Who loves a good light hearty and healthy lunch to kick off the New Year?  Here's one of my favorite healthy recipes that is simple to make, nutritious, and delicious. It's a Quinoa Salad with Chickpeas and Veggies:
Ingredients:
- 1 cup quinoa (well rinsed)
- 2 cups water
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 medium cucumber, diced
- 1 bell pepper (any color), diced
- 1 small red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
- Optional: crumbled feta cheese or avocado slices for topping
Instructions:
1. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt, lower the heat, cover, and simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender. Remove from heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork and let it cool to room temperature.
2. While the quinoa is cooking, prepare your vegetables by dicing the cucumber, bell pepper, red onion, and halving the cherry tomatoes.
3. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, and salt and pepper to create a dressing.
4. In a large bowl, combine the cooled quinoa, chickpeas, cucumber, bell pepper, red onion, cherry tomatoes, and chopped parsley.
5. Pour the dressing over the salad and toss to combine everything. Taste and adjust the seasoning if necessary.
6. If you like, top the salad with crumbled feta cheese or a few slices of avocado for additional creaminess.
7. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
This salad can be served on its own as a light lunch or as a side dish with your main course. It's filled with protein from the chickpeas, fiber from the veggies, and quinoa is known for its complete protein profile, plus it's gluten-free. It's a versatile base recipe, so feel free to add other vegetables or herbs according to your preferences.

In between their graduation from high school and the start of their college careers, Tucker and Danny collaborate on a small podcast where they mostly chitchatted about various topics from "Is a hotdog a sandwich?" to "Why the Justice League sucks." That last one upped their viewership, but most of that died off when the next three episodes were titled "The Best Eats in Nowhere, Illinois," where they trolled through Elmerton and Amity Park for the various chain and local restaurants, eating at and rating them with a very qualitative, subjective, and nonsensical scale, until they get to the Nasty Burger. The Nasty Burger gets an episode all to itself, describing the lore of how the "T" in the original "Tasty" fell off, the sign got tagged with an "N," and how, after it took years for the owners to fix the sign, they officially renamed the place "The Nasty Burger" because that's what everyone called it, even changing the menu and marketing that had stubbornly stuck to Tasty Burger all those years. (Tucker shows off his vintage Tasty Burger shirt as a flex of his loyalty). They order and eat every food item in one sitting (even the vegan ones), and rate Nasty Burger 20/10, the best local burger place you can find. After the drop off that came from reviewing places like "The Lucky Sombrero Irish Pub and Taquería," they didn't expect the clapback they got from the most unexpected place: Gotham, New Jersey. A small but very robust group of Gothamites were calling bullshit on the review, daring them to come to Gotham for their own local burger chain, The Batburger. Tucker and Danny sense a great challenge and a new episode idea, and Sam agrees to fund the trip when they declare the vegan options at the Batburger were far superior ("I funeded the separate grill myself at Nasty! Bet they cook their bean burgers in beef grease.") Of course, she's also coming along. So Tucker, Sam, and Danny hit the road with a teaser that they're taking up the challenge and coming to Gotham, and they'd be proving these uppity commentators WRONG. Meanwhile, The Batclan are a bit shocked to realize that their comments actually motivated the hosts of one of their favorite dumb podcasts, which appeared on their radar after the "JL sucks" episode, to visit Gotham. Wouldn't it be hilarious if they tracked them down and got to see their reactions in person?

What everyone on the internet refuses to understand for some reason, is that pleather is vegan in the same way oreos are.
It isn't made for us. We are not the target nor leading consumer. The average nonvegan uses more pleather because it isn't always easy to tell if it's animal or not in the first place. And just like oreos are a cheap and easy product that technically we can consume too, there is actual vegan leather made out of more sustainable products with that goal is mind.
Like all you're doing is literally making posts saying "Pleather (plastic leather) is plastic" and dusting off your hands as if you made the biggest brain post when you quite literally just defined a word and any moral context actually is pointing back at you so idk what you're getting at

Rosie is trying SO HARD to get Charlie to open up about how all this made her feel, this time with Vaggie there to listen (and learn) from it, buuuuut Charlie just keeps scooting her chair across the room, slowly, innocently, smiling and nodding as Rosie goes on talking about communication and trust and honestly-
and looks around to find Charlie sitting next to Vaggie anyway. And then, ON Vaggie. In her lap. Without spilling any tea, thankfully
"Sweetie, I think you're supposed to be mad at me." "I can be mad at you better from here~" (snuggles her)
poor Rosie knows they need to get better at talking about their bad feelings with each other, specifically the ones coming from their own relationship, but they are SO cute together she doesn't have the heart to push it right now.... Instead she shrugs, takes a bite out of an actual human heart like and apple, and moves the whole tea table over to them so they can reach the vegan fruit bowl options if they want to. Not that they seem interested in letting go of each other long enough for that any time soon, but you know, just in case <3

Heard a radio program about California providing more vegan options in school lunches and it was so nice and nonconfrontational I ended up thinking about questions I have about veganism but never get to ask bc of like. You know. Not interrogating people on their beliefs when they politely do not attempt to force theirs on mine when they say "hey I'm vegan" and I go "oh okay I'll tell mom to make extra veggies so there's enough at dinner. Also food lion sells these really good 'garden veggie' rice crackers??"
In my brain it's formatted as a poll but I can't actually figure out how to label it from most of least vegan because that's sort of my question. I have genuine trouble comprehending like. Where the line is.
So these are genuine questions, not gotchas. These are real questions I want opinions on for no good reason than I overthink things recreationally.
*note: It is possible I should have mentioned I live on a farm I am not interested in becoming vegan personally

While I'm on a non-american food kick it's truly sad how little variety of fake meat there is in the US. Where I'm at we have one decent brand choice for fake meat but good luck finding a restaurant that has any vegetarian options (do not even bring up vegan). It was so easy finding vegan and vegetarian food in the UK, even the random chippy across from our flat had good veggie burger 🥲
