Lancaster Cast Iron
I LOVE cast iron. You will only find cast iron, enameled cast iron, and stainless steel in my kitchen. I have ranted about most nonstick materials in previous posts, so I will spare you this time. I recently tried out the Lancaster Cast Iron skillet No. 4. I want to apologize for saying the skillet is 5 or 6 inches in the video. It is a 7-inch skillet. I have never been good at guessing…

How To Clean A Cast-Iron Skillet: The Complete Guide
Tumblr media
Cast iron skillets are some of the most versatile and durable cookware you can own. They're perfect for cooking everything from breakfast potatoes to chicken legs. But like any other piece of cookware, cast iron needs to be cleaned properly to maintain its shine and durability.
To how to clean a cast iron skillet start by preheating your oven to 400 degrees Fahrenheit. Then, place the skillet in the oven and let it heat up for 10 minutes. After 10 minutes, remove the skillet from the oven and let it cool down slightly.
Now, use a non-abrasive scrubber (such as a soft cloth or sponge) to clean the inside of the skillet. Make sure to get into all the crevices and corners. Finally, dry the skillet with a towel.

This post mentions the Le Creuset Doufeu casserole (Dutch oven) and several comments were "I want / must get".
@dduane and I don't need one, but from curiosity I went looking to see what they cost, and what I said in the original post still applies:
New Le Creusets like the one above are hideously expensive...
Tumblr media Tumblr media
Ouch!
Since buying by brand name Is A Thing, it seems to me that the words LE CREUSET on cast-iron cookware immediately jacks the price up by at least 100 £$€ currency units over similar items from other manufacturers; for curiosity I compared Le Creuset to Staub, which also aren't exactly cheap: 41cm oval Staub, €449; 40cm oval Le Creuset, €599.
OUCH!
*****
They can be found somewhat (and if lucky, much) cheaper on eBay and Etsy, or in yard sales, garage sales, car boot sales and thrift shops.
A bit of searching revealed that people have had some very good luck with vintage Le Creusets, quite possibly because the original owners didn't know what they'd got.
Tumblr media Tumblr media
This has to be the best thrift shop bargain I've seen in a long time:
Tumblr media Tumblr media
*****
We've got these:
Tumblr media
Even though only the orange one is actually labelled as a Doufeu, the other two have recessed lids and also work that way, complete with condensation drip-points cast on the insides.
Tumblr media
This seems standard on recessed-lid casseroles, Staub have them too, and makes me think that casseroles with those lids are a better buy, since they can be used for regular OR doufeu cooking while those with flat or domed lids can't.
Also, remember where I said "original owners don't know what they've got"...? I found a hint of that in a sales listing which says:
It has a multi banded lid with a sunken knob, enabling the lid to be inverted, and used as a serving dish, with raised studs to help stop the food from moving around when being carved.
Tumblr media
I think what happened here was that whoever wrote the description didn't know what the studs were actually for, and defaulted to what they thought they were for.
They're not sharp enough to hold food in place, and while this style of lid can be balanced inverted, it's not so they become serving dishes, because they'll teeter off-balance again with the slightest sideways pressure, such as trying to carve meat. So, er, don't.
*****
The cream/brown Fontignac was bought new more than 30 years ago - I've mentioned the French Country Recipes (seriously yummy) cookbook that came with it a couple of times - and DD bought the orange Le Cousances Doufeu about 5 years ago on eBay.
The smaller black Tramontina (from Brazil) was bought new last year to find out if something at that price level was any good.
Tumblr media
So far... Yes, it is.
Staub own the Fontignac brand-name and Le Creuset own Le Cousances, so here's what to look for on the base of vintage originals.
Tumblr media Tumblr media
There must be other bargains out there, maybe even as good as that thrift-store capture, so good hunting!

