how do you study for such long hours? 12-16 hours? i tend to tire out after 8 hours.
bc if i'm not top of the class then what's the point. duhh
#my sincere answer is i have a degree in biochemistry#i've trained myself over a long period of time to do 8 hour study days#my stamina is probably just not like the average person's#i also break them down into blocks. 2 or 3 or 4 hour blocks idk. depends on what i have to do for the day#i also genuinely love academia and it's not hard for me to turn my phone off and throw it in a river#just so i could be engrossed in books all day#i love science i love studying i romanticize it easily i love challenging myself etc#also 12 hour and 16 hours r kinda overkill if you're not cramming for a national exam and u only have 2 weeks#i usually don't feel the need to surpass 8 hours unless i'm doing intense study camps#at the end of the day studying is a sport just like anything else#id say if ur needing to do 12 hr study days on the reg tho maybe assess ur efficiency#someone can study 8 hours a day every day but only truly be studying for like 2 hours

ok just to like paint a picture so. today i woke up at 9 and went to my morning class (was a little bit late) then i got brunch and canceled therapy (was a whole Ordeal trust me..) for like an hour or over idk, then i went back home to work on this research paper & got some food from a local café, then i went to a meeting i had and then walked to my friends workplace and we walked back and then i kind of have just lazed around and im watching my friends show from 1-2. and then TMRW i have a thing early afternoon & a d+d session for like five hours until 10 pm basically and then im probably sleeping in bc of the whole 1-2 thing. And then tmrw i have basically nothing but i then have to call my family bc i havent in a while and i need to do all of my homework. so needless to say this has been a hell of a semester start
#nightmare.personal#There is a 2 week period in which i have an event every other day#so like when ppl talk about not really having freetime in college like#i spend a good amnt of time w my friends Like a lot of time but also. solo time ? very little#On mon & wed i have back to back 3 classes i wake up at like 8:30 w like tiny breaks in between so like#i have my big friend meal right after bc of the back to back ness (on wed i also get dinner later w other friend)#and then immediately after food i go to my friends dorm and we study for like whatever like basically the entire night bc it just-#-devolves eventually to socialization ?#And then tues thurs i have big gaps and later class starts BUT i also have been scheduling like office hrs#but those days r fine and a lot more solitary. and i get a super nice breakfast But like past that ?#idk. idk! i have so many fucking org things like i have shit on tues nights now 2 a month#and then my other thing and its like. Its all worth it but also fuck fuck fuck u know#so its been exhausting. fun but like. idk I need less shit on weekends i think#like i need to do work on sunday but also zero socialization

my day has been so fucked up

“Can somebody handle the emails from the Realm-Keeping Commission?” Mr. Yang asked as he rushed through the intern’s cubicle area. He had a cup of tea in one hand and a handful of folders in the other. “They’ve had a recent breach of contract issue so we should be getting an influx shortly.”
“I can handle it!” you immediately spoke up, sparing your cubicle-mate a brief glance. You had a smile on your face but your eyes were urging him not to butt in.
Dan Heng smiled back. “I’ll help her.”
“Great.” Mr. Yang nodded in appreciation. “We have such hard-working interns this year.“
Your eye twitched as you replied, “Right. Great.”
Once the intern director left, you turned to glare at Dan Heng. He was nonchalantly typing on his computer, no doubt responding to the Commission’s emails already. A job that you should’ve been doing alone. Alongside a million other things that naturally came with being an unpaid intern.
You wanted to prove yourself here. The Astral Express was well known in the industry and you wanted nothing more than a job offer after the internship. But how could you possibly secure that when Dan Heng constantly stole your shine? You had to keep pushing. Keep striving to do more and impress your bosses.
“Hey, Y/N,” said Dan Heng. “If you have too much on your plate, I can take care of the emails today.”
Heat rose to your cheeks as you frowned in indignation. “You think I can’t handle it?”
He titled his head to the side. The innocent look on his face made you more upset. You couldn’t tell if he was making fun of you or if he truly believed you were someone pitiful who needed constant help.
“Of course you can handle it,” he reassured. “I don’t doubt that. I just don’t want you to take on too much of the workload. I’ve noticed you push yourself quite a lot.”
You shook your head. “I’m not pushing myself too much. I can do it.”
Dan Heng’s gaze softened. “You know yourself best. But I just hope you don’t overwork yourself too hard. We’re only unpaid interns, remember.”
You puffed your cheeks indignantly. Of course he could say something like that and still be a top performer. “Thanks for the consideration, but don’t worry about me. Now, if you’ll excuse me… I better get back to work.”
He only nodded in response.
As you started scanning through the emails on your computer, responding to the ones you have already finished, you felt Dan Heng still looking at you. You turned your face away from his desk so you wouldn’t be directly in his field of vision, unsure why he was staring but not really wanting to find out. Besides, you had more important things to get to. How could you possibly get more work done than Dan Heng if you were too busy worrying about why he kept looking at you?
Perhaps his innocence was a facade and he was playing mind games to slow you down.
With a huff of determination, you worked extra fast, not wanting to let his plan succeed. He’d have to do better than that to win.

