My Chocolate and Coffee Cookie Recipe

Ingredients:

170g butter, melted

180g brown sugar

80g granulated sugar

1 egg

1 egg yolk

2 teaspoons of vanilla

160g plain flour

3 teaspoons of instant coffee

1 tablespoon of water

200g dark chocolate, roughly chopped

Method

Melt the butter and let it cool. Add the sugar and mix well

Next add the eggs and vanilla to three bowl and mix well

Now add the flour and bicarbonate soda to the bowl and mix together

In a separate bowl or mug add the instant coffee and water together. Mix until dissolved

Add the coffee mixture to the cookie dough and combine well

Roughly chop the dark chocolate and fold into the cookie dough

Place the bowl in the fridge for at least 30 minutes

Preheat the oven to 180C

Divide the cookie dough into balls and place on a lined baking tray, flatten each ball slightly

Bake for 11 minutes or until slightly golden
