It’s been a while since I’ve made bread, and I thought a good Reubens night was a great excuse to whip together some homemade rye. However, I actually didn’t use any rye flour in this recipe, instead swapping in some brown rice flour, part of exercise to get rid of the many assorted flours I have lingering in our kitchen.
I halved this using, as I said, brown rice flour in lieu of the rye. I made the dough the night before and baked it about midday the following afternoon so that it would have plenty of time to cool before dinnertime.
As far as bread baking ventures go, this one wasn’t a standout, but I was for the most part pretty pleased with the end result. The loaf did turn out a bit crumbly, but I’m attributing that to the artisan flours at play here rather than any errors on my part. 
This is a pretty simple recipe, one that only requires a little forethought to turn it into a freshly-baked reality. Rye bread isn’t always easy to find in these parts when you’re really craving a Reuben, so it’s good to know this recipe is really only 12-18 hours away.

I tried to take a picture of the lunchbox this morning and it looked so unappetising that I didn't.
I'm sure there's ways to make a brownish soup photogenic but I don't know them; still, reheated and with a swish of olive oil is an improvement.
Spelt soup, improvised.
In a pressure cooker cook pancetta cubes, slowly, add a bit of oil, onion, carrot and celery, cook slowly, add 100 grams of spelt, rinsed, and toast it, mixing carefully so it doesn't burn. Add 600 ml vegetable stock, half a can of borlotti beans, blended, and the other half whole, salt, rosemary. Pressure cook for 15 minutes. Let it release pressure naturally. Serve with some olive oil on top and if you like, grated parmesan
