[ID: text that reads “Caramelized onions freeze beautifully, and you should take advantage of that. Imagine a life where you can add deep, sweet umami to soups, stews, braises, burgers, and anything else with a quick trip to the freezer. Don’t you want that for yourself?” /end ID]
why is this written like it's trying to hypnotize me into making a batch of caramelized onions, and more importantly, why is it working

Heya folks n friends! Today on our LotR cooking series, we're going to be making something inspired by Mrs. Maggot, wife of Farmer Maggot. Originally we were going to do a cream of mushroom soup, but the idea of adding meat as a cheeky lil joke on their last names was too good to pass up. In my mind meat goes better with thin soups than creamy ones.
And thus Mrs. Maggots Meat 'N Mush Stew was born.
(As always you can find the cooking instructions and full ingredient list under the break-)
MY NAMES CROSS NOW LETS COOK LIKE ANIMALS
SO, “what goes in to Mrs. Maggots Meat 'N Mush Stew?” YOU MIGHT ASKFor the stew portion itself we're going to be using a hearty base, aiming for a layering of flavors. If you feel comfortable making a roux, feel free to do so, but I did not due to energy levels and thus the flour in this recipe is only used for searing the meat before its added to the pot.
Cubed beef
Flour
Peanut oil
Beef stock
Dried porcini mushrooms
Carrots, chopped
Onion, diced
Garlic, crushed
Scallion, chopped
Bay leaf
Salt and pepper
Ground red pepper
Cumin
Zatarins gumbo file
For the other mushrooms, were going to cook them separate and throw them in at the end (but they'll have friends to keep them company!!).
Cremini mushrooms, sliced
Half an onion
Carrots
Garlic
Salt and pepper
Thyme
Olive oil
This took about 4 hours in total. If you have a slow cooker itd probably be easier to use that, but as is isn't too bad either. I mostly worked on commission stuff in the kitchen in-between stirring. "The best food is the one you don't have to make, the second best food is the one you don't have to think while making."
AND, “what does Mrs. Maggots Meat 'N Mush Stew taste like?” YOU MIGHT ASK
HOT HOT HOT
Tastes like walking from the cold into the cramped but cozy bar your friend works at
Meat was so tender and juicy, melts in your mouth. Makes you cry
It wanst actually carmelization but the onions had a hint of tasting caramelized
Mushrooms- a strong umami flavor with a bit of smokeyness
Once you get that Perfect level of gumbo file, it just makes every other element stick out more
Like an energy booster for the ingredients
A spotlight on the bay leaf, and oils, and spices
. If you don't want to use beef, feel free to use vegetable stock instead and replace the cubes with strips of king oyster mushrooms. Exclude the flour but still cook them in the pan. . this isnt officially part of the recipe since im not sure itd be 'on theme', but feel free to start your rice cooker around the 3 hour mark so you can have some hot rice ready for serving as filler.
-----------------------------------------------------------------------------------------------------------
When I was looking through food and food mentions in LotR, Mrs.Maggot just stook out to me. 'Queen amongst farmers wives' is both really sweet and a fuckin killer description. What a legend. I wanted to do something based on her and our two options were either beer, bacon or raw mushrooms. Beer while very appealing is also not something you can whip up in a day, while raw mushrooms have a chance of killing my beloved readers. I don't want to talk about me and bacons sordid past.
And so as praise to this funky farmer women, may you add this stew to your collection of potpie, lasagna, and roast recipes.
Did i mention i started my first grease fire when making this? Yeah. Don't cover any empty greased pan even if your intent is to keep water from splashing into it.
Anyway, this recipe is a solid 10/10 (with 1 being food that makes one physically sick and 10 being food that gives one a lust for life again.) The partner has already made me pledge to cook it again hehehe
🐁 ORIGINAL RESIPPY TEXT BELOW 🐁
Ingredients:
2 lbs cubed beef
A little bit of flour to 'tumble' the meat in, in a bowl
Peanut oil to sear the beef, as needed
3 kilograms beef stock
28g dried porcini mushrooms
4 carrots, chopped
1 white onion, diced
4 cloves garlic, crushed
1 scallion branch, chopped
Salt and pepper to taste
Ground red pepper to taste
Cumin to taste
3 bay leafs
A pinch of Zatarins gumbo file
Ingredients… . . TWO:
1 lb cremini mushrooms
Half of a white onion, diced
1 carrot, chopped
2 cloves garlic, crushed
Salt, pepper, and thyme to taste
Olive oil as needed to pan-fry
Method:
Put the porcini mushrooms into a bowl, add enough warm water to cover. Give them roughly 20 minutes, or until softened and the waters turned color.
