It was almost midnight, and Carmy was nowhere to be seen. You were annoyed; was he ghosting you? âRusty, come play pool with us.â Sara waved at you. She was standing by the pool table with a pair of men. Both were tall, with dark hair, pretty brown eyes, and pearly white smiles. The one on the left looked at you like a piece of meat, while the one on the right stood directly behind Sara. You shook your head.
âIâm still holding out hope.â you laughed, trying to mask your disappointment, as you took another sip from your overpriced cocktail. Sara rolled her eyes; sheâd made up her mind about Carmy. He wasnât showing up tonight, and you shouldnât invest more effort in pursuing a romantic relationship with him. You stared at your phone and watched the minutes tick by. At 11:59 PM, you finally gave up. After a weak wave to Sara, you started walking toward the bar's exit, feeling a mix of embarrassment and regret. Maybe you were too forward with Carmy. You felt stupid that youâd even tried asking out Marcusâs boss.Â
You stood outside waiting for an Uber when you heard someone yell your name. Looking over your shoulder hesitantly, Carmy was heading in your direction. He may have been an hour late, but you still felt the air leave your lungs as he jogged in your direction. You wanted to say something witty, but nothing came to mind. âYouâre not leavinâ, are ya?â Carmy softly asked as he reached your side.Â
You shrugged and avoided eye contact as you explained being tired. The words floated through Carmyâs mind. He noticed your shift in behavior immediately. He fucked up, and he knew it. âCan I take you home? I got held up at the restaurant-â he started to ask as a black Honda Civic pulled up to where youâd been waiting.Â
âMy ubers here⊠night, Carmy.â you felt defeated and stupid as you playfully nudged him. âIâll come by the restaurant next week to get some more content for Instagram.âÂ

âI feel like such a dumbass.â you laughed as you took videos of Syd dicing an onion. Making videos of her making some of the new menu items felt like a good way to create buzz for The Bear- at least until you remembered the events of the weekend and that Carmy was currently hiding from you in the office âdoing paperwork.â
âYouâre not. Carmy just isnât the one you know.â Syd explained as she scooped the onions into a bowl with garlic and jalapenos. âI havenât known him that long, but-â Syd cut herself off and adjusted her shoulders. You looked over your shoulder to see Carmy had emerged from the office to help Marcus and Sweeps unload a produce delivery. You rolled your eyes and turned your attention back to Syd.
And thatâs how it went for weeks.Â
Youâd come into The Bear to take pictures and video, then sit in the dining area for a couple of hours to edit the videos into TikToks and Instagram Reels. Carmy would casually watch you from the kitchen and imagine ways he could make it up to you.
You were sick of it. After swallowing your pride, youâd decided to call Carmy. It was a little after midnight, and you didnât expect him to answer, but he did immediately. âHey Rusty, everything okay?â he answered. You bit your lip before responding, âUh, I feel like things have been awkward between us. I guess I just wanted to say sorry?âÂ
âFor what? I should probably be the one apologizing.â Carmy laughed as he brought his cigarette to his lips. He smiled when he heard you giggle in response, âHow bout weâre both sorry, and we hang out outside of The Bear⊠like a date.â
âYou want to go on a date with me?â you asked, laughing at Carmyâs surprise. âI do,â you answered, hoping you didnât make a complete fool of yourself. âHow about we get dinner tomorrow- since The Bear is closed on Mondays?â you gnawed on the inside of your cheek, waiting for Carmyâs answer. âUh- yeah, that sounds good. Pick you at 7.â