It was your lunch break the next day and for the first time since you started (except for those times Mr. Yang wanted to take the interns out for lunch), you were not eating at your desk to work through the lunch period.
Apparently, HR was visiting the office so you all had to follow all the policies, no matter how silly anyone found them.
Instead of your desk, you were eating at a shaded seating area outside of the office. If you weren’t going to work through your break, you might as well enjoy it and get a breath of fresh air while you were at it. With your high ambition and willingness to push yourself for this internship, you were aware it probably seemed like you were a workaholic of sorts. That wasn’t exactly true.
You saw the important of work-life balance and valued it, but you also figured an internship is where you were supposed to work extra hard. Then, once you secured the job, you would be free to relax.
You took a bite of your sandwich you packed as you stared off at the gently swaying trees in the distance.
“Hey.” You almost jumped at the sudden sound. “Can I join you?”
You slowly turned towards Dan Heng, blinking. First, he tormented you in the office as an intern who provided ample competition. Now, he wanted to torment you during your lunch too?
Despite your inner thoughts, you didn’t want to be rude. Deep down you knew he was also just an intern doing his best. You just had to do better.
“Sure,” you acknowledged. “Have a seat, nemesis.” The words escaped your mouth before you could stop yourself. “I mean… Dan Heng…”
His brows furrowed. “I find it hard to believe those two words could get confused so easily.”
You cleared your throat. “Not sure what you mean.” Before Dan Heng could respond, you changed the subject. “What did you bring for lunch?”
As he sat next to you, he showed you his opened tupperware. It contained the yummiest smelling food with very neat presentation. You figured it probably tasted even better than it smelled or looked.
“I packed a bento box for today.”
You looked down at your soggy sandwich. Was even lunch a competition to him? Did he have to be the best at everything? You vowed to look up the most intricate lunch recipe and show it off to him once you made it.
He looked at your sandwich wordlessly before taking a bite of tender meat.
Your face burned in shame.
Tomorrow, you told yourself. Tomorrow you’d show him.
˖⁺‧₊˚❀˚₊‧⁺˖
Today, your internship started around noon. It wasn’t a whole day of work and you knew fully well you didn’t need to pack lunch. Still, you stayed up all night perfecting this recipe and you had to show Dan Heng you were worthy competition as well. You even made enough servings to pack a meal for Dan Heng to try too.
Towards the middle of your shift, you walked over to his desk.
He paused his typing and looked up at you. “Can I help you?”
You held out a tupperware of your homemade food. “Look. I made this.”
Dan Heng’s eyes widened as he cautiously took the container from your hands. “For me?”
“Yeah. I saw your bento box yesterday and wanted to prove that I can also cook! Just like I can do all the work we’re assigned!”
Confusion was written all over his face but he still managed to smile. “First, thank you for making this for me.”
You looked at him, equally confused. Why did he sound so sincere? You simply wanted to prove a point. Not do something out of the kindness of your heart.