Cut the carrots, onion, and garlic.
Get a large pot with a lid, pour in your stock (or water and bouillon cubes). Pour in the porcinis and the mushroom water. Turn the burner to medium-high.
Add your bay leaves, carrots, onion, and garlic to the pot. Add extra salt if you'd like.
Tenderize and cut your beef into roughly 1 inch cubes.
In a small bowl, pour a handful of flour along with pepper, cumin, and ground red pepper. Mix until combined.
Lightly toss each cube of beef in the mixture, get a little coverage on each side.
Heat a frying pan to medium heat and add peanut oil. If using an electric stovetop it will take time to heat up.
Add some of your beef cubes to the pan, don't overcrowd it. Flip to check sides are a light brown with dark brown edges, its good for some pink/red to poke through.
Add beef cubes to the pot when done, careful of splashing.
Keep doing this in batches until all beef cubes are added.
Once the pot has reached a simmer, turn the heat down a few notches and cover.
Set a timer for 4 hours. Taste test every so often. Aim to stir the pot every 10-15 minutes.
(You can do steps 14-21 immediately or optionally wait a bit)
Rinse and dry your cremini mushrooms.
Slice them vertically. Cut the carrots, onion, and garlic.
In a frying pan on medium-low heat, add olive oil, carrots, and onion. Keep the vegetables moving! When they start to change texture, add your cremini mushrooms.
Bring the pan up to medium heat.
Once your mushrooms have cooked off the liquid inside, theyll start turning a deeper brown. Add the garlic. Keep! the! vegetables! Moving!
If the pan gets overcrowded, take some out and set it aside in a bowl. Smaller batches.
This process took roughly 15 minutes, but youll know its done once everything has a nice sear on it and the garlic is brown but not burnt. Add salt, pepper, and thyme to taste.
Set everything aside in a bowl.
Once the 4 hours are up the meat should be cooked all the way through and tender enough to pull apart. Strain the bay leaves out. Cut and add scallions. Add the bowl with cremini mushrooms.
Add a pinch of gumbo file to start, stir and taste test.

for your childhood friends au, do the kids have any favorite foods?
Ooooh, okay okay, so this is something I’ve actually given a fair bit of thought to (maybe too much thought given how long this thing got, haha). I love little details like this in character writing - it makes them feel so much more alive and well-rounded, y'know? The kiddos have preferences as varied as their personalities, and I’m just itching to get into it, so… let’s get into it! (Also, just to be clear, I did pull some of my food headcanons for MK and DDD specifically from source material and the wiki, but most of this kinda just comes right off the dome.)
When it comes to food, Para Dee is probably the most milquetoast of the bunch (though that’s hardly a bad thing). Neither a voracious eater like Dedede nor an avoidant one like Meta, he enjoys food about as much as the average Waddle Dee, more than fine with his three square meals a day (maybe a snack if he’s good). His tastes primarily lean towards savory or bitter flavors, anything from a warm bowl of stew to a nice crisp salad depending on his mood (meaning that, of the four of them, he’s the most likely to eat his veggies... and enjoy them). He’s not the biggest fan of sweets (probably due to that fact that his father is a baker and routinely saturates their home with the heavy scents of vanilla and mixed fruit), but he does have a soft spot floral teas and hot chocolate, especially during the colder seasons. He doesn’t mind sour flavors in small amounts (meaning if someone gets pickles with their meal, you know they’re going onto Para’s plate), but spicy foods? Forget about it. His poor little stomach has no tolerance for spice, to the point where even a little too much pepper has him breaking out in a sweat (something Bow teases him about mercilessly).
