vegan chili cheese fries
water in a pot, add:
tvp [red lentils would also be good
peppers [I used dried]
precooked black beans [made in crock pot]
tomato powder [a puree would work well, just use less water)
seasoning: my everything seasoning, s+p, taco spice blend [I would use chili powder/ more red pepper flakes next time, there was no heat]
Serve over fries [ I used premade + heated in my air fryer]. Topped with vegan cheese, but use anything you want
I also had an apple with PB and dried cranberries on the pb.
I didn't measure anything, so I really don't know the macros. I probably had about a 1/4 cup tvp - 16g protein just from that. + everything else. I'm sure it was over 20g protein, which isn't bad.

Vegan tacos from TacoFriend!
Ingredients
Tofu extra firm
Soy chorizo
Corn tortillas
1 Poblano pepper
1 lime
Taco seasoning mix
Chili powder
3 green onion stalks
Two plates
Paper towels
A heavy thing like a big textbook or a Dutch oven lid
Open your tofu, drain the water, wrap the block in paper towels, put it between two plates, and put your heavy thing on it. Congratulations, you are pressing your tofu. Let it press for twenty to thirty minutes, wringing out or changing the paper towels once during this time.
Chop your veggies into pieces that are like ¼ square inch (1.69 cm²) or ½ inch (1.3cm) on a side. Doesn't have to be exact just like make sure they aren't too big. We're using small tortillas. Make sure to remove the big white chunk at the center of your pepper.
Zest your lime. I use this bad boy right here! Also unleash your chorizo from its plastic wrapper. You are not supposed to eat that bit.
Now that your tofu has been pressed, tear it to pieces! You can slice it into cubes, but I like the look of torn tofu. Put those pieces in a bowl big enough to stir them around in.
Now we're making marinades. This part is easy. Take your zested lime and before you, cut it, you're gonna wanna roll it on your cutting board, squeezing it with your palm, so that we get those juices a little loosened up in there. I don't know if that makes a difference, but it's fun! Then, halve it and squeeze the juice onto your tofu. Then sprinkle on your Taco seasoning, chili powder, and salt. Let that marinade for a bit, however long you feel like waiting, so that the flavors can soak into the tofu. We're replacing all that water that came out when we pressed it with our marinade.
Get a big old pan and put some oil on it and heat that sucker up before plopping in your tofu and chorizo. Cook for a bit; I always forget to keep track. Stir it around, then add your veggies, and stir those around, too until cooked.
Next, we're toasting tortillas. I like corn tortillas, but they tend to be fairly flaky, so we've gotta toast them to unflake them. I have no clue what happens when you toast them, but it does something! You're gonna want to get a pan with no oil on it and toss on as many tortillas as you can without overlapping. Cook those guys until they start to puff up and get those Maillard reaction browning spots, then flip and repeat on the other side. On a really hot pan, this can take like two minutes total per tortilla, so keep your eyes on them and don't let them burn!
Put your taco filling into your tortillas!
Put those tacos in your mouth!
These reheat really well if you have a toaster oven or an air fryer. Put your tacos together before you reheat them, so your tortillas toast while your filling reheats!

I'm on some cold medicine and have adhd so read at your own risk. This is a little meal prep thing so it takes some time but very little effort.
Okay so I make a lot of air fryer rice bowls because it's rice, beans, veggies. I usually do this while playing video games on my day off and I get lunches all week. Budget is <$10 for ingredients if you have an established spice cabinet (maybe $15 if you don't?).
You need:
A batch of cooked rice (they make minute rice if you aren't ready for this one yet, it's fine. it's literally fine.)
Your favorite spices, I like cayenne, garlic powder, and onion powder for this
extra firm tofu: drained, pressed, and cut into cubes
frozen butternut squash, sweet potatoes, brussels sprouts etc etc (pre-cubed and not gonna fall apart in the air fryer, that's the standard)
canola or avocado oil. some melted margarine works if it's cheaper but it'll look ugly until reheated.
a little salt and pepper
your favorite everything sauce. i really like a tahini lemon or prince dressing but I've done this with vegan hidden valley, carolina barbeque sauce, sriracha, olive oil and balsamic... use what's in your kitchen.
a big fat tupperware. don't eat this part but it's necessary.
tofu first. throw it in the tupperware. add a splash of oil and all the seasoning you want on it. trust yourself. close the lid. shake it until evenly coated in grease and spices. air fry at 390F for 20 minutes. check it at 10 and adjust time as necessary to get the texture you prefer.
don't clean the tupperware yet, she's carrying this thing. i like to do one vegetable at a time so i can vary the seasonings and kinda mix and match what i want in a bowl throughout the week. so. throw some veg (still frozen) into the tupperware. splash of oil, heavy pinch of seasonings, close the lid, shake like hell. air fry at 390F for 15 minutes, check at ten and adjust time based on your machine.
repeat until you're out of veg.
put rice in a bowl. put tofu and desired veg in the same bowl. put some sauce on top. say grace if you're into that. eat with a fork.
taco night it all week, custom making your bowl for that meal. takes two minutes to reheat in the microwave.
if you don't have an airfryer you can 100% do the exact same thing on a sheetpan in your oven but I'd do 400F flipping your tofu or veg every 15 minutes until it's cute.
