Here are the step by step instructions for the bamya recipe.
Add "one finger deep" oil into the pot. Let's call it half a cup. The pot we are using is medium sized, but I would say on the smaller side. My mom seems to like the bamyas tucked together.
Turn on the flame to medium high heat. Once the oil is warmed up, throw in the meat. Stir the meat intermittently for 5 minutes to seal it. Once sealed, put on the list and let the meat cook for another 8-10 minutes.
Add one onion, diced, to the mix. Stir in the onion. In another 5 minutes, add two cloves of garlic, sliced thinly. Tip from my mom: she said she washes her garlic before peeling to make it easier to take the skin off.
Peel two large tomatoes (Vasfiye insists the tomatoes need to be peeled, she used three medium sized juicy tomatoes) and cut them into small cubes. Do the cutting on a board so that you do not loose the juice that oozes out while peeling or dicing. Add three fourths of the tomatoes (as well as the juice on the cutting board) into the pot and set aside the last quarter of the tomatoes for the final step. Stir the ingredients in the pot together. Close the lid, turn down the heat to a small flame and cook the meat in this lovely tomato stew for another 20 minutes. Small flame and patience is important here to ensure that the meat is soft and thoroughly cooked.
Add the okra! My mom proudly demonstrated to me how there was no mucus before doing so. Could this open the gates to okra love to those who shy away from the mucus, who knows!? Gently stir in the okra, add the last of the tomatoes and, if you like, a small pinch of salt to pull it all together. Close the lid, keep the small flame, and keep going for another 20 minutes.
Test the okra and the meat. If both melt in your mouth, you are read for the final rest. Turn the flame off, keep the lid closed, and wait for 10 minutes for best results. Serve and make sure there is some for the day after, when the vegetables really release their taste.

The recipe of the day is "etli bamya", in translation, okra with (lamb) meat. Okra is known to be a vegetable that invites extreme opinions: you either love it or you hate it. Some people devour its mucus like texture while others find it turns their stomachs. Vasfiye skirts that issue altogether. At each step of the preparations, she treats the vegetables to ensure the mucus matter is off the table. That starts already in the washing of the green pods. In the region, they typically use baby okra, which is hard to find fresh abroad, but you can get it in jars or frozen. If you go that way, you may miss the steps Vasfiye takes to avoid the mucus, in which case I still recommend the dish for those who can handle the mucus.
When preparing vegetables that require peeling, say like green beans, Vasfiye will peel off their ends and fibres before washing them. With okra, she reverses the order. She first washes the vegetables and let's them rest until they are dry. Only once they are dried do we peel them.
How you peel the caps also matters for the mucus. We started with 1kg of okra. The peeling requires cutting off the top handles of the green pods so that you are left with a pyramid on the top end. See my mom holding a well cut green pod, and a picture of one I overcut. You know your cut is too deep (and hence may have mucus) if you see holes on the top after the cut.
Once all caps are peeled, you put them in a container, squeeze 1.5 lemons and add half a tablespoon of salt before stirring the okras. Once the salt and lemon is thoroughly spread, put the okra to rest.
May I take a moment to discuss this matter about "resting". Rests are a big part of this type of cooking, be it for drying the veggies, for giving the vegetables time to ingest the salt and lemon juice, for vegetables to release their water, and to later boil down that water. The rest is not to be skipped and allows the meat and the vegetables to bring forth their taste while keeping their texture.
For the choice of meat, the dish works well with lamb. Vasfiye bought a half a kilogram piece of lamb on its bone. She cut smaller pieces off the bone, and uses all of it, the boney part especially, to benefit from the resulting bone broth. If you want to skip handling the meat on the bone, you can also replace it with lamb cut in cubes (she recommends 4-5cm edges).
In addition to the okra, lemons, salt and the meat, you need half a cup of olive oil, one medium sized onion, two medium sized cloves of garlic, two large tomatoes and some salt at the end depending on your liking of salt. My mom said, back when, lemons were a hard find and Fahriye made the dish with the juice of unripe sour grapes, "koruk" in Turkish and "verjuice" in English. My grandma would pick the unripe grapes from their back yard and smoosh them in a mortar to make the juice. While I love that special sour, uur grapes were too ripe for this action, but it is certainly worth the try if you have some vines hanging closeby and the time is right.