If you asked him what his absolute favorite food is, he’d have a hard time choosing... but he'd probably say his father’s caramelized onion soup, a much-beloved dish at their dinner table and a favorite at every community potluck. It’s never quite the same when Para makes it (many years into the future with a family of his own), but it still sparks warm memories of holidays and togetherness with each cheese-laden spoonful.
Then, on the opposite side of the spectrum, we have Bow Dee, our tiny terror with a metabolism and appetite to rival those of her bigger buddies. If left alone and unoccupied for too long, she’s been known to sneak into locked pantries or climb high, off-limits shelves looking for any snacks she can get her grubby little mitts on (a habit she probably learned from watching Dedede). That said, she can be rather picky about which foods she’ll scarf down, especially in her youth when she would literally pick through her meals for the bits she liked and ignore the rest (much to her mothers’ chagrin).
If asked about her favorites, she’d say she likes protein-packed foods the most (omelets, jerky, trail mix, whatever will fuel those boundless energy reserves of hers in the saltiest, most flavorful manner possible) but refuses to touch veggies, pickles, and bitter flavors in general (at least in her childhood, growing a little more adventurous about food during their time overstars). She likes sweets as much as the average high-energy kid, partial to citrus fruits and sour candies especially (she likes how it stings a bit when you eat it, almost like it's fighting back). And, beyond all that, Bow loves spicy foods. Full stop. If it ain’t spicy - or spicy enough - she’ll find a way to make it so. Chili flakes, hot sauce, whole peppers, whatever she has on hand - it’s going in there, and Nova help anyone who tries to stop her. A bit ironic given her natural affinity for Water, though maybe that’s what gives her such a high tolerance for capsaicin. Or maybe she’s just that badass (as she likes to brag to her buddies, watching them steam out the ears from a single jalapeño while she’s already chomped down seven). And before you ask, yes, this has landed her in village clinic on more than one occasion. High tolerance or no, she definitely does not have Dedede’s cast-iron stomach… or Meta’s self-restraint. (We don’t talk about the Ghost Pepper Fiasco.)
Speaking of picky eaters, Meta has a… complicated relationship with food. He’s never had much of an appetite, often going (unsettlingly long) stretches of time without feeling the need to eat, only doing so if someone reminds him to (or if he gets too woozy, whichever comes first). He does need to eat, of course… just not nearly as often as everyone else does, it would seem (a byproduct of his peculiar biology, perhaps?). It’s an excuse he’s used often to get away with skipping meals, sometimes substituting in lighter foods like breakfast bars or Energy Drinks to keep his strength up (though this is hardly a long-term solution). He also finds certain textures and tastes difficult to deal with, even turning down entire meals if just one bite feels off. It makes eating with company - already an awkward experience thanks to his introversion - that much more uncomfortable, sitting there with a full plate while everyone else chews and chatters around him, wishing he could disappear as swiftly as his hunger (a habit that still crops up even in adulthood, though he has learned to push through it for the sake of politeness). Honestly, he could write a whole dissertation on how the act of consumption is a burden upon the living and no one should be subjected to it… and then he remembers chocolate exists and takes it all back for a while.
That’s really the one exception to his food trepidation: sweets. Perhaps it comes from living in Dream Land where sugary foods are so plentiful, the forests rich with apples and berries, the scent of pies and pastries wafting from windowsills, even the lands themselves named after foods of all sorts. Or perhaps it stems from his earliest memories, a helping hand and a bar of something indescribably sweet and rich, the first he’d ever tasted… Whatever the case, it’s stuck with him, a livelong love of sweets and sweet-adjacent foods, one that narrows, refines, and changes over time into preferences for chocolate, coffee, and other foods with light but flavorful consistencies. Not that this stops his friends (and later his crewmates) from hounding him into eating more nutritious meals once in a while, too. It's frustrating, but he knows they mean well, and he gets better about listening to their advice with time.
And finally, whipping to the other side of the scale once more, it’s Dedede, the penguin equivalent of a vacuum, willing to eat literally anything you put in front of him (including things you probably should not eat). He wouldn’t say he has many strong preferences - all food is good food in his eyes - though he does appreciate a good bone-in steak or similarly hearty dishes like seafood or pasta, and he could never pass up a nice rich dessert (especially cakes).
