ONE POT VEGAN MUSHROOM STROGANOFF 🍄 Creamy, delicious and ready in 30 minutes 😍 .

Recipe 
Ingredients⁣⁣
* 1/2 medium yellow onion, finely⁣⁣
* 6 garlic cloves, finely minced⁣⁣
* 10 oz. mushrooms sliced⁣⁣
* 3 tbsp all-purpose flour⁣⁣
* 1/2 cup vegan dry white wine (we used a Sauvignon Blanc)⁣⁣
* 2 tsp fresh thyme (stems removed)⁣⁣
* 2 tsp tamari (or soy sauce)⁣⁣
* 2 bay leaves⁣⁣
* 2 tbsp nutritional yeast⁣⁣
* 1/2 tsp dijon mustard⁣⁣
* 4 cups vegan beef broth⁣ (or vegetable broth) ⁣
* 8 oz. rotini pasta⁣⁣
* 1/2 cup vegan sour cream
* Salt and pepper, to taste⁣⁣
* Fresh parsley, finely chopped (for garnish)⁣⁣
Instructions ⁣⁣
1. In a medium pot or pan over medium heat, add in 2 tablespoons of vegetable broth . Once warmed, add in the onions and garlic, and sauté for about 3 minutes, stirring often, or until fragrant and translucent. Be sure to add more vegetable broth or water, 2 tablespoons at a time, as needed to prevent burning.⁣⁣
2. Add the mushrooms and cook until they begin to soften and browned, about 3 minutes.⁣⁣
3. Sprinkle the flour over the mushroom mixture and mix through. Stir constantly for 2 minutes to cook the flour through.⁣⁣
4. Add in the vegan white wine and mix through. Cook for 1 minute.⁣⁣
5. Add in the thyme, tamari, bay leaves, nutritional yeast and dijon mustard. Mix until well combined. Slowly being to add in the vegan beef broth, stirring constantly, until you have a smooth mixture. Add in the noodles and mix through.⁣⁣ .

#Repost from @sweetsimplevegan with @regram.app I haven’t cooked a meal or been in the kitchen for about 5 days now and it feels so weird to me! 😂 I’m itching to get back into the kitchen but I’m also very appreciative of the dishes and flavors I’m being introduced to while I travel. When I get back I’m definitely going to whip up recipes inspired by my trip here for the blog 🌚 In the meantime, here’s a throwback to the Pad Thai Buddha Bowl I put together before I left 😍 Pad Thai Buddha Bowl INGREDIENTS * 1 cup of @rightfoods pad Thai * 1/2 large block of extra form tofu * 1/2 Small head of broccoli * 1/2 small head of cauliflower * 1/2 medium sweet potato, diced * 2 cups spinach Ginger miso dressing: * ⅓ cup seasoned rice vinegar * 2 tablespoons tahini * 1 tablespoon agave * 1 tablespoon miso * 1 tablespoon tamari or soy sauce * 1 teaspoon garlic powder * 1/4-1/2″ piece ginger * Dash of black pepper, if desired Top with: * Hemp hearts * Sesame seeds INSTRUCTIONS 1. Preheat a conversion oven to 350F and line a large rimmed baking sheet with parchment paper or a silicone baking mat. 2. Press the tofu for about 1 hour. For a quicker pressing, cut the tofu into 4 piece lengthwise and then press all of those pieces side by side (not stacked). 3. In the meantime, prepare the pad Thai according to the packaging instructions. When ready, drain out all of the liquid into a small bowl. Set aside. 4. Once the tofu is pressed, cut into cubes and toss it into the liquid that you drained from the soup. Allow to to marinate for 10-15 minutes, mixing it carefully halfway through. 5. On a timed baking dish, add the sweet potatoes, broccoli, cauliflower and marinated tofu. Pour any remaining marinade/broth evenly over all of the vegetables. Place into the oven for 30-35 minutes. 6. In the meantime, prepare the miso dressing by simply whisk everything together until smooth. Once the vegetables and tofu are done roasting, remove them from the oven to cool slightly. 7. To assemble, divide the spinach, veggies, tofu and pad Thai into two bowls. Top with the ginger miso dressing, sesame seeds and hemp hearts. Enjoy! #veganrecipes #vegan #sweetsimplevegan #sponsored (at Wayland, Michigan)
