I finally ate oxtail last night and WOW that is some good meat. It is true though, that the chefs will skimp on the meat in place of something else in the dish.
Why the hell is there 12 mushrooms in here

Subjectivity and Truth
In the Culinary Arts
In esoteric culinary philosophy, Kierkegaard's idea of Subjectivity and Truth can be interpreted as emphasizing the importance of individual subjectivity and personal relationship with ingredients and flavors as the pathway to culinary truth and meaning.
Just as Kierkegaard highlighted the significance of personal faith and subjective experience in understanding spiritual truth, in the realm of cuisine, embracing one's unique tastes, preferences, and approaches to food can lead to a deeper understanding of the culinary world.
By inviting a personal relationship with each ingredient, dish, and cooking process, one can uncover a more authentic and meaningful culinary experience that resonates with their individual truth and essence.

My fiance is Puerto Rican. When my son was almost one we took him to meet his grandparents who lived in PR at the time. Along with all the other family there. I learned that PR is VERY into seafood. Rightfully so since they are surrounded by water.
This picture is Mofongo! Mofongo is a popular dish in Puerto Rican cuisine. It consists of mashed fried plantains with garlic, salt, and olive oil. It is usually served with broth and some sort of seafood. It was not my cup of tea…
Sorullitos are also a big staple in Spanish restaurants in PR. I’d say they are equivalent to receiving bread and butter with your meals here in the US. Sorullitos are pretty much like fried cornbread. Occasionally stuffed with cheese but not often.
Now these bad boys!??! I ate them EVERYWHERE we went. 😁 Along with their bread., they have bakeries that make FRESH bread every day… TO DIE FOR

A book on food, that has a few pieces of history and a lot more about how certain foods through globalization, and better economic and weather conditions have made the plants and food thrive in countries that otherwise we had no idea were so resourceful. But the question remains – How much food changes in taste and Quality and how with hybridization, food has been growing across the World?  Some…