More than the taste, though, it’s really the act of eating - a pastime even more beloved than sparring or sleeping - that brings Dedede comfort, whether it’s through cozy communal meals with neighbors, the thrill of food-based competitions with friends (ones that will later inspire Dream Land’s famous Gourmet Races), or just to deal with the boredom (and loneliness) when he’s stuck on his own. It’s possible he gets this behavior from his mama, a little on the heavier side herself and known for her own cast-iron constitution back in her wrestling days (not to mention prone to spoiling her “darlin’ baby bird” and his friends with extra treats all the time). Meanwhile, his papa - a stickler for decency and discipline - is constantly reminding his son to slow down during meal times, wondering if he’s even tasting the food he’s shoving down his gullet (a blunt but well-intentioned criticism given the many, many tummy troubles Dedede suffers in his younger days). He never manages to fully tame his massive appetite (certainly not helped by the more decadent lifestyle he later adopts as a king), but he does at least refine it over time, learning from Para of all people about the joys of savoring meals rather than always inhaling them outright.
Phew, alright, I think that’s about it. Thanks for the question! Hopefully I didn't go too in-depth for such a simple one - I was having fun with it and might've gotten carried away again, haha. Well, at the very least, it'll give you guys some nuggets to chew on in the meantime (pun super not intended).

Kallios
Here's my OC Kallios, he was a demon. In his demon form he has two black elliptical wings and ram's horns. He almost always wears entirely black unless the occasion calls for something else. He was Lisette's husband until he died in the late 1970s.
Kallios was a marquess, a higher level demon and a member of the House of Lords. He’s around Diavolo’s age, and they grew up together as acquaintances rather than friends, but they became closer once they worked together when Kallios became the head of his family. The conservative lords think he’s naive for agreeing with Diavolo’s more progressive politics. He gets along with the Avatars of Sin and doesn't see them as a threat. He was impressed when Lisette was able to summon him, it takes a lot of magic to summon a high level demon, and he was bored which is why he agreed to make a pact with her. Soon, he became protective and fell in love with her. In the end he did want her soul, just not in the way most demons would. He died in a small rebellion at the hands of another demon around 50 years ago.
For his character design I wanted him to look the way I'd imagine a quintessential demon would look like but with hidden charm, he has dimples! He doesn't have a second look, not just because he's dead, but because he never really felt the need to change up his look that much. Lisette took on the challenge to make all sorts of outfits for him in black.
I answered the same questions for him:
1. He’s a demon so he likes demonus, he has a refined palate when it comes to Human World wines, and he loves champagne. Fizzy drinks of all kinds make him happy (rip Kallios, you would have loved kombucha).
2. Favorite flavor: spicy but he also likes sour.
3. Favorite food: Roasted roc in the Devildom, roasted chicken in the Human World. They’re not all that different.
4. Dinner is his favorite meal because it’s a time he’s guaranteed to be able to sit down with his beloved.
5. He doesn’t really like fish but he’ll eat it if it’s the only thing offered.
6. He has a high tolerance for spicy foods, having grown up in the Devildom.
7. He’s always felt a strange kinship to birds, particularly ravens.
8. He wears pajama pants with no shirt to bed.
9. He doesn’t have one particular sleeping position, and once he and Lisette began sleeping in the same bed it just depended on whatever position was easiest for him to hold her.
10. He is a night owl, in the morning he’s grumpy.
11. He is a light sleeper.
12. He’s usually busy working so the rain doesn’t make that much of a difference since he’ll be inside, but when he does have free time he likes to read by the fire.
13. He loves the smell of vanilla.
14. What does he smell like: Clean. He wears 4711.
15. He prefers showers because they are quicker and more efficient but he tries to share a bath with his wife at least once a week.
16. Like Lisette, he can follow a recipe but sometimes he gets impatient if certain steps take too long (don’t make him caramelize onions).