Goblin tips to saving money:
Buy ingredients, not snacks. A bag of flour costs about the same as a bag of name brand chips and will make you so much more food! Rice, beans, block cheese, tortillas, there’s a lotta ways to make cheap n tasty lazy food. Spices seem expensive but remember they’ll last a while longer than most food purchases. You can make chili oil, pickled vegetables (garlic is Gobbo’s personal favorite!), all kinds of flavorful things without much effort to make other things tastier. Google has all the recipes you might need, as long as you disregard the AI thing they’re pushing.
Thrift stores. You don’t need that fancy new Apple brand waffle maker or whatever the fuck the rich assholes are pushing this week. Go to a thrift store and buy the waffle iron that the previous owner had for 20 years and will last at least 5 more, because the new stuff is designed to break after six months to force another purchase and will do the job just as well as the thrifted one at best.
Basic tools. You would be amazed how far a few screwdrivers, needle+thread and an adjustable wrench can extend the lifespan of goods. Tinkering is good for the goblin brain and is entirely practical as an experience. Do your research and get the brands of tools that will last and have the fewest “features.” Bells ‘n whistles only inflate the price and weaken the products.
Reuse before you recycle. Even if you can’t fix something, you can repurpose it entirely. Bucket has a hole in the bottom? Put a sturdy mesh over it with non-water-soluble glue and use it to grow a plant. The hole will let the excess water drain and keep the roots from rotting. You just saved money buying an overpriced planting pot, only having to buy some glue and mesh instead. Do not, however, begin hoarding things “just in case.” If you cannot think of a use for it, or have no desire or need to put it to said use, it is best disposed of or given to someone else who will.
Don’t spend, invest. Not in stocks or crypto or whatever. Wherever you can, buy the built-to-last versions of things and take care of those things instead of the cheap ones that are “good enough.” If you have to save up for a while, so be it, trust me it will save you so much money later. Durability is king when saving money, and maintenance is his faithful queen. Gobbo recommends cast iron cookware, if you can consistently maintain it. That stuff will last literally for generations if it is cared for.
Establish routines. A lot of money-saving practices need a little extra effort to work, so make a checklist and do everything on it once a day. Season your cast iron, water your plants, check expiration dates on food, make sure none of the lights were left on by accident, that sort of thing. The certainty of this routine does wonders for one’s clarity of mind in the long term, and usually takes half an hour at most.
Optimize your hobbies. Identify which parts of a hobby you don’t need to invest as heavily in to fully enjoy still. For example, if you love movies, it is worth appraising whether the whole movie theatre experience is worth the price tag or if you’d be just as happy buying the DvD and curling up at home with your own popcorn and no rude moviegoers detracting from the movie. If you’re a crafty sort, see if you can do anything to get more out of your raw materials. Went to school with a girl who used to waste a lot of fabric when tailoring, but started saving about 70 dollars a month by measuring and stenciling all the cuts in the fabric before actually cutting, minimizing the unusable scraps.
We live in a world where money is worth less to the market every day, so it is important to make that money worth more by how we use it!
If you’re motivated by spite, think of it like this. The rich people that run things want you to spend as much money as possible on every purchase, so spending less money and getting more out of it is a direct act of rebellion that they can’t do anything to stop you from committing. It is a small victory over capitalism, one that you can commit every moment of every day while simultaneously improving your quality of living. You are taking some power over you away from them and they hate that. It’s punk, it’s positive, it’s productive counterculture. What more could you want?

Doc, I’m moving out on my own for the first time, and I’m wondering what cookware is absolutely vital. I tried looking it up and got told about a wild variety of cookware that I’m not sure I need if I’m just cooking for me, but also I don’t know which can be left out in favor of more versatile cookware.
OKAY FANTASTIC I THRIVE ON THIS KIND OF THING.
So, let's say I'm going into an empty kitchen, and I can only have six pieces of cookware. These are ROUGHLY in order of how I would buy them, though I could be argued on a couple points. All brands are what I think are the best version of said object is--you are free to buy a different or cheaper one.
Dutch Oven
This is an absolute workhorse. You can braise in it, cook pasta in it, use it as a roaster for chicken, make soup in it, fry in it, bake bread in it, even bake a cake if you gotta though it wouldn't be my first choice. I prefer plain to enameled, enamel always chips eventually.
Lodge Logic 7 quart
2. Sheet Pan
Here's what we use for cookies, roast vegetables, fish, also can be used for chicken and other things.
Nordic Ware Half Sheet
3. Sauce Pan
So for making sauces, heating up a can of soup, melting chocolate, making jam, etc, you're going to want something smaller than the Dutch oven that heats up a little faster. Note this isn't the pan I own: The pan I own i got used and actually would never pay the new price for.
Tramontina Stainless
4. Skillet Pan
Okay, so now we're expanding. This is what I would use to saute, to make paella, you can even bake a giant cookie in it--I do this all the time.
Lodge Classic Skillet
5. Cake Pan
This would be my next pick! It's easier to bake cakes in a cake pan rather than a cast iron pan. I actually make my brownies in cake pans, i like them better thicker, and other people seem to agree! You can also make banana bread in one, no problem.
Fat Daddio's 8 inch round (I prefer an 8 inch to a 9 inch, but most people use 9 inch and most recipes are written for 9 inch, FYI)
6. Ninja Everyday
Okay, JOKES. The next think I would buy is actually not a pan but a whole cooking system thing. It has a rice cooker, braiser, slow cooker, pasta cooker, oatmeal setting. Is it the BEST at any of these things? No. But it does a good enough job at all of them that I think it's a great choice over buying a slow cooker or rice cooker.
Ninja Everyday Possible Cooker
Secret 7th pan: 9 x 13 pan. For cornbread, sheet cake, lasagna, bake ziti. You can make do without it, but I'd like to have it.
PYREX (french import that is still made of borosilicate glass yes yes it's very annoying that you need to go through importers to find this and so it is spendy)
I hope this helps!

