Eat Right for Life
Dr. Ann Kulze is not only a fantastic physician, she’s also an authority on nutrition and long-term healthy living.  I’ve been fortunate to hear her speak a few times through the Wellness Council of America.  It’s one thing to have facts thrown at us about how to live healthier, more fulfilling lives, but what I love about Dr. Kulze is her passionate enthusiasm for raising healthy, happy families.  She’s great about passing along actionable suggestions, backed by substantial research and personal experience after raising four children of her own.  You can find her laminated grocery shopping charts on her website.  These are fantastic to keep on your fridge and review before making your shopping lists for the week and she sells them for only $10!  
With all the dieting information and fads out there, it’s so easy to get lost in the details.  I truly do think it’s easier than we’ve been taught to believe, but due to bio-individuality, you know I’m always preaching about “finding what works for you!”   It also requires going against the grain in a culture that makes it quite easy to make poor diet choices.  Luckily, there is a broad range of healthy diets, but they all have two big things in common: 
Heavily feature PLANT-BASED eating. 
Primarily based on WHOLE FOODS; very little processed foods.   
Where do we go from there, and what are the key elements we all need to be incorporating into our daily lives no matter what?  We’re going to keep talking about the fundamentals of nutrition over the course of the year so today we’re just dipping our toes in the water with some simple, universal nutrition goals.
It starts with FIBER!
The average adult only eats 15 grams of fiber per day.  According to the Institute of Medicine, women need 25 grams of fiber per day, and men need 38 grams.  Many of us might think of fiber in terms of helping our food “move along” in our intestines.  Without it, that movement gets stalled, right?  Fiber is so vital to our overall health, as our gut biome requires it to feed the healthy bacteria that makes up a whopping 75% of our immune system!
Fiber fills us up much faster than processed junk does.  For example, a small bowl of broccoli has about only 35 calories and is going to fill our bellies up quicker than a small handful of chips will with 125 calories and zero nutrition. It’s so easy to run for a non-nutritious snack but we end up eating MORE to satisfy our hunger than we would if we made a more nutritious choice to start with.  So before choosing your lunch or grocery shopping for the week, ask yourself one simple question about your choices:  Did this grow? If the answer is NO, eat it in big time moderation.  The more we eat food that’s overly processed with 5 or more ingredients and chemicals added to it, the less we appreciate the simplicity of eating whole foods.  I’m not mentioning meat much here, but it certainly falls into the “whole foods” category as well.  Unfortunately, meat doesn’t contain fiber, so all the more reason to make sure we’re eating our meat alongside whole grains, vegetables, beans and fruit!

What are Phytochemicals?
Fiber contains phytochemicals and they’re found in “good carbs” like vegetables, beans, fruits, and whole grains.  Phytochemicals “turn” bad genes off, “turn” good genes on, boost immunity, reduce inflammation and pain, lower our risk of cancer, manage cholesterol levels, prevent heart disease, dementia, and many other metabolic related diseases.  And variety is key.  Don’t just eat your favorite canned vegetable every day (yes, that includes kale for me which is one I love!); Dr. T. Colin Campbell figured out decades ago that our bodies thrive on variety and nutrients need to come from a multitude of sources. Phytochemicals also give the bright colors to food and come in many forms, all of which are “life giving” nutrients for our bodies. See bright color in plant-based foods, and see nutrition.  Exceptions to nutritious foods that aren’t so colorful are cauliflower, white peaches and mushrooms because those are fabulous for us too!  In fact, if you’re like me and you suffer from some wintertime blues, mushrooms are a fantastic way to get a boost of Vitamin D on these darker, shorter days.
We don’t have to eat whole foods 100% of the time to help our bodies achieve optimum health and vitality, but it does need to be the majority of what we’re eating.  Try incorporating more fiber via vegetables, beans or whole grains into at least two of your daily meals and I know you’ll feel the difference after just a week or so!  Ask yourself Did this grow? while shopping or selecting that mid morning snack.  Remember the “self love” I’m always going on about and how making more nutritious food choices for you and your family’s long-term wellbeing are a big part of that love!

The first two weeks are the hardest! Tomorrow will mark that 2 weeks of my detox/clean eating since I started. Every time I go shop at my local farmers market here in the Twin Cities, I am reminded that these local farmers worked very hard every summer to get their vegetables to sale. I overheard a lady said to another lady that it was so easy for her to grow and harvest her produces. All she did was plant them. She didn't need to worry about watering her vegetables, and only relied on the rain to take care of the rest. I thought she was pretty brave for saying that! I've been wanting to purchase some Hmong corn and I came across a booth that showed me her corns. She explained to me what I should look for when purchasing corns. And she even taught me how long to cook it for and how I should reheating it, after I have kept them in the freezer.