17. He likes the fall because the weather is just cool enough.
18. His favorite holiday is Jill’s Day because it was the day he first took Lisette to the Devildom.
19. He prefers buying gifts. He has a talent of knowing just what someone might like or need.
20. Kallios is 6’3/190.5 cm

Do you have any comfort foods/cultural foods that you love but other ppl might find weird?
no, I've never met a person who doesn't like noodle pudding. and people think they won't like my dad's brussel sprouts but they are also beloved by all. idk maybe y'all would find onion potatoes weird (mashed potatoes but with oil and caramelized onions instead of cream) but I think y'all'd come around if you tried it too.

Tag 9 people you want to get to know better
Thank you so much for the tag @coline7373
First ship: Uhhhhhh, I’m not sure I even remember my first ship. I got into fandom and by extension shipping when I was 13 or 14 so a long time ago. I think it was Kingdom Hearts? Might have been something else?
Three ships: Definitly Codywan, this ship has my entire heart right now. Rexobi as well since it is very much occupying brain space since I am participating in the Big Bang. For the third I will be veering very off course and say Eddy/Venom. Don’t judge me please, somehow I have fallen neck deep into open symbrock fic tabs and I have no idea how it happened
Last song: Giantess of Ironwood by Bear McCreary. I’m absolutely in love with both God of War soundtracks and obsessively playing Ragnarok currently after finishing the first game for the first time. (Also hurdy gurdy my absolutely beloved)
Last Movie: Glass Onion. Loved it, adored it, still continuing to rave about it!
Currently reading: Fic? Unless you’re counting the articles I’ve been reading about 15th century astrology and astronomy as a preparation for the coming reenactment season in order to expand me and my fiancées camp/crafts/authentic skills/…
Currently consuming: Tea and toasted brioche with caramel spread. Having breakfast before work rn.
Currently craving: Golden syrup cake. I basically crave this 24/7 it’s so good but not easy to find outside of the UK. Excuse to go an a holiday, maybe?
No stress tags: @itsgoldleaf @aeligsido @maximalblaze @laz-laz-ace-pilot @smolqui-gon anyone else who just feels like it

Hi Daggs, I wanna hear more about this bomb korean place you're a regular at, the food sounds dope. What's your go-to order? What's your special treat? How much spice level do you handle? What's Siobhan's fav takeout place? Idk talk to me about good eats
aaHhhhh my favorite place to eat, it's so good! dont judge me, we always order like mother fuckers when we go and then eat leftovers for a week!
the staple take out order
grilled mackerel, cuz i just fucking love it and they usually run out, so if they have it, it's coming home with us
pajeon, which is my comfort food! my old roommate used to make them all the time, and sometimes we use them to make kimchi quesadillas when we're feeling particularly high
gimbap - they usually have egg, pork, pickled radish and burdock, but occasionally they've made yukhoe gimbap and that's basically a national holiday as far as im concerned
gamja-tang, which is the spiciest thing i think siobhan is willing to split with me 😂
bulgogi, it's a classic for a reason and it makes good left overs
tteokbokki for my lunches
japchae for siobhans lunches
if we're actually going to sit down and eat
steamed pork belly
rabokki to share. rice cakes AND ramen? it's spicy, it's t e x t u r e, it's amazing
more pajeon, my beloved
boy howdy, we sure do like to Go A Bit Overboard huh... 😅
siobhan has a new favorite place every single week, but right now it's this place she found that does this fried chicken sandwich with nashville hot slaw and pickled orka that RIPS, and like polenta fries with caramelized onion aioli. if she comes home with less than one of those, she's in trouble!

Yeah, your asks have become quite the wild show lately, all the repressed thirst on this site.
In any case, I kinda wanna ask something on cooking. When caramelizing onions, would the weather and temperature of the kitchen affect the time it takes to properly caramelized them?
I tried doing it before, but I live in a tropical climate, and no matter how slow the fire, the onions always ended up being burnt carbon after 5 minutes. I can't imagine keeping that up for 25 mins as I often heard.
Maaaybe some tips on how to do it as well? Just in case I've been doing it wrong...
