Lumberjack Day
Dress up as a lumberjack, eat a hearty meal, and honor the venerable, crucial, and often dangerous profession of lumberjacking with a thanks to lumberjacks.
“Oh, I’m a lumberjack and I’m okay….” Monty Python famously sang this ridiculously silly Lumberjack Song, and singing a rendition of this would certainly be appropriate as part of the celebration of Lumberjack Day!
History of Lumberjack Day
Lumberjacks have been an interesting part of human history for many years, felling trees for use in building houses and structures as well as for making paper and other helpful uses. And while this profession was certainly around long before, the specific term “lumberjack” actually comes from Canada where it can be traced back to a letter written in the year 1831. Other terms, such as “wood cutter” or the more modern “logger” are also appropriate for the people who do this type of work.
The history of Lumberjack Day can be traced back to the mid-2000s when Marianne Ways and Colleen AF Venable decided it was time to honor this esteemed profession. Venable herself worked as a lumberjack at one point, although she has admitted that the original idea for the day was conceived as an excuse to go out and eat pancakes and waffles with friends!
Lumberjack Day has caught on in more recent years and is now celebrated by many folks, especially in Canada and the United States.
How to Celebrate Lumberjack Day
Have a load of fun and celebrate the ruggedness of this profession on Lumberjack Day! Check out some of these ideas for making plans and observing the day:
Dress Like a Lumberjack
One delightful and simple way to get on board with celebrating National Lumberjack Day might be to take a page out of their fashion book. Dress for the outdoors and chopping down trees by donning some jeans or work pants and a pair of sturdy boots, then top them off with a perfect plaid flannel shirt. Even more fun, add a fake beard and a beanie cap for the perfect look. In certain workplaces, carrying a real axe might be going a bit too far, but a fake one from a costume shop might be kind of fun!
Go Out for Pancakes and Waffles
Since the motivation of the original founder of Lumberjack Day was to go out with friends to eat mountainous piles of pancakes and waffles, it seems like the right way to celebrate this day even now. Head on over to a favorite breakfast-all-day restaurant and enjoy a stack or two with yummy Canadian maple syrup!
Host a Lumberjack Day Party
Anyone who wants to join in on the fun of Lumberjack Day can organize a party for friends and family where the idea is for everyone to dress up in the cliché lumberjack style of plaid shirts, boots, suspenders, and beards. Provide snacks and treats with a wood cutter theme, such as pretzels (that resemble cut wood), fresh broccoli stems (that look like little trees), and cheese puffs (or campfire flames). Don’t forget to dress the table in a red plaid flannel tablecloth!
For entertainment, the group can certainly watch some Monty Python episodes, particularly the ninth episode of the BBC show, Monty Python’s Flying Circus, which features The Lumberjack Song. Other ideas for how to enjoy a party for the day might be to do a little online research and learn about lumberjack jargon, jokes, drinks, and recipes.
Attend Some Lumberjack Day Festivities
Several different communities in the United States have events and even full weekends that celebrate the fun and festivities of the lumberjack. Lumberjack Day is the ideal time to make plans to visit one, or several, of these community events. From Orofino, Idaho to Stillwater, Minnesota, and all the way over to West Point, California, the celebration of lumberjacks is worth pursuing whether near or far.
Parades, contests, entertainment, live music, flower shows and so much more can be found in communities celebrating Lumberjack Days. And the best celebrations will, of course, include access to an all-you-can-eat pancake breakfast!

