I made some potato leek soup.
Three days of lunch and dinner for like... i dunno... $6?
6 red potatoes
1 carrot
1 onion
2 cloves garlic
1 leek
1 stick butter
2 32oz box of veggie broth
2 of above of water
Salt, pepper, turmeric
Melt a stick of butter on low medium in a big stock pot.
While it's melting, dice the onion and garlic and throw it it. Stir to coat in melted butter.
Up the heat to medium and cook until the onions start to go clear, stir occasionally to keep them from burning.
Wash the potatoes well. Dice em up in chunks roughly the size of the end of your thumb. *Do not dice thumb.*
Add potato chunks to buttery onions and stir to coat them in buttery onions.
Wash and chop the carrot, and throw that in too.
Add liquids and put the heat to high to bring the whole thing to a boil. Stir occasionally. Add salt, pepper, turmeric, whatever other spices you want here.
While waiting for it to boil, slice the leek, then give it a good rinse in cold water. (Leeks always seem to have so much dirt in them.)
Once at a boil, add half of the leeks, cover, reduce heat to low, and let it simmer for 30 minutes.
When the 30 minutes are up, add the rest of the leeks, briefly bring it back up to a boil, then eat.

You can actually hear me forget how to do the voice between the two recordings. (They were back to back.) The first recording was so much cuter. I'll have to work on mastering that one.

This is radical self-care.
It's not potatoes or leeks or dill or green onions (we were out of shallots at work) or chicken stock or salt or pepper.
Nope.
It's me loving myself today.
After an emergency meeting with my therapist, a little while ago, I have to do something kind for myself every day for a month and document it. The long and short of it is that I've been feeling really worried about a thing, and last night, I ended up having a panic attack so severe that I blacked out, prompting my sister to drive 35 miles from her town to mine to check on me. Oops.
There's an individual who my therapist believes is jealous of a relationship that I have with another person, and they've created a competition out of said person's attention, bragging about any time they get a response and minimizing anything I get. She believes that, even though I do have some issues I'm working on (cptsd, recent trauma, learning to love myself), I'm not doing anything wrong and don't deserve to feel so guilty. And then she slammed the gavel down on this absolutely horrible "document your self-care so I can grade you on it" sentence. (that last bit was sarcasm, I do feel better after enjoying this bowl of soup that I made for myself, though I need to tell my therapist that I cried at first because I felt like I didn't deserve it).
Anyway, the soup came out perfect, just like back in the day. It's a mood lifter, frown turner, etc. So simple, and such a great taste. I could have added ham but I forgot. Oh and @frozen-fountain was correct - a bit of mustard went really well with it. I got all fancy and bought some stone-ground mustard and put a blob in the middle of the soup. I'm happy that I made this. It really does make a person feel better.

Ever since I made that pot of potato leek soup, I've wanted to make more soup. I still have a bowl left, though it's been heavily altered by this point (there's noodles, ground beef, and I think I added some creamy sauce to it), but soup is where it's at when your soul needs to heal.