Gotta be honest, I think caving in on posting the nut video galvanized the horny homies, but I kinda don’t mind it :P
ANYWAYS, I don’t think climate should affect the caramelization of onions. I’m not sure what could be the cause of your onions burning though. It could be the type of pan, the quality of onion, the frequency with which you stir them, something along those lines. Caramelizing onions is simultaneously simple and finicky, and requires a certain amount of attention. However, just for you my beloved anon, I’ll let you in on a secret:
Baking Soda helps reduce the time needed to caramelize onions :3
You gotta be VERY careful with how much you add, because too much will disintegrate the onions and change the flavor, but a generous pinch will speed up the rate at which they caramelize by a lot. If you don’t have baking soda, you can also add a little water whenever you notice the pan getting dry while caramelizing the onions. This will make the time to cook them longer, but it’ll make it harder to burn the onions. Whichever method you choose, I wish you luck <3

And the two best burgers in Denver are…
The Cherry Cricket’s meticulous, months-long taste test trial to perfect its Denver Burger Battle contender paid off once again this year. More than 1,500 Denver Burger Battle attendees helped crown the Cricket’s over-the-top Cry Baby burger as the Peoples Choice award winner last week on the Auraria campus’s Tivoli Quad. The Cry Baby featured a half-pound burger topped with a toasty crostini blanketed with cave-aged gruyere, bone marrow caramelized onions, crispy cheese frico, and onion strings on a rosemary potato bun with a schmear of French onion dip and a French onion soup sidecar. This is the fifth Denver Burger Battle in a row that the beloved local burger institution has taken home a trophy. Every winning burger gets permanently added to its menu, including last year’s rich Cricket Royale short rib burger with bone marrow and 2022’s 983 Big Cheesy with mac and cheese, bacon jalapeño jam, crispy poblano, and Jalapeño Cheddar Cheetos. “We can’t overstate how appreciative we are for this honor,” Cricket’s general manager Heidi Ziepperecht said. “Thank you to every single person who tried our burger and thank you to everyone who voted for us. It means the world to us.” Spanish tapas restaurant Ultreia earned the Judge’s Choice award for its first-ever submission: the Jamonburguesa, a double cheeseburger, with Portuguese Thousand Island dressing, lettuce and pickles. Ultreia placed second in the People’s Choice award. Related Articles

Classic Denver burger joint taking over former Old Chicago in Broomfield
That’s no surprise, since Adam Branz, who took over as the sole owner of Ultreia last week, also serves up what The Denver Post considers to be one of the best burgers in town at Split Lip, an Eat Place, which operates inside Number Thirty Eight, a bar in the River North Art District. “We put our trust in this Ultreia classic – it’s been a fan favorite and on our menu for seven years – and we put our trust in the right place,” said Ultreia culinary director Gabe Wyman. “Our secret sauce is the Peri Peri we put into the Thousand Island Dressing.” The Denver Burger Battle kicked off in 2010, and this year’s competition hosted 20 participants, including newcomers like South Park Hill’s The W with its smoked pulled pork belly bacon burger and returning contestant Blue Moon Brewery with its take on a Pueblo slopper. The panel of eight judges included “Top Chef” alum Manny Barella, “Bachelorette” alum Blake Horstmann, “Love is Blind’s” Giannina Gibelli, James Beard Award semifinalist chef Kenneth Wan of MAKfam, and couple Noah and Sean – who got married at Denver Burger Battle in 2019. They ranked 20 burgers on a scale of 1 to 10; a 1 means that “the Hamburgler had the opportunity to steal this burger, he’d decline and go to the KFC across the street,” according to last year’s rules, while a 10 meant “I would sell my house, my spouse, and my children just to taste this delicious masterpiece again.” The Cherry Cricket begins its annual quest for victory months ahead of the annual beefy brawl, when chefs from each of its three locations submit two to three options as possible contenders. They consider texture, acidity, how toppings complement the beef and what ingredients are efficient for high-volume servings. The Cherry Creek location created The Cry Baby, and after multiple taste tests, the team of 15 chefs, general managers and corporate staff from the Cricket’s parent company, Breckenridge-Wynkoop, unanimously landed on the behemoth. “It’s the perfect marriage of a French Dip, French onion soup and a French onion dip,” Ziepperecht previously told The Denver Post.
