Bacon Jam App (shared), Wedge, Butcher’s Block (shared). SMOKE. Tulsa, Oklahoma. 4.22.2024.
NOTE TO SELF: The bacon jam with goat cheese and pork rinds was solid. Wedge was solid. Pork chop and brussels were solid. Steak, sausage, potato croquette, and salmon were bland. This was a better-than-average meal, but for what it is (and at this price point), there are probably better options. Just the same, I wouldn't go out of my way to avoid this place.

How does one actually build a useful repository of recipes for different cuisines? Like, I have the Silver Spoon which is a pretty good cross section of Italian cooking. I know more than enough variations of the typical french mother sauces to get the principles without a need for a recipe. I know from various Euro cuisines particular flavors that pair well I could build a dish around (like, I could make a goat cheese and caramelized onion soup without the need of someone telling me a recipe). I don't have any such data sets for other cuisines, and you know the recipe website world is a hell scape.
Tried and true method is: Cook often, try new things, and save it if you like it.
Get a blank notebook (or a 3-ring binder) and collect recipes yourself as you try them. You can write recipes in by hand, or print them off & punch for the 3-ring binder.
Go to restaurants which serve food you want to explore, and take a picture of the food, record the name of it on the menu, and note some of the ingredients that you can identify in it.
If you live in a small town with not many places that serve 'foreign' food nearby, get off google. Use DuckDuckGo or Brave as a search engine. They have very few ads and the search algorithm prefers when you get to the point in your recipe blog, rather than dicking around with your life story.
Do a little tour on your world map. Focus on countries, search for food from that country, then search for specific kinds of food from that country. Search for things like "Authentic Turkish Stewed Chicken" "Traditional Brazillian Goat Recipe" "Hong Kong Street Food Recipe" "Collection of Taiwan Recipes" "25 amazing Korean dishes" "10 best Cajun Soul Food Recipes" "Dominican Republic Cuisine Recipes"
Go watch cooking tiktoks that aren't european-centric; go out of your way to find them.
Go down a list of spices and pick one you've never tried before. Look up where it's traditionally used, and try to find some dishes that use that spice!
Go to your Local Library and dig into their cookbook section. Every library has one! Look for cookbooks focused on cuisines you don't know yet, and try those recipes!
If you're cool spending money on this, go to Half Price Books or other book-reselling stores where you can find cook books at really low prices. Again, explore the cuisines you're not familiar with.
If you have grocery stores for other cultures near you, go into their grocery! Check out what spices have a shitload of different brands on display, and pick one at random. Seek out a recipe that uses that new spice you just bought.
And remember: Write that shit down!
You can always have a little guide at the front or back of your recipe collection that explains different spice blends, or explains key sauces, or anything else!
You can keep a little guide on how roasting spices changes them, and your experiments with that.
You can keep a list of bread recipes, or cooking hacks like how to make really good naan without a woodfire grill.

Personally, I'm forgetful. I forget sites exist, forget logins, and lose passwords all the time. I have about a hundred recipe collections across about as many websites, and I know where like, 3 of them are right now. Many of those websites have gone down, and my lists are lost forever.
The book of recipe & food-tips collection I've kept & used the longest - my Food Grimoire - is a physical item that I can misplace in my house but never truly lose. It can't have its server crash or website maintenance suddenly be abandoned and blip out of existence.

Hear me out: A large kitchen with a mirrored outdoor kitchen/grill area. Outdoor kitchen is a three season room or semi sheltered. Stove/oven on the indoor side, grill/stove on the outdoor side, sinks, idk maybe a woodfire oven outdoors. A smoker/smokehouse too, obviously.
Mirroring allows easy gas and water hookups so outdoor sink with hot water and no more worrying if there's enough propane in the tank. Cook messy/smelly foods outside, hot weather cooking is easier.
An attached greenhouse adjacent to the kitchen. Fresh herbs and a nice place to eat meals at minimum. Could integrate a greywater system for kitchen wastewater in the greenhouse.
A proper pantry room with a dumbwaiter into a root cellar [and stairs to access root cellar].

nice ask week ask! how was your holiday?! (aside from the rona). any particular highlights? stand out food??
Update: IT’S NOT THE RONA! Three tests said so. Just a good old garden variety flu. My random covid immunity (shared with my sister, who works in a hospital) remains intact.
This jaunt down to Mexico was actually a work trip, not a vacation — we take our qualifying agent base on an all-expense incentive trip to various destinations every year, and it’s my job to plan it. The Yucatán is my second favorite area to visit in Mexico, after the Baja (peninsulas for the win!), and this particular resort (the Iberostar Grand Paraíso) was fantastic — the food, the property, the amenities, all of it. Best resort spa I’ve ever seen, hands down. But we took one agency group off property for dinner at Woodend, Curtis Stone’s new woodfire grill, and it was insane. Literally the best meal I’ve ever eaten in my life. The bread alone was life changing. We also sent a massive group to the local Cirque du Soleil show/dinner/VIP experience, and from the raves, I have a feeling we’ll have a hard time topping this one.
Now to plan next year’s trip. Costa Rica, here we come.

Woodfire Pumpkin and Lentil Soup
Even when the sun shines and the skies are cloudless, a Spring day is not necessarily warm! But after all the rain we’ve had, spending time in the garden, both pottering and relaxing, is rather essential to me! Thus, I warmed up by lighting up the barbie and turning leftovers into this gorgeously smoky Woodfire Pumpkin and Lentil Soup! A hearty and comforting lunch after fixing fencing panels or tilling the Veg Patch! Happy Thursday!
Ingredients (serves 1):
a small red onion
1 cup leftover Pumpkin Soup
1/3 cup split red lentils
1/3 cup Turkey Tail Stock
2/3 cups water
salt and freshly cracked black pepper, to taste
a dollop of crème fraîche or sour cream, to serve (optional)
roquette lettuce, to serve (optional)
Arrange a small layer of coals in the barbecue. Top with a few branches of wood (apple-wood gives good taste), and light.
Peel and finely chop red onion.
In a large, fire-proof pot or saucepan, combine Pumpkin Soup, red lentils and chopped red onion.
Stir in Turkey Tail Stock and water.
Once the flames are low and embers glowing red, carefully sit pot or saucepan, with a lid on, onto the grill over the flames, and bring to the boil. Once boiling, cook, for about 7 to 10 minutes, until lentils are cooked and soup has thickened. Season, to taste with salt and black pepper.
Carefully remove the pot from the fire, and serve Woodfire Pumpkin and Lentil Soup hot, with a generous dollop of crème fraîche and roquette, if desired. You can also toast a thick slice Soda Bread over the embers; it goes beautifully with the soup!

Taylor Swift and Travis Kelce didn't join, but we were able to thank them last night for helping make the rally a success. They did arrive early and stick around after services for meet and greet opportunities with the large congregation in West Wichita.

Deb Haaland and Kamala Harris did some meetings with various faculty members, and some off-campus door knocking. While, Justin Jones, Al Gore and Andy Beshear met with various student groups on campus.
