this christmas i was in charge of dessert (i made two large mango graham floats!) and the motabal (i made like 10 eggplants worth!) very happy with my work. still have to make garlic yoghurt sauce but i'll do that tomorrow. i cant believe xmas is less than four hours away for me. love you guys

people have gotta just get it into their head that "healthier" means healthier and "cleaner" means cleaner and "skinnier" means skinnier and absolutely none those things are synonyms of each other, and they're definitely not synonyms of "better." stop debating on whether or not things are the healthiest option and start arguing that healthiest isn't always the goal
#grilled chicken breast and mixed veggies are always going to be the healthier food option....#and since when is that agreed that that's Better than a steak or gelato or enchiladas or whatever else#if i went into a restaurant and asked what they thought the best thing on the menu was and they said the grilled chicken breast w/ veggies.#i would be upset#and judge their taste

Grilled Salmon with Roasted Vegetables
INGREDIENTS——————————————
- 1 salmon filet 🍣
- 1 small broccoli head 🥦
- 1 carrot 🥕
- 1 small potato 🥔
- 1 red bell pepper 🌶️
- 2 tbsps olive oil 🫒
- 1 tbsp lemon juice 🍋
- 1 garlic clove 🧄
- Salt 🧂
- Pepper 🌶️
- Dill or parsley 🌿
INSTRUCTIONS—————————————
1. Preheat your oven to 400°F
2. Place the broccoli, carrot, potato, and red bell pepper on a baking sheet.
3. Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
4. Toss the vegetables to coat evenly.
5. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
6. In a small bowl, mix the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and pepper.
7. Brush the salmon fillet with the olive oil mixture.
8. Preheat a grill or grill pan over medium-high heat.
9. Place the salmon on the grill, skin side down.
10. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
11. Place the grilled salmon on a plate.
12. Add the roasted vegetables on the side.
13. Garnish with fresh herbs.

victory: we cooked out a crazy stupid amount of food AND did not get rained on
#personal#liz can't cook#but i'm not bad on the grill apparently#actually my brother did most of the cooking but i prepped EVERYTHING#right down to marinating the pork chops#thrilled bc we got that meat on sale...under $20 for all of it#add the veggies and this whole table still only cost about $50#it came out really well but it was So Much food. had to put some of mine away for later
