Chocolate Mousse
Ingredients:
4 oz. dark chocolate, chopped
2 tbsp. unsalted butter
1/4 cup granulated sugar
2 large eggs, separated
1/2 cup heavy cream
1 tsp. vanilla extract
Instructions:
In a heatproof bowl set over a pot of simmering water, melt together the chocolate and butter, stirring until smooth. Remove from heat.
In a separate bowl, beat the egg yolks with sugar until light and creamy, about 2-3 minutes.
Stir the egg yolk mixture into the melted chocolate until well combined.
In a clean, dry bowl, beat the egg whites until stiff peaks form.
In another bowl, whip the heavy cream with vanilla extract until soft peaks form.
Gently fold the whipped cream into the chocolate mixture, then fold in the beaten egg whites.
Spoon the mousse into individual serving glasses or one large serving dish.
Chill in the refrigerator for at least 2 hours or until firm. Serve chilled with whipped cream or fresh berries, if desired.
