Yet another reason to switch back to cast iron, ceramic, and glass cookware...
Actually, while we're on the topic, let me infodump about cast iron for a bit.
So! Cast iron cookware has been around for centuries, and it's easier to use and maintain than people think! It's gotten a bum rap in recent years, mostly from people who have never used it and don't know how (at least in my personal experience, the people telling me how awful it is to use didn't actually own any), but it's actually pretty neat.
Admittedly, there is one main disadvantage to cast iron, so let's get that out of the way first: It's heavier than other materials, which can be difficult to manage for some individuals. For example, I often need help moving my dutch oven when it's full of soup or chili, because it's pushing my medical lifting limit (the dutch oven weighs about 5 lbs. more than a similarly-sized stainless pot). I counter that by using the smallest piece of cookware I can get by with -- e.g. I have a 6" skillet and a 10" skillet, and unless I'm cooking for a crowd, I use the smaller one. (If you can't handle heavier pans at all, try stainless steel, aluminum, or copper instead! They're still healthier than Teflon.)
The other main thing people don't like is that you can't just throw cast iron in the dishwasher, but as the post above points out... you really shouldn't be washing nonstick cookware, either. The scouring action of machine dish detergent will break down the surface of most kinds of pans over time, sometimes with toxic results.
There's also a myth that you can't clean cast iron, which is patently untrue. You can wash it just like any other dish, as long as you keep up with seasoning the metal, and don't soak it or leave it wet (wet and unprotected iron will eventually rust). I scrub out my cast iron with hot water and a bit of liquid dish detergent every time I use it, then dry it promptly and re-oil it when necessary (about every two to three uses). I've never had a problem with it rusting.
Now, on to the really beneficial stuff about cast iron!
First, cast iron is FAR more durable than nonstick ware. My mom's cast iron chili pot has been in the family for four generations -- that's over a century -- and she still uses it regularly. I've had my cast iron skillet and dutch oven for more than 20 years and they're still like new. (Good luck getting a nonstick pan to last 5 years without scratching or flaking.)
Proper seasoning (rubbing oil into the metal and baking so it soaks in and keeps the iron from rusting) creates a natural non-stick finish -- one that won't poison you or the planet! You can also scour cast iron with just about anything without damaging the surface, so it's easier to remove baked-on food residue (I clean mine with aluminum wool and it takes off everything). You can also use metal spoons and spatulas without fear of scratching the pan. Go ahead and cut that cornbread with a knife right in the skillet; the pan is a honey badger and don't care. (I wonder if anyone else on Tumblr is old enough to remember that meme...)
Cooking in cast iron also adds a small amount of iron (a necessary dietary mineral) to your food. I used to suffer from mild anemia, and one of the treatment recommendations was to cook in cast iron.
Cast iron is also much more recyclable than other cookware materials. It's literally just a lump of iron -- a common elemental metal -- so if for whatever reason you ever decided your pan was no longer usable, you could recycle it at a scrap metal facility. But with proper care its working lifespan can be well over a century, so it's unlikely you'd need to retire it!
