bulgogi-style tofu bento
recipe/ info below the cut :)
this is my meal prep from last week- the tofu part lasted for the 5 days but would probably be 3-4 normal sized portions as I tend to eat less for lunch. as always, you want to be careful with storing rice, so make sure you cool it down fast and probably only keep for 3 days max. recipe:
grate one block of extra firm tofu (I also grated a couple carrots at this point to bulk it up a bit more)
bake /airfry for a couple minutes, moving often. this is mainly to remove extra water content and also get some crispier parts
marinade the tofu (and carrots) in equal parts gochujang, soy sauce, sesame oil, sugar, sesame seeds plus some ginger and garlic. I have jars of pre minced garlic and ginger so I used like a half part compared to the other ingredients. at this point you could also add a grated apple/ pear to be more authentic to the bulgogi dish.
after some time (at least half an hour but realistically it could be left overnight in the fridge), fry off the tofu and the marinade over medium heat, making sure to keep a bit of the liquid as this is what keeps the tofu moist as the week goes on (if you are meal prepping).
serve with cooked white rice and I added edamame as a vegetable.

A nice story! Previously, Lawson's policy was that its hot-case foods had to sell within several hours of cooking or they'd be thrown out, despite still being good to eat. Now, food that's past its sell-by time (but within its shelf life) gets popped into the freezer right away to preserve freshness and is donated to facilities for food-insecure children.

On-The-Go Tuscan bean salad (prep: 15 minutes + 12 hours infusing time)
1 C canned navy beans
1 shallot
1 C. Sun-dried tomatoes in oil
1½ tbs. Tomato purée
3 tbs. chopped parsley leaves leaves
1tbs. chopped mint leaves
½ tbs. capers, rinsed
½ tsp. sea salt
pinch of freshly ground white pepper
pinch of dried oregano basil
pinch of dried basil
1½tbs. white wine vinegar
½tsp. agave syrup
(1) drain the beans in a colander, then transfer to a bowl. Peel and finely chop the shallot. Heat 3 tbs oil from the sun-dried tomatoes in a small saucepan and sauté the shallot until it is transparent. Add the tomato purée and continue to cook briefly.
(2) slice the sun-dried tomatoes into strips. Fold it into the beans with the parsely, mint and capers. Adjust the flavor to taste by adding salt, pepper,oregano, basil, vinegar and agave syrup. Let the salad infuse for 12 hours. If necessary, adjust the seasoning again.
Cook's Tip: Serves 1 person....Can be doubled to serve 2 people.

as part of my weekly routine, on a Sunday I make my lunches for the week ahead (or maybe 3 days as this one lasted). the rice in particular is never great after 2-3 days anyway.
I don’t have a real recipe for this but I pretty much cooked 2 chicken breasts and a handful of mushrooms then covered it in a sauce with equal parts soy sauce, mirin, gochujang and sesame oil. I did the rice in the rice cooker as it makes the best rice ever- when you try it once you can never go back. I would probably also put it with another vegetable like edamame or carrot but I was too lazy. also, the chicken could be easily substituted for either another meat like beef or pork or alternatively extra firm tofu would work similarly. enjoy :)
