The simplicity of Italian cooking never ceases to amaze me. To take the most modest of ingredients and transform them into something breathtakingly delicious is a pleasure. Spaghetti Pomodoro is one of those dishes. Here’s how it’s done! Take one whole white onion and chop finely. Gently fry in a pan with a generous helping of olive oil. Next take some sweet cherry tomatoes slice them in half and add them to the pan along with two whole cloves of garlic that have been pressed out of their skins not chopped or minced. Season the pan with salt, pepper, basil and oregano. Mix well and gently cook them on a low heat until the tomatoes have become soft and the garlic the same. While that is cooking boil a pan of water for your spaghetti. Just before you remove the spaghetti from the water add a good ladle full of the pasta water to tomatoes to create a delicious sauce. Add the spaghetti and coat well with the sauce. Then add a generous helping of grated Parmesan cheese and mix well. And that’s it! Season to taste, then serve and enjoy. It’s as simple as that. My eldest child is a freaking culinary superstar! This beautifully plated dish of classic basil and tomato spaghetti was all her tonight. She said “Mama, can I make spaghetti for dinner?” How can a mother resist someone else taking over kitchen duties? Especially when it’s her 13 year old who always whips up amazing goodies? In all seriousness, this was even tastier than it looked. I am proud of her ability to look in the fridge and pantry and come up with something tasty for us. Additionally, I am grateful for the fact that she is willing to help out without being asked. The icing on the cake is that she is really, really good at cooking and baking.