Top Ten Foods To Have for Thanksgiving Instead of Turkey
Let’s be honest…turkey sucks! It’s dry, it tastes okay, most people don’t have it except this one time of year. But why? It wasn’t really at the first Thanksgiving; also, there’s a lot of things that did not quite happen at that first meeting! There’s no reason to actually have it, just a tradition invented by the Turkey Breeders of America. Let’s normalize a new main dish! Then, perhaps, if we enjoy the food more, we’ll enjoy each other’s company more. This is the first steps of #MakeThanksgivingBetter.
1. Chicken – It’s the superior bird! You can fry it, bake it, broil it, whatever you want, it’ll turn out good! Chicken is consumed by millions daily, why not have a day to celebrate America’s actual most beloved feathered friend.
2. Hamburgers and hot dogs – These are two different foods, but they go so well together. Thanksgiving is supposed to be an “American” holiday, what else is an American holiday? The Fourth of July! We don’t eat turkey on that holiday! Why make Fall Fourth of July so lame? Let’s light up the grill and blow stuff up!
3. Breakfast food – This goes without saying! We can replace all Thanksgiving food with breakfast! There is so much variety to it – pancakes, waffles, bacon, sausage, oatmeal, dounuts, this is something we should be celebrating! We should be thankful for breakfast. So long Thanksgiving, hello Breaksgiving!
4. Tacos – Usually there is a Taco Tuesday, but why not a Taco Thursday? Whenever a person has asked, “Do you want to get tacos?” No one has ever replied, “No.” There’s nothing more than can be said. We all agree, we want tacos, and we want them now!
5. McDonald’s – Again if this is an “American” holiday, what is more American than a corporate giant that feeds off this country’s citizens? Plus, there’s a new deal where you can order forty McNuggets for like $12?! That is something to be thankful for!
6. Stuffing – Out of everything at Thanksgiving, stuffing ranks the highest. Personally, it’s the one food I get the most of. We already have it once a year and the turkey is still involved. We just try to have stuffing more, really. It would have a lot of carbs though. Maybe we can just have more of everything besides Turkey; sweet potatoes, green bean casserole, mashed potatoes – the things most people already like.
7. Desserts – The best part of the meal are the desserts. That’s always been known. Skip what is said is supposed to be a meal and eat what we all actually want! On this holiday you are meant to gain weight and it can be easily done by just having sweet treats. At the end of the day we are all racing through the meal to get to the pecan pie. I like to call it, Dessert-mas.
8. Pizza – It’s like tacos, who doesn’t like it? There are so many types you can get, New York style, Chicago style, stuffed crust, meat lovers – everyone could get their own personal pan. So much pizza would make such a good time no matter who showed up for dinner.
9. Lobster – If we all going to come together and eat once a year we can at least be fancy about it? A lot of people eat lobster once a year or less anyway. In a way lobster is the turkey of the sea. Both are a little scary looking. And if things start to get messy during dinner, it’s okay, we’re eating lobster.
10. Pheasant – It’s related to turkey. Having it would a way to say, “you suck” to all the turkeys out there. I hope pheasant doesn’t taste too similar…

My vegan list :)
Vegans (And those of us looking to or are making a positive enough impact) rejoice for even though this list (Starts after the next paragraph) has lots of stuff and covers pretty much if not every craving you are likely to have, this is a very basic/small list of all the vegan stuff that is actually out there, and to the best of my knowledge all of this info is correct, but if by any chance I have made any errors, please let me know (Note: At the end of this list, I do have a sustainable option of non veganism as well that can work if enough people get on board, and could encourage a lot more people to make a positive enough impact as well :)
From the Middle of 2017 till 2018 March 6th I was vegan, then on March 6th 2018 I decided to be an expert Flexitarian, then on the 1st of April 2018 I decided to nearly go back to the way I was before I was a vegan. I don’t know about where you guys live but here the speciality items, the imitation items and such are just getting too expensive and I am so fuckin’ poor that I would have to practically dare I say it, get into poor health and possibly die to keep on this path with my nutritional/specific needs, plus, I can’t afford a car or the insurance for it even if I could drive, I live an an old bachelor/studio apartment in one of the rougher areas, and on top of being fairly sensitive to sunlight I am ever more so with cigarette smoke and suffer many allergic reactions to it, and guess what, there’s more then enough of that second hand crap going on around here and it effects my mind, who I am, and my debt, don’t even ask, and, yeah, I kind of want to stay healthy and live… if I ever win the lottery or let lucky enough I will go back to being a vegan in a…heartbeat. When I was briefly an expert Flexitarian I though that if I ate as if everyone on earth or close to it were vegan then what would be humane, as in animals living their full lifespan/etc, you will see my all my reasonings at the end of this list. Suffice to say, living in that world, even though I know I’m in this one, and my flawed logic (Liver is a small part of a life form so having a big pig out on that as oppose to like maybe a small piece/slice once a year, I might as well just say the whole creatures life was for that particular kind of flesh/meat/food, and so on like that) + excitement took a backtrack because of this, but, in my dreams, well, I got quite the wake up call, and I will never consume any honey or fish, same with cheese, creams, butter, margarine as they are made from like 5% or less of the milk (5% milk/5% fat) or other stuff that is just too much of a strain for far too little gain, so adjustments will have to be made and knowledge shared :)
VEGAN LIST:

Meat:
Don���t be fooled by the word veggie, these are actually pretty good tasting meat substitutes - granted they are not meat, but if it wasn’t for them, I would most likely be having more then 14 pounds or less a year, as I have really, really fierce cravings for it when the urges hit, so for me, I am giving myself a huge pat on the back for what I am doing, I love animals/life greatly and I am doing what I can, again, these subs are really quite tasty and I’m pleasantly surprised by them:

It is random but certain CF places here in Canada will do other practises that will make any number of these items non vegan, so just ask to make sure that there is no beef/pork/chicken broth or oyster/fish sauce, no bonito flakes to flavour any salads/dressings/soups, and for them not to use any non-vegan stuff from their signature stock to enhance the flavour of a dish (The boiling of bones/meat/prawn shells etc) and not to cook anything in lard and/or beef/chicken/fish oil/broth :)

if I were to have them without cheese or just make my own vegan cheese substitutes, then places that can make their pizzas vegan include: Blaze, Cici’s, Domino’s, Little Caesars, Mellow Mushroom, Papa John’s, Pizza Hut, Pizza Nova, Pizza Pizza [Has introduced Violife vegan cheese to its menu, so just ask for a violife vegan pizza (With your desired toppings) and your good to go + there are rumours that there may be other pizza joints that are thinking of adding vegan cheeses to their menu], PizzaRev, Pyramid Brewers-Margherita Pizza, Taco Bell-Mexican Pizza, zpizza-Berkeley Vegan Pizza, etc) and have crusts and sauces that are vegan (Be sure to ask) and also ask them not to add any sour cream or creams, and apparently pizza without cheese/vegan subs are still really tasty with extra sauce, red peppers, beans, garlic, onions and mushrooms in it’s place, but of course these toppings would be even better still with good vegan cheese.

