Zuppa Toscana by Olive Garden. Famous for its pairing with soft breadsticks, this twist on an Italian favorite is packed with yummy goodness. A chicken stock base with sausage, kale, and red pepper flakes provide a zesty array of flavors.
Loaded Baked Potato Soup by O’Charley’s. Packed with flavor (and also quite a few carbs!) this soup is sure to please with its cheesy potato base and bacon garnish. Like most soups, this one is tasty when served with buttery bread rolls.
Cullen Skink from Ubiquitous Chip. This soup is named after Cullen, a small fishing town in the northeast of Scotland. One of Glasgow’s favorite restaurants, Ubiquitous Chip, features this comforting treat made from smoked haddock, potato, onion, and spices.

A comforting and creamy soup made with fresh mushrooms, perfect for cozy evenings.
Ingredients: 2 tbsp butter. 1 onion, finely chopped. 2 cloves garlic, minced. 1 lb mushrooms, sliced. 3 tbsp all-purpose flour. 4 cups chicken or vegetable broth. 1 cup heavy cream. Salt and pepper to taste. Chopped parsley for garnish.
Instructions: In a large pot, melt butter over medium heat. Add chopped onion and minced garlic, cook until softened. Add sliced mushrooms, cook until they release their liquid and start to brown. Sprinkle flour over the mushrooms, stir and cook for 2 minutes. Gradually pour in chicken or vegetable broth, stirring constantly. Bring the soup to a simmer, then reduce heat and let it cook for 10-15 minutes. Stir in heavy cream, season with salt and pepper. Simmer for an additional 5 minutes. Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.

Ginger Mushroom Miso Soup (Vegan)

After days of feasting, this flavourful Ginger Mushroom Miso Soup, with its deliciously fragrant broth, makes a lighter dinner.
Ingredients (serves 3):
1 1/2 tablespoon toasted sesame oil
half a thumb-sized piece fresh ginger
a dozen chestnut mushrooms, dusted
a few fluffy stalks Garden Cilantro 
1/4 cup good quality white miso paste
1 1/2 litre water
Heat toasted sesame oil in a large pot or saucepan over medium-high heat.
Peel ginger and cut into thin strips. Add ginger to the hot sesame oil, and fry, 1 minute.
Cut chestnut mushrooms into thick slices. Add to the pot, and cook, stirring often, until browned, a few minutes.
Finely chop Garden Cilantro, and add to the pot. Cook, 1 minute more.
Then, stir in miso paste. Cook, another minute.
Finally, pour in water, stirring well to mix in miso paste.
Bring to a slow boil, then reduce heat to medium, and simmer, about 4 minutes.
Serve Ginger Mushroom Miso Soup very hot.
