I am not the best baker, but these super simple vegan vanilla cookies were loads of fun to decorate. After 4 flights and a busy week at work I needed a green boost! My spinach, fresh ginger, mint and banana smoothie bowl is topped with bee pollen, apple, blueberries and an almond butter drizzle. This wasn't enough so I added a spoonful of @pukkaherbs Clean Greens to max out the plant power.