Newyork fries (Fries), McDonalds Fries & Hash browns, The Veggie burgers and fries from the A&Ws & Burger Kings are also vegan (Just don’t get any Onion rings on your Burger King burger, and as for Harveys most of there locations fries are vegan but some cook them in the same friers as the chicken nuggets and their soy based patty burger is also vegan (Oh Canada :)

For today’s vegans that are craving meats and dairy (Or those that are curious), it may still be a little while yet, but were getting there (Scientists have already created bacon and hamburger meat from a harmless procedure of taking stem cells from said creatures, plus a lab created pizza that can be custom made to fit a persons daily nutritional needs while still tasting delicious, aaand researchers at Oregon State University were pleasantly surprised to find that, after working two decades with a seaweed species bred to feed abalone, they discovered that they were actually dealing with a delicious seaweed superfood called dulse that tastes like bacon when it’s fried).
Non vegan sustainability options - Feel free to correct me if any of this is incorrect, it was very, very difficult for me to find and I tried to insure that it was accurate + I left my old thoughts here too as they are all part of the journey:

When I was completely meat, dairy and harmful ingredients free I had no meat/dairy/etc (Just the rare mistake/error though). Anyways, after doing some research on how much dairy and meat products would be humanly available per person if nearly everyone or everyone in the world were to become vegan/humane as an expert Flexitarian could have that stat if said scenario happened - the 7.5bil people one (Animals dying of natural causes/etc and humanly keeping natures balance in cheque and so on). Once I got my answer, since I like to try and live my life in a theoretical world that is (As far as I am concerned) doing things right, I am going to consider treating myself every now and again, once I get my answer (Such as, a massive “pig"out of beef rice with extra beef and sweet and sour spear ribs and sweet and sour chicken balls twice a year (Roughly 36grams per sweet and sour chicken ball, roughly 21grams/small-37grams/large per sweet and sour spear rib) - Birthday and new years - who knows, maybe I’ll be able to have a few more sides of whatevs as well with this scenario in mind + 1 slice of bacon is around 25grams so I’ll have a few slices of that on special occasions also:)
Well, it’s quite amazing really. If everyone (Or close to it) became vegan now or in the not too distant future, and made their yards/properties bee friendly, if a fair number of families had lets say 2 hens each (Which could be done, especially with today’s methods/feeds/etc - The average hen can produce 1 egg roughly every 26 hours, sometimes taking 2-3 days for an egg, and although they do eat meat, love insects and mice/etc, they can still get all their proteins/etc from specialised plant feeds - The egg production can be reduced to around 80-150/year if balances are off and result in health problems and for temperatures, lighting, whether/etc), and made the available land/earth nature friendly and the likes, leaving the areas that had or still have rich enough diversity/etc alone. The estimates say that this would be possible for each person on earth to do without causing harm to the environment, or suffering to creatures/etc (Also keeping into account having enough of the carnivores/etc in the food chain to keep things healthy all around).
What would be allowed/humane with letting all the creatures live full wonderful lives with the best feeds/etc, only being put down before their time if they are too injured/etc. - (100% Meat/best of the best, same for everything else, meat or otherwise, no fillers, growth hormones, crap, and, um, well, crap/etc - The kinds of animals raised in this scenario are the kinds that will allow us to still have the products that we are familiar with but many made with different meats, to have the most meat with the least imprint - meat that is still delicious of course). Also taking into account there being far, far less waste like the outrageous amount of good food and drinks that are tossed and left to go bad when not selling + other reasons (This, people should be protesting in mass about, and putting an end to it) - Anyways, these stats are of a truly humane scenario per person with a 7.5 bil population if every last solitary person on earth did this with everything being balanced, also abandoning the previously rich areas, allowing all of the previously cut forests (that are used for non vegan food and foods in areas that were once forests/etc) that either still do or once sustained good enough to truly incredible diversity (Which is pretty much every forest/ecosystem that ever was) to be reborn/etc with us helping them out, and letting nature do what it should to make them great again and maximizing good use of the earth, ghost towns, etc, etc, etc, all land cleaned up and used properly, proper structures around the world/etc with a super healthy planet, super rich diversity, lots of forests and the whole works in all the best places - Possibly even more then what is listen below:
