Manuka Mango, Strawberry and Banana Fruit Salad

When my girlfriend visits from New Zealand in April --fingers crossed, nothing’s confirmed yet-- I shall make her this bright and refreshing Manuka Mango, Strawberry and Banana Fruit Salad, with Manuka Honey I brought back from Aotearoa last year, and the Strawberries I grow. We might have it for breakfast, in bed, or as a lively note to end a bucolic lunch in the garden. I’m quite looking forward to it; but that does not mean, for now, I can’t enjoy it without her! Happy Saturday!

Ingredients (serves 2):

1/2 large ripe mango

8 medium Strawberries

1 large just ripe banana

1 lime

1 teaspoon Homemade Vanilla Extract

1/2 tablespoon pure Manuka Honey

Peel and dice mango halve, and spoon mango dices into serving bowl.

Rinse Garden Strawberries and pat them dry. Halve and dice Strawberries. Add to the bowl.

Peel banana and cut into slices. Add them to the bowl, too.

Grate in the zest of half the lime. Then, thoroughly squeeze the juice of the whole lime over the fruits. Toss gently, with clean hands, to combine.

Drizzle in Vanilla Extract. Gently stir in Manuka Honey, to mix. Chill in the refrigerator, at least an hour.

Serve Manuka Mango, Strawberry and Banana Fruit Salad on its own, or on top of thick yoghurt.