“Second,” he continued, “I do agree you can do all the work we’re given. Have I made you feel like I believe otherwise?”
“Not exactly… It’s just you keep offering to help me even when I say I’ll do it!” you explained passionately. “You keep trying to steal my work and do more than me!”
Dan Heng blinked, mouth opening then closing. He opened his mouth once more, trying again. “I wasn’t aware you viewed it as me stealing your work.” He rested his chin on his hand as he thought things through. “I didn’t want you overexerting yourself so I was only trying to help ease your workload… I’m sorry for undermining your hard work.”
“You’re not doing it on purpose?”
“No. I admire your determination and how you always step up to the task— I would never want to take away from that,” he said earnestly. His stare was unwavering as he looked into your eyes. “I more than admire it, actually. I find it quite attractive even.”
You gaped at him, unmoving. “Huh?”
“Attractive, endearing, cute… Do you need more synonyms?”
“Me?” You pointed at yourself.
Dan Heng nodded. “Well, I was referring to your work ethic. But yes. You as well.”
You bashfully stood up straighter. “You’re not too bad yourself, I suppose.”
That wasn’t a lie. You did find Dan Heng rather attractive. His hair was dark and messy, falling around his eyes in a way you could only describe as perfectly framing the vibrant blues. He had a pretty face and a serious demeanor that initially drew you to him— Until he started competing (as you saw it, at least) with you in your internship.
As you stared at each other in silence, Mr. Yang came in with a stack of papers. “Good afternoon, everyone. Can someone run an audit of the company’s stocks?”
You jumped up, startled. You didn’t except to be interrupted like that, but you quickly regained your composure, rushing over to him to grab the papers. A part of you was thankful for the distraction, but another part of you wanted to see where it would’ve lead. “I can do the audit!”
“Great, thank you!” he said in acknowledgment before rushing back out.
Once Mr. Yang left, Dan Heng turned to you and said, “Let me know if you need any help. I’m here if you need.”
You smiled. Now that you knew he wasn’t trying to best you, you were much more open to the idea of working together. “Sure, I’d love some help.” You paused and Dan Heng raised one brow. Though it came from the heart and the sentiment was there, you both knew it wasn’t completely true. You still did want to be the very best after all. “Well… You can help, but only a little though.”
Dan Heng laughed, accepting the small stack of papers you gave him, not even one fourth as tall as your pile. “I wouldn’t expect anything less from you.”
You hummed in agreement. Before focusing on your work, you thought of one small thing to ask him. “Hey, Dan Heng?”
“Yes?”
“Maybe next week you can bring me some lunch, too? Or, maybe we could go out for dinner even…”
“I’d love to,” Dan Heng smiled and it was the widest grin you’ve seen on his face thus far, “if you give me more of your paperwork.”
You gasped, feeling thoroughly tricked. So he did want to beat you—?
“That way, we can finish sooner and I can take you to dinner tonight.”
Your train of thoughts stopped in their tracks as a light chuckle escaped your lips. “Fine,” you agreed, finding yourself strangely looking forward to having dinner with him. “But just this once, okay?”
“Of course.”

