Recipe off the List: Saag Tofu from Vegan for Everybody
Partner: what's for dinner?
Me: Saag Tofu.
Partner: ... why not use the paneer in the fridge?
Me: because it's from a vegan cookbook?
Partner: oh. Right.
Me: you did say you wanted to try this one
Partner: yeah. I did.
It didn't go better than that once the saag was on the table. Call us spoiled, but we could buy take out from a mid-tier Indian restaurant in our area that's better than this. If we were new to trying Indian food, it'd be a perfectly fine recipe. A three out of five if you will. But we're not. We've had really good food from this area of the world by people who grew up eating and cooking it who know what they're doing. Heck, we've made a better exemplar out of a cookbook we thought was underspicing every recipe.
I'm sorry, ATK, but five spices is not enough to get the depth of flavor we want out of Saag, tofu or paneer. The tofu is a perfectly fine substitution for paneer to veganize this, but what was up with leaving some of the spinach as pieces instead of turning everything into a paste?
Honestly, if we need to feed a vegan in our house and want Saag, we're probably going to grab the vegetarian version we already have and do the substitutions on the fly.

Weekly Groceries
I thought I'd try to make this a somewhat regular thing (as much as I find the time for it lol). I'm not promising these will be the healthiest or cheapest meals ever, they're just average person meals. I don't hold myself to this schedule, I just make a list of meals and make what I feel like eating whichever day it sounds good. I just thought it'd be easier to format for you guys if I did it this way.
Monday
Fried egg on bagel
Egg salad sandwich
Burritos
These are white people burritos, I'm not doing anything fancy lol. I do make my own taco seasoning so you'll see individual spices on the grocery list. The fried egg on a bagel has become my new obsession breakfast. I use a plain bagel and put jam and sometimes bacon if I have some premade.
Tuesday
Fried egg on bagel
Egg salad sandwich
Sheet pan sausage and potatoes
I've been loving sheet pan meals lately, they're so easy! To be clear the sausage referenced is ring sauce, not like breakfast sausage lol.
Wednesday
Oatmeal
Leftover sausage and potatoes
Pierogi and kielbasa
We actually do leftovers a lot! It just depends on the meal lol. My husband takes leftovers to work most days, so there's not always enough for both of us to have them for lunch.
Thursday
Oatmeal
Salad
Ravioli (or maybe tortellini... depends on what I find at the store first)
As you'll see on the grocery list I don't buy pasta sauce. I just buy a can of plain tomato sauce and add Italian seasoning. I'm sure there's great recipes out there that accurately replicate store bought pasta sauce, but a small can of tomato sauce is like 50¢ lol.

Stuffed chicken breast
I use a cheese ball recipe for the stuffed chicken breast. Whatever I don't use for the chicken (at least half of the recipe) I eat with crackers and vegetables as a snack. If I feel like being extra fancy I wrap the chicken in bacon before cooking.
Saturday
Fried egg on bagel
Grilled cheese
Honey garlic shrimp
I make our bread from scratch as well so you won't see that on the grocery list either.
Sunday
Fried egg on bagel
Grilled cheese
Pancakes
I love doing breakfast for supper! I love breakfast foods and I don't subscribe to the idea that certain foods are for certain times of the day. I had leftover chicken parmesan for breakfast this morning lol.
Groceries
This list is not reflective of what I'm buying this week. It assumes you don't have any of the ingredients needed for these recipes, including spices. I'll include prices from Walmart because it's the most popular grocery store in the US, I fully understand it's not the closest for everyone (when we move the closest one will be an hour away). For the most part I'll assume the cheapest version of each item is being bought. I buy certain things in bulk so I won't have to buy them again the next week. You may notice this lacks much produce, I wanted to leave that to personalize. So, depending on personal preferences and where you actually shop your total could be higher.

i used to eat healthier bcuz i was living with my grandparents who actually know how to cook and who had homecooked meals almost every single night. my husband made dinner tonight and while i'm the primary cook, he does just fine in the kitchen.
anyway, we're having a recipe we've had before and it calls for Korean hot pepper flakes. a footnote in the recipe says that if you don't have those, you use 3 parts paprika and 1 part red chili flakes. this is what i did the last time i made this and it turned out very spicy but not too overwhelming.
he did not read the footnote, nor did he ask me if red chili flakes are the same. he just used all red chili flakes.
don't get me wrong, it still tasted good. but i also had to tap out because eventually my mouth started burning and wouldn't stop. and i'm a bit sad because i was looking forward to the recipe all week so i'm going to make him take me out for gelato when we go to get some more milk for the morning

Recipe off the List: Classic Dan-Dan Noodles from Every Grain of Rice
Ever have that moment when you're planning out the meals for the week and have altered a recipe enough to accommodate food restrictions and realize it's really not the original recipe any more?
Yeah, that's what happened with this one. Classic Dan-Dan Noodles uses ground pork. Well, we didn't have any of that in the house, but we do have a lot of beef in the freezer. So, Partner was going to grind some and I'd use that. But then we realized that was the only night of the week Metamor could come over for dinner. Instead of choosing a different recipe, I just decided to use tofu instead of beef (or pork).
But Metamor is gluten-free. So instead of the usual Chinese wheat noodles, Partner bought GF fettuccine and rice noodles. I used the fettuccine since it was at least the same shape.
The closest I came to actually following the recipe was steaming the CSA greens which happened to be bok choi like in the remains of the oil and things cooked in the wok.
So yeah, this was nothing like Classic Dan-Dan noodles. The spicing was good though.

Sometimes, he lets you feed him.
When you hold out a fork to him, he opens his mouth with a smile and tastes the dish."Not bad for the first time"He said thoughtfully as he held your free hand in his, stroking the back of your hand with his thumb.
Sometimes, he lets you choose who will join for dinner.
"Choose wisely," he says softly as you scan the list of potential guests. Your fingers hover over a name. "Is this person dear to you?" he asks, leaning closer. You nod, feeling a chill creep down your spinal ,while his hand lies on your lower back, caressing it casually,this looks more like a warning
Sometimes, It allows you to notice things you weren't supposed to know.
You open your eyes to find him already you woke up hugging you and stroking your hair. studying you intently. His gaze is directed at you, and it creates a feeling that this moment could end at any second."Your face is almost perfect in sleep," he murmurs. "Almost."

You open his leather-bound journal while he’s busy in the kitchen. At first, everything seems normal—recipes, annotations. Then you find a page with an anatomically accurate drawing of a hand. Placing your hand on his cheek, you ran your thumbs over it, feeling the warmth of his skin. "Soft hands," he says, turning to look at you. "If you don't mind, next time, let them linger longer.
