The blackened tilapia tacos with corn elotes are a great mix of tastes and textures. When you eat the blackened tilapia with the creamy and tangy elote sauce, it tastes great together. For taco lovers, this is the perfect mix!
Ingredients: 4 tilapia fillets. 2 tablespoons blackened seasoning. 8 small corn tortillas. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup chopped cilantro. 1 cup cotija cheese. 1 lime, cut into wedges. For the Corn Elotes:. 4 ears of corn, husked and cleaned. 1/2 cup mayonnaise. 1/2 cup sour cream. 1 cup crumbled queso fresco. 1 teaspoon chili powder. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. Salt and pepper to taste. 4 wooden skewers, soaked in water for 30 minutes.
Instructions: Warm up the grill over medium-high heat. Put one ear of corn on a wooden skewer that has been soaked in water. Mix the mayonnaise, sour cream, chili powder, paprika, cayenne pepper, salt, and pepper in a small bowl. Add the 1/2 cup of queso fresco. To make the elote sauce, mix everything together well. For about 10 to 15 minutes, or until the corn is charred and cooked all the way through, put the corn skewers on the grill and turn them over every so often. Put the tilapia fillets on the grill while the corn is cooking. Season them with the blackened seasoning. The tilapia fillets should be grilled for three to four minutes on each side, or until they are cooked all the way through and have nice grill marks. For about 30 seconds on each side, warm the corn tortillas on the grill. Place a grilled tilapia fillet on top of each tortilla. Then add shredded lettuce, diced tomatoes, red onion, cilantro, and cotija cheese. Put the elote sauce on top of the tacos and serve them with lime wedges. With just the right amount of spices and toppings, these Mexican Ground Beef Tacos are full of flavor. A quick and tasty meal for taco fans!
Ingredients: 1 lb ground beef. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 tsp cumin. 1 tsp chili powder. 1/2 tsp paprika. Salt and pepper to taste. 1 cup diced tomatoes. 1/2 cup black beans, drained and rinsed. 1/2 cup corn kernels. 1/4 cup fresh cilantro, chopped. 8 small taco shells. 1 cup shredded cheddar cheese. Sour cream, salsa, and lime wedges for serving.
Instructions: In a skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Add chopped onions and minced garlic, and saut until onions are translucent. Stir in cumin, chili powder, paprika, salt, and pepper. Cook for another 2 minutes. Add diced tomatoes, black beans, and corn kernels. Cook until heated through. Stir in chopped cilantro, then remove from heat. Warm taco shells in the oven or microwave according to package instructions. Fill each taco shell with the beef mixture, top with shredded cheddar cheese, and serve with sour cream, salsa, and lime wedges.