-Around 1½-5 pounds of non cattle and non sheep meat a year (Depending on what larger non cattle/sheep creatures you consume, including chickens & turkey) if you include having a little under a ½ pound of cattle a year (Sheep is said to be a bit worse for the environment, but I can’t find exacting stats on this). Although unknown, including rats, mice, rabbits the total can be quite a bit higher, especially if you also include insects (Interesting fact: Like good wine the taste of animals improves with age, so the older they are before they die, regardless as to whether or not they have lost body mass/etc, the tastier they will be, that is of course meat from old animals that had all the best foods/environments/no alterations/etc, and have been processed right after or soon enough after death, these meats being coveted amongst the elite) and the amount of feed and negative impact on the environment when there’s too many of them would also mean less of them to keep a global eden in cheque - People have the potential to keep on making this world far, far richer/better/etc then it has even been). [Rabbits, mice and rats alone would increase the total)/etc or any other smaller critters, including mice/rats (Despite the myths and stereotypes, they are actually quite sanitary and can make great pets) and all other smaller ones, even insects/etc that can eat more then just a small amount of meat/etc, so if all that was takin’ into account, then who knows what the total would be!!].
-2-3 extra large chicken eggs/week - The average hen will produce about 265 eggs in a year. Most hens have two productive years of egg laying then taper off as they age (Top 10 best egg laying hens are: Golden Comet & other hybrids, Rhode Island Red, Leghorn, Sussex, Plymouth Rock, Ancona, Barnevelder, Hamburg, Marans & Buff Orpington) - Like cats and many other animals when their “owners” are knowledgeable enough about them, treat them well/give them a good life, they make for excellent pets and when taken care of as part of the family. On average hens will live for around 8-12 years (Sometime around 20+), and they will lay eggs whether they are mated with a cock/rooster or not, and be sure to use Backyard Vegetarian Layer Mash or other organic/vegan based feeds, ones that will meat, er, sorry, meet all of their nutritional needs/etc. Caring, less stress, good environments/conditions more often then not also leads to better/more eggs. Egg sizes for stores (Super Jumbo 77g/2.75oz or more, Jumbo 70g/2.50oz, Extra Large 63g/2.25oz, Large 56g/2.00oz, Medium 49g/1.75oz, Small 42g/1.50oz, Peewee 35g/1.25oz, Petite peewee 28g/1.00oz or less).
-37-48 grams of solid milk Chocolate worth/week (If you eat these or other stuff with milk/bars and still drink milk just subtract the total of said item from the milk you drink as well). I will have some chocolate for Easter (A solid milk chocolate bunny around 120grams), Thanksgiving (2 small chocolate Turkeys totalling around 50grams or less), Birthday (McCain chocolate cake) & Christmas (A Terry’s chocolate orange). Every now and again a chocolate bar. Note for bars, make sure there’s no butter, Milk fat, cream in the ingredients list, but having cocoa butter is good to go, I like big turk bars - They have a chocolate coating, that way, getting lots more bar, meaning lots more yum.
-W/O chocolates (Just milk), around 57ml of milk each week (I won’t drink any "around 57ml/week, what’s the point, the rest of it would just end up going baaaaaahd, besides, unless there was enough people drinking it - lolz”, besides, I’ve actually grown quite fond of the chocolate soy silk anyways (The kinds with 7grams of plant protein per 250ml), but I do incorporate milk into other products that use it - chocolate bars almost always have around 12%-15% of it’s weight in milk - On average 1kg of chocolate cake has around 190ml of milk anywhere from 140ml-200ml of either butter “any cakes with butter, well, it takes 21lbs of milk to get enough of the fat to make 1lb of butter, so, um, nope, not worth it” [Butters & milks lb and ml wise is pretty much the same, but cream I am not so sure of, it depends on how thick/creamy/etc it is (Will update further if I find out), or vegetable shortening - Also ⅔ milk + ⅓ butter makes most average creams (Other ratios for thin to thick/etc)].
-Honey (Stats unknown but expected to be crazily minute), so the occasional feeds of Maple syrup it is. With a bee friendly world each person may be able to have their share of honey every now and again too though, but it’s hard to say (Like fish, in today’s world it is truly at crisis points, each bee only produces like 1/12 teaspoon of honey in it’s lifetime and it is only really humane to take honey from abandoned hives - don’t know about you but when I was a kid and teen it was common place to see several bees through the summer, but now I consider it lucky if I see about 10/year - F*** you Monsanto!!). (According to USDA reports, 2.77 million honey-producing colonies in 2016 generated 161.8 million pounds of raw honey).