🕒 8 a.m. - left for school sleep deprived asf but caffeinated & motivated to get through the terrible exam
chemistry exam: i will be in deep shit when results come out *sigh* obviously i'm not happy when my friends do bad but only one comfort is that we're in shit together (they're literally the only 2 ppl i talk to in school). i NEED to do well on all my other exams, like somehow make an extraordinary improvement to show that i'm good with the other subjects and will just prioritize studying chem in the future. also made a deal with my mom that if i get above 83% overall then i'll finally get my own tab and headphones. we've been meaning to buy it for some time now, and my mom agreed only because my first tests' marks was at 64% (cuz i didn't study..). not exactly an "academic weapon" just yet.. only yet hopefully..

14th november, thursday
children's day
so like.. let's just ignore how i have't been active for quite a bit. depression fucking sucks. in desperate need of a reality check cuz wdym my next periodic tests are a month away?? i was chilling in my dussehra holidays just last week (it's been a month). less depressing fanfiction, more textbooks :(
i'm going to be trying to get back into the flow from tmr!! for the past few days i've only been up-to-date with notes & submissions and that's it. i haven't done any more actual "studying". i just need to make more time for it & get through it. i like my subjects & i'm gonna continue reminding myself that i actually love what i'm learning, even when it's difficult.
soooooo, today was children's day! we didn't have to wear our uniforms and omg everyone looked so good!! like the way everyone styled their different clothes & accessories was all so pretty! we had a special assembly at school at first where our teachers danced too. we were supposed to have the first half of our regular classes but our teachers mostly let us pass our time. me & my friends were just talking & snacking the entire time (a few pics were also taken!). i usually don't get my phone to school cuz my dad directly drops & picks me up, but today i took my phone to school to take pictures! (technically my mom's, i don't actually have my own phone). then our two classes were combined (science+commerce) & our class teachers conducted a few simple games. mostly simple fun stuff involving cups & balloons. before leaving me & my friend managed to click a few more pics. then i got home & fell asleep for a few hours lol (gimme a break i got around 5 hrs of sleep. also i somehow woke up around 5:45 a.m.! i barely get myself to get out of bed at 7:30 on other days)
today was really fun tbh. like me & this one friend mostly just yapped but i'm feeling so grateful for her<3 met her on the third day of school this year & suddenly it's been more than 5 months & the only constant is that we're both always yapping in our classes. yk when u find someone u can joke around with & tease yet also have deep conversations about stuff like humanity, art, politics, religion, career, our futures, marriage, etc. we have a lot in common too (introverts, book lovers, weird relationship with parents, love writing). feels like she just gets me yk. it's really nice..

study: 3 to 4 hours ( depending on the number of subjects.
Hobbies: 3 hours ( life is beautiful doing things you love.

Acclaimed actor Jace Stardiamond was known to be perpetually single throughout his lengthy career. In reality he was screwing in five year long committed relationship with, yes, his very own agent, Porter Cliffbreaker. An absolute shark in the industry with a list of star-studded clientele.
Jace was a walking cliche, sue him.
It wasn’t his fault Porter opted for a blazer that barely fit his hulking arms the day they met. It ended in their completely professional conversation turning to Jace catching Porter’s lips in a chaste kiss on the front steps leading up to his mansion in the hills. He apologized and Porter continued on with his pitch like nothing happened, like a fierce blush wasn’t passing over his cheeks and ears. Jace signed the paperwork and Porter kept him at arms reach.
Until he took Jace out for a nice dinner to celebrate acing an audition. It wasn’t a special or memorable one. He wasn’t the lead. That night, Porter peered at him over his champagne flute (filled with ginger ale instead) before saying, “I’ll celebrate your wins, no matter the size. A win for you is a win for us.” Us.. he liked the thought of being an ‘Us.’
In the industry, there hadn’t been much opportunity for dating. Hookups were few and far between with trusted partners; none of them serious enough to commit to but they took care of each other’s needs. Porter took care of his career, but he wouldn’t mind if he took him apart instead. He sat across from the man fantasizing about how easily he could pick him up and pose him into whatever position he saw fit. The idea left him desperate.
When Porter summoned him for a meeting, he definitely wasn’t expecting the best agent he’s had in a decade to drop him. He was always the one trading up, not whatever the hell this was. They’ve only been working together for a year..
“Mr. Stardiamond, I have a conflict of interest and I can no longer be your agent. I apologize.” Jace didn’t make it a habit of screaming at people on his payroll. It was a level of disgusting he didn’t tolerate, but if what he was hearing was true.. Porter was quitting- or? Firing him? He wasn’t exactly sure which suited the situation better, but he knew he wanted to scream.
“What the hell? Don’t Mr. Fucking Stardiamond me. What conflict of interest?”
“I’m attracted to you. I could get fired.” Jace’s mouth goes dry and his heart kicks off into overdrive. Porter.. liked him back?
“We can’t just talk to HR or something?” Porter looks up from his computer screen, realization dawning on him as Jace’s bright, determined eyes peer back at him. “We’d only do that if- oh?”
“Yeah, you fucking idiot. Be my boyfriend, be my agent, be both. Who fucking cares. We don’t have to go public. I don’t like- dating and publicity gets messy.”
“You’re not seeing anyone, I take it?”
“Christ, Porter. No, I jerk off thinking of you in plane bathrooms like a loser. I’ve had more wet dreams about you than I can count. I- can I kiss you again? A real kiss.”
“After I fill out the paperwork for HR.” Jace rolls his eyes, resting his chin on his hand, smiling at Porter across his desk. The walls were glass, he couldn’t do anything now, he knew that. Every inch of him burned to close the distance. To push everything off Porter’s desk and let him drill into him while the corporate jag offs milling about watched.
“Let me take you out tonight.”