14 Ways To Live A Healthier Life That Anyone Can Do
Use cast iron, stainless steel, glass, and ceramic cookware/dishes. Use wooden and steel for the utensils. Ditch the plastic and chemicals! They are even finding microplastic in the blood of newborn babies! If you can't afford to switch, switch slowly and buy second-hand! These materials will last through generations!
Buy and cook more fresh, high-quality food. Stop buying premade and processed garbage! The hidden massive amounts of fake sugar and additives in everything is far more damaging than a little bit of extra grass-fed butter or grass-fed meat on your plate. You can find local and even organic produce and meat for cheap at your local freshmarket, mexican grocery store, or asian grocery store. Aldi and Trader Joe's are also healthy yet cheap stores! You will also be surprised how little time it takes to cook versus having something pre-made, and with home-made food you'll have control over exactly how much sugar, fat, etc you have in a given meal. Neither of these are bad in moderation, but the key is moderation!
Prioritize your health and try to create less stress. Brush and floss your teeth, take care of your skin, eat as well as you can, move more, and sleep enough. These are things you should be doing AT MINIMUM to stay healthy. Stress also has a huge impact on health, so it is important to do your best to lower everyday stress and balance your hormones.
Do things that make you feel good. This ties into the less stress philosophy and the rule of everything in moderation, and this looks different for everyone, but generally focus on hobbies and habits that are good for you overall and dont cause addiction or mental health issues. The more things you incorporate into your life that you enjoy, the more you will enjoy your life.
Be aware of your feelings and honor them. No ignoring how you feel deep down! Notice what makes you smile and what makes you sad. Feel it all and try to see what your brain and body are trying to communicate to you about things. Your emotions and thoughts have a purpose, try to see what they're saying.
Try to wear or use more organic materials. Try to use cotton, linen, wool, etc for your clothes, sheets, and more. For jewelry try to use gold, silver, steel, copper, etc. Drop the acrylics and plastics. Invest in your clothing and wear quality materials - your health and wallet will thank you.
Try to kick any drug or alcohol habits. We only have one body in this lifetime and these things WILL catch up to you healthwise. The short-term dopamine is not worth the long-term consequences. Ask anyone who's suffered from their decisions from when they were younger.
Spend more time in nature. Being outside has many health benefits and it does incredible things for mental health. Find a place you can visit outside that brings you peace. Try taking a daily walk.
Learn to set boundaries for yourself. Including towards yourself! If you are pushed past your limits of exhaustion, honor your body and rest. It is okay to have soft, flexible boundaries, or hard boundaries, but they are rules we put in place in regards to ourselves to keep ourselves safe and happy! IE - "If I need sleep I will not keep pushing myself and I will go to sleep" or "I will not put up with being yelled at and I will remove myself from that situation".
Walk as much as you can, while you can. Try to opt out of convenience when possible and walk a little further to the front door of the store or try incorporating a daily walk into your routine. Moderate exercise is great for our health!
Do something daily that will exercise your brain. Whether it is a fun crossword puzzle or just something in your daily life you need to problem solve, do something that is going to flex that brain power and keep those pathways firing. If we don't use our connections, we literally lose them over time!
Talk to at least one person a day for at least 5 minutes. We are social creatures that thrive off community, so it is extremely important for our mental health to find connection with others and feel seen and heard and like we matter. Not only that, routinely reaching out to others will help you make and maintain relationships of all natures!
Educate yourself. Learning shouldn't just stop after you finish schooling. You should continually be trying to further your knowledge about yourself and the world around you. You live in the age where information is readily available all the time, so make an effort to use it to better your life, and learn how to sift through the misinformation as well. Not knowing how to do something is no longer an excuse as an adult when you can easily look it up or ask for guidance.
Consume more positive media and less media overall. What we watch and listen to really affects our thoughts, moods, and subconscious. There is a reason upbeat music motivates us! Try to keep your media exposure to uplifting and feel-good things rather than ones that cause anxiety or sadness.