An (Uncomprehensive) list of sandwich related crimes I've been forcibly made an accomplice to
- A chicken classic footlong with tuna
- A double meat meatball sub with double chicken classic
- Every type of cheese on one sub
- Steak and seafood
- Literally any sub with seafood
- Subdogs
- A sub being microwaved instead of toasted (disturbingly common)
- An uber order for just a bread roll. No meat, no cheese, no salad - just an uncut white roll. They paid 20 AUD (not including delivery) for something you could get for like 3 bucks at Woolies
- That one time someone asked me to toast their sub three times
- Anyone who pays for beetroot or avocado (I usually "forget" to charge them if no ones looking but sometimes I forget to do that (or they're an asshole))
- That one time there was red shit all over the floor and we genuinely couldn't tell if it was blood or raspberry
- Every time I've mixed lift and Fanta together because it tastes good
- I think I sneezed near someone's sub once. They didn't say anything.
- One time someone bought our entire stock of turkey to feed his dog. There's nothing wrong with that it was just an incredibly bizarre thing to experience at 10 am. Also I didn't know how much to charge him for so I just kept hitting the "Turkey 6 inch add-on" button until it looked right. (Also turkey is the most annoying meat to prep)
- I dropped an untoasted garlic and cheese toastie once. There was mozzarella everywhere
- I also dropped someone's toasted chicken strip's sub in the salad bar once
- The uncomfortable amount of times i/my coworkers have dropped something in the tuna or seafood, and just dug it out and put it back
- There are absolutely no cross contamination procedures here please for the love of God don't even come in if you're allergic to a single ingredient. Everything's touched everything
- sometimes I just stand in the fridge when it's hot and/or I don't want to do my job
- I cut myself breaking down boxes today. I don't know how
- We're meant to count out the amount of pickles we put on subs (6 for a 6 inch, 12 for a footlong). I've literally never done that. I don't know how to count
- My first time working the till someones card never went through and I just didn't say anything until they left. Then I just told my coworkers that the card payment prompt never went away even though they paid. They believed me
- I eat the choc chips left on the trays after the cookies have been flipped sometimes
- Someone broke in once, and all they did was break the toilet lock and leave
- I've eaten melted cookie dough that we couldn't use multiple times
- I've seriously considered eating the raw capsicum multiple times. The only thing stopping me is the cameras
- 90% of the time at work I'm just thinking about homestuck (horrifying)
- I was put in charge of the store music *once* and everyone complained about it. (So did I to be fair - I was playing the first non-explicit playlist I could find)
- Near the end of my shift this woman came in who was *obnoxiously* cheerful. Like she sung and posed when she walked in, she kept yelling at her friends and tapping on the glass excitedly (and dropped the glass screen on my arm). I had to serve her on tje till, and after she told me that she and her friends had had a wild night and were still pretty buzzed, I looked her in the eyes and said "haha I wish that was me right now" in the deadest tone possible

The latter definitely lmao. They would still have markets and such of course, but you'd be expected to go stock things yourself.
On the bright side, most of the larger settlements are inside mountains and can still only be so large, and they don't have roads taking up space, so... It's pretty walkable. Kariio in general is like half of Earth's size; delivery services just wouldn't really be necessary unless it's getting transported to a different settlement entirely.

Ghost In The Kitchen
It was a trend that was born before COVID, but it took a pandemic to send it into orbit. After all, restaurants were off-limits for in-store dining in many cities and states, and delivery was the only option. It gave restaurants time to experiment with other menu items and even completely different restaurant concepts.
All without doing a thing, other than listing them on delivery apps. Iâm talking about the virtual brands that many large chains own, but you donât know about. You probably wonât find them in the phone book (although they may have a website), and you certainly wonât see any signs on poles or buildings. They exist only in the digital realm.
Certain types of foodsâpizza, burgers, and wingsâwork well in the virtual world, because they travel well. Thus, they are the most common items you will find available on delivery apps. If you have a craving for meat loaf and mashed potatoes, you might just be out of luck.
Hereâs how it works. Virtual brands rely on ghost kitchens, which really arenât ghostly at all, but are located inside the same space as the kitchen in a brick-and-mortar restaurant. Think of it as double- or triple-dipping if you will, but it gives a lot of freedom to chains not only to test new items, but also reach out to different target markets.
Case in point: Would you ever go to Chuck E. Cheese for dinner without little kids? Of course not. Thatâs almost like punishment for being parents. But their ghost kitchen also does business as Pasquallyâs Pizza and Wings. That sounds a lot more appealing, doesnât it?
Denny's is the latest to double down on virtual brands. While they already have The Burger Den and The Meltdown, they are adding Banda Burrito and Franklin Junction. Who wants to go to Dennyâs? Anybody? OK, letâs order out from Banda and watch clips of the Rangers putting it to the D-backs last night. Burritos can travel well, too.
See what I mean? At a time when some restaurants are struggling, and especially during certain dayparts, virtual brands open up a lot of new opportunities. Factor in rising labor costs, like in California, and this begins to make a lot of sense.
In some regards this is not much different from major consumer packaged goods manufacturers selling off unutilized capacity to make private label goods for others. In this case, though, the private label is their own, and they are making good use of their kitchen facilities.
I know what youâre thinking. Is it possible that the food available in a virtual brand might be the same thing served in the OG chain? You bet. It could very well be the same burgers, wings, and pizza. But it may also be variants or completely new twists on products, yet are still compatible with the workflow of the kitchen. And, if one of those works well in the virtual world, it could easily be added to the other menu.
None of this would be possible were it not for mobile apps and third-party delivery. While it may hypothetically have been possible for a pizza joint to create a virtual brand and do their own delivery, I can only imagine the hassle of having to change the magnetic signs atop the delivery vehicles, depending on what you were delivering.Partnering with DoorDash and Uber Eats maintains the anonymity.
Which brings up another issue. Is it disingenuous for a chain to masquerade as another brand? Chains are not being fully transparent about this, but then again, these virtual brands may also be the worst-kept secrets in town. They donât seem to mind talking about it, and havenât tried to stop news articles from explaining the practice.
An online review for Pasquallyâs made me laugh out loud: âUpon further research, I apparently ordered pizza from Chuck E Cheese.â Ha ha ha!
Iâm good with all this, though. Itâs a win-win for everyone, and, if you really like what you got from Pasquallyâs Pizza and Wings, it demonstrates the perceptual power of a brand. Chuck E. Cheese may have been repulsive, but a rose by any other name isâŠwell, Pasqually, I suppose, in this case. And suddenly itâs OK. Then again, maybe not.
Suddenly a burrito sounds pretty good. Make that a breakfast burrito, but by my own hand. Sorry, Dennyâs. I canât wait. Iâm hungry now.

