst , https://hotelumass.com/   877-822-2110.  Located in the epicenter of the Campus Center; what an unusual experience it is to stay right on the picturesque campus. It is a teaching hotel, providing an educational opportunity for students in the University’s Hospitality Management Program, while offering a pleasant and welcoming experience for the guests. Enjoy complimentary continental breakfast. Take the elevator to the concourse level and choose from an array of dining options.
Did you know that Amherst, MA is where the prolific poet Emily Dickinson was born and raised? The Emily Dickinson Museum (https://www.emilydickinsonmuseum.org/280 Main St., Amherst, 413-542-8161) is dedicated to her poetic voice, writing about 1,800 poems. She led a quiet life and her work was not published until after her death in 1886.
Before checking in to the hotel, it has become a tradition to have lunch at Jake’s, http://jakesnorthampton.com , 17 King St., Northampton, 413-584-9613. It seems that the “Coolidge” has become my “regular.” Three eggs scrambled with roasted tomatoes, kale, roasted garlic), and goat cheese is served with home fries and toasted 3-seed sourdough. Be prepared to wait on the weekends, but it is worth it. I am told that Jake’s Burger and the pulled pork sandwich (slow roasted cane vinegar pulled pork (brined in-house), guacamole, jalapeno coleslaw, queso fresco and pico de gallo on a toasted brioche bun are popular. I do miss those perfect biscuits, that are no longer on the menu.

Pasta E Basta https://www.pastaebastaofamherst.com/ 26 Main Street, Amherst, (413) 256 – 3550   is the restaurant that’s become my new go-to, replacing Judie’s, a restaurant I patronized for forty years that unfortunately closed. The casual restaurant has three floors, the first being take-out with a few dine-in tables. The upper two floors offer full-service dining. As you enter the second floor you can smell the aroma of a Nonna’s kitchen; that’s because there is an open kitchen where the chefs are cooking. A variety of pastas are cooked to perfection.  Popular, is the create your own pasta dish. First pick your sauce and style of pasta (there are a dozen of each), and then your add-ons (more than two dozen). My choice at my recent visit was Penne Romacampo (sauteed salmon, spinach, artichokes, and roasted peppers in olive oil, garlic and lemon sauce. Vegetarian and gluten free dishes are available. The portions are big, so you will probably take leftovers home… and you do want to save room for dessert. The dessert that I enjoyed was the olive oil lavender cake. I might just ask the chef for that recipe!