The Timeless Appeal of Iron Cookware: Building Your Collection
Introduction: In the world of kitchen essentials, few items stand the test of time and craftsmanship quite like iron cookware. The robust durability, even heating, and versatility of iron make it a staple for both professional chefs and home cooks alike. Building an iron cookware collection can be a rewarding journey, enhancing your culinary experiences and creating heirloom pieces that last for generations. 1. The Legacy of Cast Iron:    Cast iron cookware has been a culinary companion for centuries. Its origins can be traced back to ancient China, and it gained popularity in Europe and America during the 18th and 19th centuries. Today, the legacy of cast iron lives on as a symbol of timeless, reliable kitchen tools. 2. Versatility in the Kitchen:    One of the key advantages of iron cookware lies in its versatility. From searing and frying to baking and simmering, cast iron pans and Dutch ovens can handle a variety of cooking techniques. The ability to transition from stovetop to oven seamlessly adds to their appeal, making them indispensable for a wide range of dishes. 3. Even Heating and Heat Retention:    Iron's ability to distribute heat evenly is unparalleled. Once properly preheated, iron cookware retains and radiates heat consistently, ensuring that your food cooks uniformly. This characteristic makes it ideal for achieving the perfect sear on meats and creating dishes with well-balanced flavours. 4. Health Benefits:    Unlike some modern non-stick coatings that may contain harmful chemicals, well-seasoned cast iron develops a natural non-stick surface over time. This not only enhances the cooking experience but also reduces the need for excessive amounts of oil or fats, promoting healthier cooking practices. 5. Seasoning and Maintenance:    Building and maintaining a collection of iron cookware involves a process known as seasoning. Seasoning involves coating the surface of the cookware with layers of oil that polymerize, creating a protective and non-stick layer. Regular use and proper care contribute to the development of a seasoned surface, enhancing the performance and longevity of your iron cookware. 6. Collecting Vintage Pieces:    A unique aspect of iron cookware is the opportunity to collect vintage pieces that have stood the test of time. Hunting for classic Griswold skillets or antique Dutch ovens can become a passionate pursuit for collectors. These pieces not only carry the charm of a bygone era but also bring with them the stories of countless meals prepared over the years. 7. Modern Innovations:    While vintage pieces hold a certain allure, modern manufacturers have continued to innovate in the realm of iron cookware. Brands like Lodge and Staub offer a wide range of pre-seasoned, enamelled, and specialty cast iron pieces, catering to contemporary cooking needs while maintaining the core attributes of this timeless material. 8. Culinary Artistry:    As you build your iron cookware collection, each piece becomes a tool for culinary artistry. The ability of cast iron to enhance flavours, create unique textures, and impart a subtle smokiness to dishes adds an extra dimension to your cooking repertoire. Whether you're perfecting the art of the sear or slow-cooking a savoury stew, iron cookware becomes an extension of your culinary creativity. Conclusion: In the world of cookware, iron stands as an enduring symbol of culinary craftsmanship. Building a collection of iron cookware is more than just assembling kitchen tools; it's a journey into the history of cooking, a celebration of versatility, and an investment in pieces that become cherished family heirlooms. Whether you opt for vintage finds with a story to tell or modern innovations designed for today's kitchens, iron cookware remains a timeless choice that transforms cooking into an art form.

I want to know 12, 14, 25, 29 STAT
💕 @28yearoldcheerleader
14. What’s something you’ve always wanted to do but maybe been to scared to do?
Sometimes I think about getting a tattoo, but I’d never actually do it. What if it’s not perfect and I have to stare at this little imperfection for the rest of my life?
25. What is your favorite season and why?
I like winter! The holiday season is the best. I get a chance to host parties and of course there’s all the great food. I just have to be careful, because it’s also Brown Bird cookie season.
29. What do you do when you’re sad?
I like to cheer up the old fashioned way: wallowing in my misery, eating (low-fat) ice cream, and watching rom-coms.
12. What’s some good advice you want to share?
Some of my friends you like to borrow my cast iron pans, but I notice they don’t always clean them properly when they’re done. Here’s my advice on how to properly clean cast iron cookware:
Since cast-iron pans can handle heavy-duty cooking, you might have a bit of a mess to clean up when you're done cooking. Here is a step-by-step guide to help ensure you don’t damage your friend’s pan.
Step 1: Clean the pan while it’s still hot. As tempting as it might be to let the pan sit while you enjoy your freshly prepared feast, taking a few minutes to care for your cast iron immediately after you use it will save you a lot of time later. That’s because stuck-on food hardens as it cools.
Step 2: Clean the pan with hot water – and no soap. Hot water will help loosen food that stuck onto the pan. Firmly scrub the pan with your cast-iron scrubber. You may have heard conflicting info about whether it’s okay to use soap. Conventional wisdom says soap strips seasoning from a pan. Some articles floating around the Internet claim that you can, in fact, use a tiny bit of soap and your pan will be okay. I’ve tested both methods and concluded that soap does indeed strip cast iron – even if it’s just a little bit. Steer clear. I mean it.
Step 3: For stuck-on messes, use some salt and a dry towel. The abrasion of the salt helps lift the food away, and working it in with a dry towel, which has lots of surface area, amplifies the elbow grease. If the food still won’t come off, try boiling a little water in the pan.