-Fish (Stats unknown), a no go for me anyways due to how devastated the ocean/aquatic life/system currently is, cause we need it where if we all did such and such, things can still become paradise (for realz), live it, will it to the cosmos, project it, believe it, ee-dawn baby.
Also, for 9bil people, sustainability of meat (Same as above with 100% Meat/best of the best/etc) - Still having a really healthy planet with great diversity, plenty of forests/etc (These stats do however max out the taking/use of milk and although still very kind, they will still lead great lives but with an expiration date (When they are just old enough to make for good meat) as these stats are less generous on the types of creatures raised for meat (Based on the average percentiles of the creatures Americans consume), still making then viewed as things, and these stats allow for more production of cocoa/ingredients for chocolate), still giving these creatures good healthy lives with pretty much all the best:
Based on a world population of 9 billion, which assumes that animals are only allowed to graze on grasslands and fed by-products not related to soy, maize or other artificial feeds, still keeping all the areas where there were once forests with the exceptions of allowing the richest of forests/environments to regrow, heal/etc, and the figure they came up with was 26 grams of meat, per person, per day. For meat solely from ruminants the figure was 19 grams. 1½ large eggs pp/pd. Plus 138 grams of milk pp/pd. 57grams of solid milk chocolate pp/pd (138grams minus the milk chocolate).
So, I got thinking to myself, why should I deny myself all this just because most or all of humanity isn’t vegan (At least not yet), or deny myself of many things that a fair number of people don’t or can’t have or aren’t using properly/etc because of the flawed system/etc, if people don’t change, then the same result will happen.
I can easily be called a hypocrite or callous for this by some, or possibly even many since the world is not like this (The 7.5bil scenario), at least not yet, but on the flip side, this could convince much more people to be far friendlier in the world the way it actually is now making it even more likely for the 7.5 bil dream scenario to occur, and if anything, this will show that the world can still have it all, if done right (…don’t…let..stuff…goo…too…waste…) you know, life your life the way you want it to be lived and try to project that energy/logic into the cosmos, live in the world you want to see/live in - one that can still become a reality - feel/live that life, project that life - project that satisfaction - believe it is reality now :)
So, anyways, I can still have a cake for my birthday (No butter, cream, if possible to find) and have a slice or two of cake from everyone elses birthday too, I can still have ice cream…er…in my dreams {1 litre of “real” ice cream contains 250ml of whole milk (Straight from animal-min to no processing) or butter milk and 250ml of heavy cream with 4 egg yolks [2 full eggs (yolks and whites) can be used but the flavour will have less richness]} then too and treat myself to it every now and again as well (Same with chocolate), all that will mean is that I will not be able to actually drink any milk (Again, what would even be the point), but that’s okay, cause I still like my subs anyways :)
I am sooooo looking forward to turkey for thanksgiving (With gravy), and every now and again a nice feed of liver & onions with the occasional Maple-leaf Vienna sausages too, just to name a few things (Make sure your adding it all up though :)
BTW, I’ve heard that rats and mice actually taste so chose to chicken that it is hard to tell the difference. Sheep meet (This review was given by an anonymous expert food critic) is said to have a richer flavour with added tastes of campfire, mushrooms, nuts, a bit of a wine like flavour with some kick to it, a hint of a butter-like taste, and kind of an earthly flavour that is relatively close to a mixture of liver and iron. It is said to often be a bit of a shock to the system at first but is very tasty once one gets use to it. As for dogs, they sound absolutely delicious, tasting like a cross between extra flavourful/rich beef and mutton (Another word for sheep flesh/meat) with added extra meaty flavouring, that cooked dog meat is actually delicious with a unique/strong meaty/fragrant mouthwatering aroma. Frogs, the flavour and texture are supposedly mild and extremely agreeable. No strong odours, no strange aftertaste, they say if you tell people they are eating premium farm raised birds that have been dunked for a while in fishy seawater, with having a bit of that taste to them, that they will believe you. Cat supposedly taste like a cross between chicken (White meat only) and frog.
Lastly, science is already able to make clones and as for bringing back extinct species of flora and fauna, even making Pokemon (lolz), eternal youth, everything worthwhile being far superior and new additions/senses/abilities, immortality with being far, far superior to the DS9 changelings/etc, who know what the future will hold, but if we don’t have enough resources left to get to any number of infinite wonders beyond wonders, well, I would hate to think of such a scenario.