For a quick lunch or dinner, check out Antonio’s Pizza By the Slice, 31 North Pleasant Street, Amherst, 413-253-0808 http://www.antoniospizza.com First you’ll go to the glass window to pick your slices. You might be overwhelmed by the number of traditional and unique choices as you watch the pizza makers do their craft. Although I am usually one to choose the more traditional, when I am exploring the food scene for a column, I become more curious. Because I enjoy quesadillas, I tried a slice of the avocado quesadilla pizza (sliced avocado, pico de Gallo with cilantro, nacho chips, mozzarella and sour cream. Florentine dishes are a favorite, so the pizza version was the other slice (sauteed spinach with mushrooms and onions, chopped tomato, feta cheese, mozzarella cheese and tomato sauce. This one had a bit too much going on. Next visit I’ll try the Chicken Parmesan pizza (breaded chicken, shaved provolone, dollops of sauce, mozzarella cheese and a Tortellini pesto slice (cheese filled tortellini, mozzarella cheese and pesto sauce. From its humble beginnings in Amherst, they have expanded to a few other cities….is Greater Philadelphia on their radar?
A favorite coffee stop is Shelburne Falls Coffee Roasters, with locations in Northampton, 124 King Street and 273 Main St., and Shelburne Falls, 1207 Mohawk Trail. There are a few other locations in Western MA. Once you try their brews, you’ll probably order your beans online.
West End Pub http://www.westendpubinfo.com/, 16 State Street, Shelburne Falls, 413-625-6216, is located by the The Bridge of Flowers www.bridgeofflowersmass.org  You might be lucky enough to sit by the window with views of the bridge, mountains and river.  Being a small and quaint restaurant, you might have to wait a bit, so browse the nearby shops or walk along the Bridge of Flowers. It’s worth the wait.  In the mood for a burger made from local grass-fed beef….  a couple of the choices, Chipotle Cheddar Burger and the Breakfast Burger (6-ounce burger on a grilled roll with lettuce and tomato, topped with bacon, a fried local egg and cheddar cheese.  Chili, soups, salads, and sandwiches as well as vegetarian choices are on the menu. Want something more substantial? Dinners include shrimp and artichoke piccata, fish and chips, local beef meatloaf, and bistro steak. My dessert choice after the basic burger… Affogato (an Italian Sundae with coffee ice cream, hot fudge, Amaretto, espresso and walnuts.
One of the first restaurants I dined at when I moved to New Haven, CT in the early 80’s was Fitzwilly’s. It is long gone from here in the Elm City. While visiting the Pioneer Valley I sometimes pay a visit to Fitzwilly’s, 23 Main Street, Northampton, www.fitzwillys.com just for nostalgia’s sake. This is the original location and has been here since 1974. The restaurant is known for their big burgers as well as interesting twists on classic comfort food like autumn grilled cheese (sharp cheddar, maple roasted butternut squash, tomato, spinach on sourdough or Wicked Alfredo (Andouille, chicken, roasted red peppers, penne pasta, red pepper alfredo sauce).
While in Northampton, stop at Thornes Marketplace, 150 Main Street, www.thornesmarketplace.com The building has been a cornerstone of the downtown for more than a century.  The shops, bookstore, galleries and restaurants are individual in flavor. The energy, sights, and sounds will make you feel as if you are in an old-world marketplace.  For an afternoon treat try Herrell’s Ice Cream http://herrells.com  413-586-9700 (their hot fudge is a MUST), located right at the marketplace.
If you are into perusing used bookstores, Northampton has their share. A short ride away is one of my favorites, Grey Matter Books.  www.greymatterbookstore.com 47 East St., Hadley, 413-387-0160. It is quite expansive, so plan some time to explore.
For those interested in kitchen gadgets, cooking classes and unique food items The Baker’s Pin, 34 Bridge Street, Northampton https://thebakerspin.com/   413-586-7978, is for you.
Gourmet food and beer aficionados need to make a stop at Provisions, 30 Crafts Avenue, Northampton  https://provisionswine.com/ 413-727-3497 413-727-3497. You’ll find everything you need for making a charcuterie board or a gift basket for foodie friends and family. Beer aficionados will appreciate the selection of hundreds of craft beers, including hard-to-find imports.  Wine selections, too, are plentiful (they boast that there are over 1,000 with 400 quality wines under $15) representing the globe.  The shop’s cheese mongers will help you choose from an array of cheeses from around the world, pates and cured meats.
No trip to the area is complete without a stop at Richardson’s Candy Kitchen 500 Greenfield Rd., Deerfield. 800-81SWEET, www.richardsonscandy.com  It is such a special place, that Food Network star Alex Guarnachelli filmed a segment for “The Best Thing I Ever Ate” here.  Dixies, a signature candy at Richardson’s, is caramel, made from scratch and hand- stirred, then funneled onto trays of nuts. During my visit, I got to watch the chocolatiers make nonpareils, which are quite addicting! You will certainly feel like a “kid in a candy store” watching owner Kathie Williams and her staff make your favorites.
Kids, and the kid in you, will adore a visit to Maple Valley’s Scoop at the Silos, https://maplevalleycreamery.com/  102 Mill Valley Rd., Hadley, 413-588-1716. Freshly made ice cream is served right at the farm from a cute little shack in front of the Brown Swiss cows. The farm animals are waiting for you to pet them, too. At the adjacent Mill Valley Market you’ll be able to purchase the freshest milk, fantastic cheeses, pints of ice cream, a plethora of locally made small-batch food items and snacks for the car.

On the way to or from this area, rich in history and natural beauty, stop and get to know the Cat in The Hat at The Amazing World of Dr. Seuss Museum https://bit.ly/2Gy04oR or learn about basketball at the Basketball Hall of Fame www.hoophall.com , both located in Springfield.  A visit to the Yankee Candle Village, South Deerfield, www.yankeecandle.com and Kringle Candle Company www.kringlecandle.com , 220 South St. (Rte. 5) Bernardston are a candle lovers paradise.
If you are visiting the area during autumn to enjoy the New England foliage, take the 45-minute drive from Amherst to visit to Patterson Farm, 708 Northfield Rd., Hinsdale, NH (603) 336-6113. Kids will enjoy picking their pumpkin. The tree and house built from more than a dozen varieties of pumpkins are sites to see and photograph. Gourds of every shape and color, Indian corn and fall decorations are also sold.
