I can't remember if we did this one. It would have been late last summer. i think we did some specific species, but i can't remember if it was done in total. I am quoting the whole suggestion here: "Carboniferous forests, before Angiosperms became dominant. I want to see the lepidodendrons and the huge equisetes and all the many Araucaria and gnetophytes and ginkgos that once thrived."
It is too late to fix the typo, but the First item should read somemething like: "People, species, and landscapes of California circa 1400.

what kind of work do you do? curious due to your recent post about your company!
I work in healthcare law! Previously for couple different hospital systems here in the US; then I got a similarly-shaped job, but for an international healthcare company. It's been interesting getting to know my colleagues, and trying to figure out how to make different international, national and local laws talk to each other.
That said, it is....a lot to watch the Americans fight the Europeans (all much, much higher up in the company than I am) while knowing---knowing---that my Latin American and Asian colleagues would be SOL if they tried to mount the same offense.
Not to mention, the European country that hosted our recent work conference was Switzerland, and during one of the "networking lunches" I happened to fall into a conversation with a recent hire. He moved his family to work out of the Switzerland office, so he was talking about the barriers they encountered there---the high cost of living, the bloodsport of the rental market, with baked-in discrimination (isn't that racism? I said out of sheer shock; later on, my boss told me not to say that word.) Not to mention the specific sex discrimination as experienced by his partner during her recent job hunt.
Personally, I am of the belief that I can never comment on another country's politics. I am American; playing "does your country hate you and most of your neighbors???" is a game I will inevitably lose, or at least walk away from missing fingers. But damn.

Howdy there everyone!
Today's (or, rather, last week's) recipe is baked General Tso's tofu!! Instead of traditionally fried (either in a wok or pan) tofu, which I find less healthy and plenty harder to make (all that flaking tofu in the pan is super annoying), this recipe involves a two-phase process of making marinated tofu and baking it in the oven, then making the General Tso's sauce on the stovetop culminating in mixing the baked tofu and warm, sticky, sharply delicious sauce together! Plus, you can add all manner of vegetables into the sauce pot (onions, peppers, broccoli, cauliflower, tomatoes, and more!) without fear of overflowing! All very low-key and manageable. I recommend serving with healthy whole grain or brown rice, perhaps with even more vegetables!!

Orange Chicken
A traditional dish from Chinese-American restaurants, orange chicken consists of crispy fried chicken mixed in a tangy, sticky citrus sauce. But, others would argue that if you've just ever ordered it for takeout or delivery, you've been losing out.
There is much to be said for the delicate balance of orange chicken prepared in the style of takeout when it is first removed from the pan. You simultaneously experience the crunch and the savoriness. But after 30 minutes, forget it. Just out of the pan, it tastes so much better. Thankfully, it's simpler than you may imagine to bring the staple of Chinese takeaway home.