slow sunday
it's a slow and mostly solo weekend for me, and i'm savoring it because traveling/plans will be hectic in the weeks to come. matt is on the ED surge and it's been really rough for him to deal with delivering bad news to families as the cases are much more acute and patients aren't in the best state. it looks to be another 90-100 hour work week.
yesterday, after i got home from a massage/facial hangout with T, i facetimed my mom who told me there were 5 police cars in front of our neighbors house and the police had some questions for my mom too. she lived alone and wasn't answering her phone, so her nurse called the police to check in. once that happens, you already know it's not good news. she was our (mostly grumpy) neighbor for the last 30+ years. i haven't talked to her much at all besides the occasional hello. however, last month when i was home, the internet was down for our whole block. she yelled across the street "DAAAVID!!" until she got my dad's attention. my dad offered me to help her with some technical issues (setting up a prepaid phone she purchased from QVC).
i almost didn't want to go but i'm glad i got to help and had one last memory of her. her health was already quite declined. she was pretty emotional and had referenced multiple times that she grew up in NYC and wants to be buried there. i helped set up her phone so that she can call her sister, and my dad let her use his phone to facetime/see her sister (since she didn't have any apple products). i brought her fire tablet back home to charge but unfortunately no one knew her passcode so i couldn't get in. she was really grateful for our help and provided us green mangos from her backyard as a thank you.
the news of her passing made me quite sad, even though i'm not close to her and was not in the vicinity when it happened. when matt came home yesterday, he told me about his day and his patients who are suffering from stage 4 cancer etc, how the dying patient was more concerned about how much his medical cost will burden his family, and i told him about my neighbor. my neighbor's passing gave me some perspective of what he deals with. it really sucks that healthcare professionals have to witness so much, and they don't even have the time to decompress. see something traumatic? get up and go to work the next day.
other news:
i had invited TL to join matt and i to watch a comedy show this past friday, but due to this week being so demanding, i asked L to take his place. it was nice to see her again!
T & I had a massage and facial in chinatown. it was the most no frills place i've been to and had multiple signs about no hanky panky and no sex
my brother finally will start his new job tomorrow. he got a job in data science working with the county and will have a hybrid schedule. he's gone 8 months being unemployed. when i asked him if he's excited, he responded with "meh"
matt will fly out to his redlands interview on tuesday and will fly back friday. it'll be my first time fully being alone for 3 days! at first, i found this to be daunting but i'm looking forward to it now. i scheduled a virtual zoom with M&J and ordered pho for myself that i won't have to share!
been checking out lots of books from the brooklyn library - finally utilizing this
my interest in eating out in nyc has decreased to like 10%. we've done a pretty good job recently at eating out way less often than we used to. we'd only do delivery/takeout when we have 50% off uber eat coupons

i donât want to work i just want to blog about dumb shit all the time and do nothing as much as possible. also i miss smoking and just realized thatâs why i got so fat recently. cigs and especially weed made me never want to eat it always had the effect of not being in the mood for food and now my only stress relief is hit films on tubi and uber eats. also being able to afford delivery constantly is so stupid but not as stupid as the fact that groceries cost about the same plus the labor of cooking and dishes. i love takeout and being able to press a button to make things appear and i will be very lost when the apocalypse kicks into high gear just how they want me. my sleep schedule is off and i need to finish my new werbsert and yerterb cherner. sick of the goddamn wealth gap. sick of not eating meat. sick of not smoking cigs. sick of paying for streaming apps. disgusting.