September Seasonal Produce Guide
Late Summer and Early fall leads to heavy loads at the farmers market and thus very long lists in this Seasonal Produce Guide for September. Bear with me because there are so many good recipes to enjoy right now! Fruit is still making a good appearance as are all of the vegetables and you can’t forget the big, busty, ripe tomatoes right now! This time of year I love making a big batch of marinara to store up for the winter. I also serve this One-Pan Farro with Tomatoes, Sausage, and Kale frequently for a quick dinner and a big bowl of apples once again graces our kitchen island.
Though I’ve given you plenty of ideas below for recipes, I also wanted to add a few end of harvest ideas for you. Just pick one of the ingredients listed above and find a way to store it up for a mid-winter celebration. This year try shucking a lot of corn to freeze for winter meals, or make your own jam (this maple vanilla apricot jam is a little taste of heaven), can some peaches in this honey simple syrup (one of my favorite things to enjoy mid winter), or try your hand at pickling – this strawberry pickled radish recipe is fun and I always make at least one batch of these pickled vegetables every year.

Bed & Breakfasts With Breakfasts Straight From Heaven
Well, some of you Bed & Breakfast innkeepers missed a golden opportunity. I went to websites of inns best known for their food, but no entrees were even mentioned. How can it be that an award-winning inn for their breakfast doesn't describe any breakfast? So I went to websites that proudly described their dishes. Here are a few of them.
The Buttonwood Inn is in a small New Hampshire town called North Conway, but nothing about their breakfast is small. They may begin with some Pumpkin-Walnut bread or Apricot-Orange scones, Maple Cinnamon rolls, Blueberry-Walnut Crumb Coffee Cake, or warm Fruit Crisp with granola, accompanied by cool, fresh fruit topped with raspberry sauce. That would be enough breakfast for me, but the chef is just getting warmed up. Next comes a savory dish like Mushroom-Sausage and Cheddar Cheese Strata, Scrambled Eggs with Goat Cheese and Chives and a side of roasted Red Bliss Rosemary potatoes. Then comes the sweet entrée: Baked French Toast Casserole with Pecan and Wild Maine Blueberry topping. Or Light Yeasted Belgian waffles under fresh blueberry sauce. Hail to Buttonwood.
Mission Oak Inn of Henry, Illinois offers some wonderful breakfast dishes like French Banana Crepes and fabulous Blueberry Pancakes, but it was their dinners that snapped me to attention. How about a Pizza of roasted chicken, onion, and cheese atop a dreamy creamy sun-dried tomato sauce? Or tender meat medallions served in a cream, brandy, maple and mustard reduction? Or grilled salmon on fresh greens with original sauce and topped by bacon, green onions, parmesan cheese, and walnuts? Or pork tenderloin marinated in apple cider, grilled, then smothered with homemade apple/peach chutney?
Then I happened to catch Jane of the Hawk Valley Retreat on the phone. When I asked about her most popular dishes, her voice became secretive and sultry and she led me lovingly down the list: German Baked Apple Pancakes, Baked Peach French Toast, pancakes with a brown sugar/strawberry compote, Green Onion and Spinach Cheese Quiche with hash brown crust, and Eggs Benedict with her own secret Hollandaise sauce recipe. The names of her entrees didn't bowl me over. But as she described every detail, every ingredient and spice, I knew cooking isn't just fun for her, it is a luscious adventure. There's a difference. Jane is a master of simple baking.
Like many of these top inns, the chefs at the Bloomsbury Inn use only fresh local farm products. I never expected a South Carolina inn to be full of such scientifically talented people. But they've experimented with hundreds of dishes, and the creativity of their top picks boggles the imagination: hot apple soup, poached pears and baked peaches with toasted peanut butter rolls, creamed eggs in a puff pastry, baked cinnamon-raisin French toast, toasted bacon-pecan bread, homemade biscuits with chocolate gravy, peppered praline bacon, and their own version of Eggs Benedict: a delicate crème sauce over croissant, wilted spinach, peppered ham, avocado, and poached egg. Exquisite.
Sue of the Harbour Ridge Inn in Osage was not about to be outdone. She emailed me with her choices, and I appreciated the personal attention. Sue serves fruitinis in martini glasses with a white chocolate mousse base on which she slices banana. Then she pours in Chambord-soaked strawberries with a dollop of whipping cream and a mint leaf for garnish. She does the Bloomsbury Inn one better by nesting her Cinnamon-Raisin French toast atop a whipping cream custard base accompanied by sausage loaf and delicate poached pears in red wine and orange juice. Another popular French toast starts with fresh grilled pineapple slices, country ham, sliced cheese. Add sourdough bread soaked in French toast batter, grilled and served with a strawberry-jalapeno pepper jam. She also makes egg casserole to order with choices of fresh stuff like roasted red peppers, leeks, mushrooms, sundried tomatoes, spinach, diced ham, cheeses and fresh basil and dill. I was impressed. Nice email.
The Judge Porter House in Natchitoches (where?), Louisiana it not to be missed. The first course at the judge's might be peach or apple dumplings, bread pudding with warm maple sauce, Peach Crisp baked with a coconut-pecan topping, Apple Brown Betty topped with vanilla yogurt, pecans, and cinnamon, or Berry Puff Pastry stuffed with fresh berries, drizzled with raspberry sauce, and topped with whipped cream. The second course may include delicious pancakes, waffles or French toast, but I featured those things in other reviews so let me emphasize the egg dishes. One baked egg dish features eggs with savory mushrooms and crème Francais cradled in Black Forest ham crisps. Another favorite is Southwestern egg mixture baked in individual ramekins and topped with hearty salsa. Then there's the Queen Anne Quiche, but the chef was very hush-hush about it. Guess you'll have to visit the judge's to check it out.
The two most attractive things Bed & Breakfasts offer are cozy, top rate lodging and terrific breakfasts. Check out these terrific inns for the best breakfast ever.