Porter hadn’t considered that he’d be on a flight later when Jace offered to take him out. But here he was, on a private plane headed across the world for a dinner date. LA had all the food they could ever want, but Jace insisted this Parisian restaurant was the best of the best. He was right and Porter was almost impressed. Almost.
“You don’t have to throw money around, I already like you.” Jace hums, taking a deep sip of the top shelf wine he requested for the both of them. Porter was familiar with it. “Can you just enjoy the nice date thing I’m trying to do with you?”
“I am. But I have to meet with a client at six am and I’d like to go to gym at five without being jet lagged,” he smirks.
He knew provoking Jace like this would only push him to brat territory. He liked when Jace got bratty with him. He’d only seen it in a professional sense- as professional as Jace could manage (not much.) It was like he was allergic to playing the part outside of watchful eyes.
From what he heard, Jace was on his best behavior once he waltzed into a place where he was know, where anyone could be watching. But Porter loved how candid he could be when they were alone. Clients were entitled to their masks, he wore his own to get by, but Jace? He took his off the minute Porter closed his office door. The entire floor could see them, his body language remained tactful, but his words? Blunt, opinionated, and clever.
He was so charming, Porter imagine you had to have that quality to be an actor. Actor charm never quite broke down his walls until Jace. Something about those golden eyes and that bright smile. He was also attractive. Even in the dim restaurant lighting he looked breathtaking.
This was a good first date, but Christ he needed more. He needed to know what Jace sounded like when his fingers explored his body.
“Porter?”
“Yeah- sorry. Wine’s getting to my head a bit.”
“You took one sip,” Jace raises an eyebrow. “I don’t usually drink.” Jace eyed him curiously.
“Do you wanna head to the tarmac? We could fuck on the flight home.”
“You fuck on the first date?”
“I don’t date, remember.”
“Still dunno if I believe you or not.” Jace shrugs at that. “Is it that hard to believe? I’ve been on camera since I was a month old. There isn’t enough time or privacy in the world.”
“And you think this’ll work out?”
“I do. I’m confident.”
Five years later and Jace was still confident, but more importantly, he was right.

We def need some hope so hold onto it as long as you can cause we won’t know for sure what’s gonna happen for another 3 months and if this hail mary pass will actually work. (I used a sports metaphor!!! Yaay) I think right now it’s the shiny new object aspect of the story that’s making the rounds so whoever is the candidate (likely Kamala) will get a good bump out of it. The prob is the tiktok crowd are hardly the barometer of the real people who will be voting. Polls and polling has become pretty broken over the last decade so its gonna be hard to really know what people are thinking about it, and yes 3 months is a short period of time, but its also a lifetime in politics. It’s seeming this news of Joe stepping down over the last (less than) 24 hrs seems to be a net positive, and its breaking thru to people who aren’t usually paying attention, so maybe in the minds of that group of low information swing voters, that will be deciding the election across only a handful of states, maybe that impression will last over the next coming months and they will vote for whoever is the democratic candidate is? Maybe? It’s just such an open question at this point. I also woke up fairly more (probably also naively) optimistic than yesterday. So you’re right to be hopeful, cause letting this shit stress you out isn’t gonna help you or anyone else, cause it’s entirely out of our hands.

