My #flexitarian lifestyle means I eat a lot of veg, fruit, nuts/seeds/healthy fats. I limit dairy (kefir and Greek yogurt) and meat (mainly chicken) plus fish. This quick weeknight meal made fine use of three kinds of @dorotgardens cubes from my freezer (basil, garlic, and caramelized onion) thawed and combined with 3T of dehydrated tomato powder, a few glugs of EVOO, and a teeny bit of both balsamic vinegar and maple syrup, tossed with gluten free gnocchi. I also added crushed @oliviascroutons for texture, arugula for more flavor and color, and shredded Parmesan because cheese.