drop cornbread biscuits
This past Saturday, we hosted our second Friendsgiving, stuffing 17 people in an apartment that has no business holding 17 people, but it’s okay, there’s wine for that. Our first one was in 2016; you can read about it here. I took 2017 off because I was a teensy bit busy book touring for Smitten Kitchen Every Day** It was fun to be back.
When having friends over, I like to get everything done that I can in advance and I do this for completely selfish reasons: I want to enjoy my party, too, and I can’t if I’m scrambling around all day and am bone tired by the time food comes out. But last week was abnormally busy and I only got to grocery shopping on Thursday, only to discover that one week before Thanksgiving, it’s like tumbleweeds, the lull before the weekend stampede, all past-prime rosemary and other sadness. I almost cancelled but my husband miraculously found almost everything that evening, and instead I did a very beautiful, highly recommended thing: I nixed a few things on the planned menu and swapped more complicated ones for simpler recipes with shorter ingredient lists but high reward. Here’s the menu, a few details, and completely random tips:

* Herb and garlic baked camembert: This is in Smitten Kitchen Every Day and there will never be an SK party without it. In fact, it’s gotten so popular that my friends and family make it now too, so I outsourced it. My SIL brought three, we heated them here. It was so nice to have one less thing to do.
* Bacon-wrapped dates: No recipe, but there are a gazillion on the web. I don’t stuff them (I did it once and it was way too pesky, especially given that they’re good without stuffing) and no dip. We made a ton and they were gone quickly; my daughter called them “bacon candy.”
* Turkey: In 2016, I did a hybrid wet brine from a bunch of sources. It was delicious but not worth the logistical nightmare. And mopping. This year, I made The Judy Bird, a Thanksgiving application of Zuni Cafe’s famous roast chicken. There are many dry brine recipes out there but this was the simplest and why make something more complicated unless you know it’s necessary? Based on the turkey reviews, I don’t think it needs anything else. My changes are that I baste it with a melted 1/2 cup of butter, and then when I’m out of butter, the pan juices, and this year, I put quartered red and yellow onion wedges in the bottom of the pan (tossed with a little oil, salt, and pepper) and friends, they were glorious after getting caramelized and lightly charred in turkey-butter drippings for a few hours. Here’s a logistical tip I don’t think enough recipes make clear: You want to rest your turkey for 20 to 30 minutes before carving it, tented lightly with foil. It’s then going to take 15 minutes to carve (I had a friend holding a YouTube video tutorial in front of me because I’m very bad at it.) This gives you 30 to 45 minutes of empty oven time where you can reheat sides, which is more than most need. I have a single, not big, not great oven and it was all I needed. [I mean, needs being relative, just in case Nancy Meyers is out there and wants to lend me a set kitchen and the life that goes with it next time.]
* Gravy: I really ought to write up a recipe one day, huh, but I use a basic formula of 1/2 cup butter, 3/4 cup flour, 8 cups chicken or turkey stock, a splash of dry marsala or sherry to deglaze the pan, and a lot of salt and pepper. (You cook this the way you would a bechamel.) When your turkey is done, if you want to separate the drippings, you can replace any of that butter with fat and any of that broth with juices. Or you can skip it! The gravy will have a less nuanced turkey flavor, but it’s still pretty awesome, especially if you have homemade stock. (In a freak bit of luck, I discovered two quarts of this in the freezer from last winter and used them for the gravy, stuffing, and more.) I make the gravy right in the bottom of the roasting pan, stretched across two burners; this way I can scrape up all the good, flavorful bits. If you don’t use the dippings to make gravy, I highly recommend you use them to drizzle over the sliced turkey, to keep it as moist as possible when you serve it.
* Stuffing: I also owe you a recipe for this but although I have two stuffing recipes on this site that I adore, I made a simple challah stuffing instead — although I made it decidedly less simple by making my own challah. Each loaf will make enough bread cubes to easily fill a 9×13-inch dish. I made mine with just celery, onion, and herbs, but you could easily sauté some mushrooms, diced apples, pancetta or crumbled sausage in too. Oh, and definitely make enough to have leftovers; this is important.
* Cranberry sauce: I went old-school with this, with a very early recipe on this site. I wanted something on the sweet side because my friend Ang was bringing a more savory one with tomatillos. Both were delicious.
* Green bean casserole with crispy onions: Don’t knock it until you’ve tried it (homemade). I make the green beans extra firm (just 2 minutes, then into ice water), then the mushroom sauce. Cool them both fully before mixing them. This goes in the fridge overnight. I’ll fry the onions — always make more than you need — and keep those separate until we’re about to eat the warmed casserole.
* Slow-roasted sweet potatoes: Once I realized I’d have no time for the root vegetable gratin I’d originally planned, I added these and 10/10, would recommend because the ingredient list is basically nonexistent. I baked them for the 2 to 3 hours before the turkey goes in, because they need a lower temperature. Broil them to get a good color on the skin. Leave them out while the turkey roasts (they’ll stay decently warm for a couple hours) and rewarm them just before eating. We served these in 2-inch segments, skin and all, and I was texting the recipe to friends demanding it even before going to bed that night. It’s that good.
* Stuffed mushroom casserole: My friend Ang brought this too and it was delicious. (She thinks it needs more cheese, though. I had no complaints!)
I didn’t make any pie at all! (Although my friend Molly brought a mincemeat pie with a cheddar crust and it was wonderful.)
* Bourbon pumpkin cheesecake: I made this in a 9×13-inch pan to cut as bars instead. Same recipe. Same temperature. However, you’ll want 1.5 or even 2x the crust, and it bakes in about 30. Seriously. It’s awesome.
* Perfect Manhattans: Because why not. I made two carafes of them, just scale up the recipe until you run out of an ingredient or carafe space. Friends can pour or shake it over ice; leave cherries or orange peel strips on the side.