I’m such a fan of an old fashioned recipe for French Onion Soup that this was only a small leap of faith and it turned out to be a good one. French Onion Short Ribs are heavenly! It’s been awhile; I don’t think in all the many years I’ve been blogging that I have not introduced something totally new in such a long period of time; a few revisited recipes from years ago are good to have but not the same. Whether planned or not, I needed a break from the stress of this past year and a good old-fashioned cold made me take it! French Onion Short Ribs was my first foray back and a welcome one at that. There is a reason that some foods share the notion of being ‘comfort food’ and these amazing French Onion Short Ribs deserve that moniker. Rich with flavor and warmed in the oven, this dish has sustained me for the past week and yet I was still sorry when I finished that last bowl. Want to save this recipe? It was a picker upper for sure and I wanted to do justice to the quality of this meat when I made something; how fortuitous that the recipe for this soup pretty much landed in my lap. A friend on Facebook had just uploaded this photo of her dish after she had completed it and I could almost taste it. Hers was fit for a crowd and I loved both how she presented it and some of the minor revisions she had made to the original recipe; adding caramelized onion slices and topping the short ribs with cheese really did give it a French Onion Soup feel. I took it a bit further even. I included diced tomatoes and sliced carrots…and that was a good call, sort of a French onion beef stew with short ribs. My time honored recipe calls for the soup to be refrigerated overnight and I’ve always trusted it. Not only do the flavors meld during that time, but it’s so easy to scoop off the fat that has hardened on the top. It means planning a day in advance but I think totally worth it. Because her recipe was made in a crockpot, I’ve included that method in the recipe notes. My version is made a bit different than regular French Onion Soup, finding it easier to serve some cheesy bread on the side, making it easier to cut through the short ribs that are topped with melted cheese. I imagine a fireplace roaring with a bowl of soup on the hearth in front of it. Make it now; so soul satisfying, and I think a perfect antidote for the cold of winter; and my cold too! Ho o - Long title, I know. But this stuff is important! I love to write whump scenes with long captivity, but I've noticing when reading these things are often overlooked.
Though commonly forgotten, lets go ahead and get into the need to know! Make your pieces both heart-wrenching and scientifically accurate!
𝙼𝚊𝚕𝚗𝚘𝚞𝚛𝚒𝚜𝚑𝚖𝚎𝚗𝚝
The max time recorded before death was 2.3 months, but the average is 21 days.
After about 6 hr, most people start to get agitated/grouchy due to lower glucose and hunger.
24-48 hr into a 'fasting period', hunger is a lot more apparent. There can be pains in the stomach, and the body has entered Ketosis (and will begin to start breaking down fatty acid for energy).
72+ hr is around the time when muscles start to be broken down for energy.
Emotional/physiological characteristics: irritable, increasingly depressed, declined concentration, apathetic, hysteric, impaired comprehension and judgement, higher likelihood of self harm, and social isolation and withdrawal.
This can present a little differently in those with eating disorders-- note: please do not use this information to subject yourself for long periods of time.
𝚂𝚕𝚎𝚎𝚙 𝙳𝚎𝚙𝚛𝚒𝚟𝚊𝚝𝚒𝚘𝚗
Just how long it would take to die isn't really known, but humans can stay awake for 11 days (246 hr), but the max time gone without sleep was 6 months.
Note: please do not try and stay awake for 6 months-- You can survive that long with Chronic sleep deprivation (going days without sleep, then having 1-2 hr rest).
At the 24 hr mark, just about everything is worse. This includes emotional control, memory, decision-making, attention, and hand-eye coordination. At this point the mental ability is similar to that of someone with a 0.10% BAC.
At the 36 hr mark, hormonal spikes are absolutely insane. You lose track of time, there is a major lack of motivation to do anything, and there is a feeling similar to the head-buzzing from dehydration.
46 hr in, jesus christ why are you still awake-- Your body says fuck you and you get small doses of 'microsleep', regardless of what you're doing. Microsleep is known as falling asleep for 1-30 sec, then waking up super disorientated.
72+ hr... please just go to bed or take melatonin or something. Your higher mental processes, like decision making and planning, have been yeeted. Simple conversations are now extremely difficult.
80 hr -- Hallucinations! Say hello to the demons on your ceiling!

Finally, we're on to dehydration. Absolute fun times!
Death takes about 3 days, but if you're lucky, maybe you can suffer 8-10 days! The body needs water more than food (because the body is mostly water).
There is math involved (sadly, I know). TWV = (total water volume); the average adult loses around 2.5 L of water a day. That's quite a bit!
These next points are assuming your character does not drink anything, absorb any moisture, or eat. Note: Once again-- please don't do this. This is for writing-- yes it's real but please take care of yourself).
After 9 hr, you're at about 2% TWV lost. It's common to experience loss of appetite, dry skin, discomfort, thirst, elevated body temp, fatigue, dizziness, 50% loss of performance (athletes), decreased fluid secretion (sweat, tears, urine, etc), and dizziness when standing.
A the 24 hr mark, you've lost around 6% of TWV. At this point, i's common to feel nauseous, sleepy, severe headaches, and a tingling in the limbs.
36 - 72 hrs in, you've lost anywhere from 6-15% TWV. This is the period of time you severely need to get something to drink. There is a lack of urination, severe headaches, dimming of vision, shriveled skin, muscle spasms and seizures, fainting, and delirium.
72+ hr, the TWV is at least 15% gone. This leads to organ failure.
All of these things have some physical and emotional reactions your characters can give. I stress to you that this is all scientific information that you can use in your writing-- please do not use it on yourself.