Finally, as always, I have a last minute recipe for people who do things at the last minute. It’s never my intention, but it’s consistently my reality. I made these biscuits the first time over the summer, a season where we eat outside and act like it’s no big deal (waah), for a 4th of July ribs fest along with slaw and corn and all of those summery things. So, they go really well with warm weather. But they’re also a great quickie dinner roll, or even a fun addition to a breakfast-for-dinner night (like we had last night) with scrambled eggs and bacon. They take 5 minutes to put together and 15 to bake and there’s nothing not to love about that. They’re craggy and crisp on the outside and plush within, perfect for splitting open with your fingers, buttering, drizzling with honey, and finishing with flaky salt or nestling into the side of your holiday plate.

Heat oven to 450°F. I covered my baking sheet with parchment paper but it shouldn’t be strictly necessary, and many shouldn’t go in this hot of an oven, so use your own discretion.
Stir flour, cornmeal, sugar, baking powder, and salt in the bottom of a large bowl with a fork or whisk. Add butter and toss to coat cubes in dry mixture. Use your finger or a pastry blender to break the butter into smaller and smaller bits, until the largest is pea-sized. Add buttermilk and stir once or twice, until a dough comes together.
My very scientific method of dividing the dough evenly is to press it gently into the bottom of your mixing bowl into roughly a circle. Cut into 8 or 12 wedges. Pull out one triangle of dough with a soup spoon for each biscuit, pressing it into a craggy, messy ball, then drop it onto your baking sheet. Repeat with remaining dough.
Bake for 12 to 14 or 15 minutes; smaller ones should be done at 12, larger ones at 14 or 15. Remove from oven and serve warm. Biscuits are best on the first day. On the second, gently rewarming them will improve the texture.

National Chicken and Waffles Day
The lip-smacking and finger-sticking-inducing culinary combo of savoriness and sweetness that is chicken and waffles is celebrated today with National Chicken and Waffles Day. The day was proclaimed by Roscoe's House of Chicken 'N Waffles in 2021, at the same time they launched Roscoe's Motivation for Change Foundation (RMCF), which helps communities through charitable giving and focuses on "public service, culture initiatives, community empowerment, job skill development and programming in culinary arts and media training."
At the time of the day and the foundation's creation, Roscoe's founder Herb Hudson said, "Spreading joy through charitable activities is an integral part of our foundation and the core of our initiatives. We want to take ownership of the day by inviting everyone to celebrate with us and use this as a date to follow your purpose for good and join us." For the holiday's first observance, Roscoe's introduced the waffle tender, which was available for a limited time at select locations, and also introduced a new hot sauce, which was available at all locations.
Chicken and waffles generally consist of a waffle that is served with fried chicken and covered with butter and syrup. Variations of the dish may date as far back as the seventeenth century. The traditional Pennsylvania Dutch version comes from this era, and consists of stewed and pulled chicken atop a waffle, covered in gravy. It became a symbol of Pennsylvania Dutch Country over the next two centuries. The African American-created, Southern soul food version, made with fried chicken, is the most common version today. It became a menu favorite at the Wells Supper Club in Harlem in the 1930s, and at other locations in the New York neighborhood, and Wells is credited with boosting its rise in popularity.
In the 1970s, Herb Hudson moved from Harlem to Los Angeles and opened Roscoe's Chicken 'N Waffles, which made the crispy combo even more popular, in part because celebrities were known to frequent the restaurant. Roscoe's isn't the only restaurant known for chicken and waffles; Metro Diner also has some skin and syrup in the game. Regardless of where one eats chicken and waffles, it remains a staple of both Pennsylvania Dutch cuisine and soul food, and is specifically eaten today, because it's National Chicken and Waffles Day!
How to Observe National Chicken and Waffles Day
Celebrate by having chicken and waffles at Roscoe's House of Chicken 'N Waffles, Metro Diner, or one of the other best places in the United States to have it. Check for specials and events in honor of the day. You could also make some chicken and waffles at home. Make the Southern version with fried chicken, or try the Pennsylvania Dutch version with gravy and cooked chicken.