The most gorgeous short ribs, sausage, pork chops and bacon all nicely refrigerated and boxed just for me. I know I’ll be making some of my favorite Maple Bourbon Bacon too. It was a picker upper for sure and I wanted to do justice to the quality of this meat when I made something; how fortuitous that the recipe for this soup pretty much landed in my lap. A friend on Facebook had just uploaded this photo of her dish after she had completed it and I could almost taste it. Hers was fit for a crowd and I loved both how she presented it and some of the minor revisions she had made to the original recipe; adding caramelized onion slices and topping the short ribs with cheese really did give it a French Onion Soup feel. I took it a bit further even. I included diced tomatoes and sliced carrots…and that was a good call, sort of a French onion beef stew with short ribs. My time honored recipe calls for the soup to be refrigerated overnight and I’ve always trusted it. Not only do the flavors meld during that time, but it’s so easy to scoop off the fat that has hardened on the top. It means planning a day in advance but I think totally worth it. Because her recipe was made in a crockpot, I’ve included that method in the recipe notes. My version is made a bit different than regular French Onion Soup, finding it easier to serve some cheesy bread on the side, making it easier to cut through the short ribs that are topped with melted cheese. I imagine a fireplace roaring with a bowl of soup on the hearth in front of it. Make it now; so soul satisfying, and I think a perfect antidote for the cold of winter; and my cold too! Season short ribs with salt and pepper and dredge in flour.Heat olive oil in a large Dutch oven over medium high heat. Cook short ribs in the oil until golden brown and crusty; about four minutes per side. Remove from oil and put on plate. Set aside.Reduce heat to medium and cook onions and carrots in leftover fat from ribs. Cook for five minutes. Add garlic and saute for one minute then add red wine, tomatoes, broth, herbs and short ribs. Cover with lid and place in oven. Prepare the Caramelized OnionsWhile meat is in the oven, melt the butter and slice and saute the 4 onions until caramelized; doing it slowly for about 20-30 minutes. Remove pot of meat from the oven and stir in caramelized onions, return pot to oven and continue cooking for remainder of time until meat falls off the bones.Remove meat and place on a dish to cool; once cooled remove and cut the meat into serving sizes.Refrigerate the pot (overnight is great if possible) until the fat has hardened on top and the flavors have had time to meld. Using a large spoon, remove the solid fat on top and discard.To ServeWarm the pot with meat and vegetables over medium low heat.Top toasted French bread with butter, a sprinkling of Gruyere cheese and thyme. Toast until cheese melts; set aside..Portion soup into oven safe bowls. Top the beef with shredded cheese and broil for approximately 3-5 minutes until cheese is brown and bubbly. Watch closely! Serve with slices of toasted French bread. In a large Dutch Oven over high heat, melt together the butter and onions. Cook 5 minutes, until softened. Add the wine, season with pepper, and continue cooking another 5-8 minutes, until the wine has evaporated and the onions are lightly golden. Add the remaining herbs. Transfer everything to the bowl of the crockpot along with the short ribs. Add the broth and bay leaf. Cover and cook on low for 7-8 hours or on high for 5-6 hours. Remove the bay leaves. Discard any bones and extra fatty pieces. Cut the meat into servings. Put everything into a large casserole dish. Refrigerate overnight if possible, remove fat that has solidified. Warm soup on stovetop while toasting bread with cheese on top in the oven; garnish with thyme. Put soup and meat into bowls, top with shredded cheese and broil until bubbly. Remove from oven and serve with French bread. Turn the oven on broil; top the meat with cheese and broil until bubbly, 2 to 3 minutes. Ladle the soup into bowls.
