Happy September!
In honor of the official start to the fall season, I made pumpkin simple syrup to add to my coffee and also maybe some cocktails.
8 oz pumpkin puree
1.5 cups water
1.5 cups white sugar
ground cinnamon, ground nutmeg, ground cloves to taste
Stir all ingredients together, bring to a simmer. Let cool. Save in an air tight container.

Cable Car !
1.5 oz spiced or aged rum
0.5 oz orange curaçao
0.75 oz lemon juice
0.5 oz (or less) simple syrup
Moisten the rim of a Martini or coupe glass and press the glass into a mix of cinnamon and sugar to have some adhere to the rim.
Add all liquid ingredients to a cocktail shaker with ice, shake hard for eight to 10 seconds.
Strain into the rimmed glass and garnish with an orange peel !

Cinnamon Syrup; Recipe and Uses

Cinnamon is a great spice to bake with when doing Kitchen Magic. It's a powerful and versatile ingredient. However, I personally don't like adding cinnamon directly to my drinks, as the texture can be gritty and off putting. But I love the flavour. So I decided to try making a simple syrup and infusing the cinnamon in that.
A simple syrup is just equal parts sugar and water, heated so all the sugar dissolves. You can use any sugar (Or sugar alternative if you want to make a Zero Sugar Syrup) but most of the time, white sugar is used.
On a stovetop, over medium heat, combine 1 cup sugar and 1 cup water. Stir until Sugar Dissolves. Add Cinnamon Sticks. You want to break them up a bit, butt still keep it chunky so it's easy to strain. 4 to 6 sticks should do.
I also added a coffee bean to energize/activate my Cinnamon's Properties since these were older sticks. But that's optional.
Bring syrup to a simmer, and let it continue to simmer for 5 to 10 minutes with the lid off. Take care not to boil the syrup as that can change the sugar's structure. Once done simmering, remove from heat and place a lid on the pot. Let it sit and cool down over the course of a few hours. This allows the cinnamon to infuse further.
Now strain the syrup using a Siv or cheese cloth. To the syrup, mix in half tsp of vanilla if you want. Jar it up and store in the fridge.
Uses
Cinnamon attracts and enhances just about anything positive in life. Love, Prosperity, Power, Success, Money, Happiness, ect. Cinnamon was also used in purifying rituals of past cultures. For this reason, many Witches will add some Cinnamon to their morning beverage.
You can add this syrup to coffee and tea, treating it like a sweetener. So if you take a spoonful of sugar in your coffee, you'll use a spoonful of syrup.
You could also try making your own coffee creamer with this simple syrup and a can of evaporated milk. If you like your Creamer super sweet, use sweet and condensed milk.
Mix some of this syrup in with sparkling water for a different flavor pop.
Add a spoonful to plain yogurt with some berries either as it's own thing or to enhance the properties of the fruit.

Apricot Liqueur

Another way to capture the height of Summer in a bottle is to make this beautifully fragrant, bright orange Apricot Liqueur. Whether you sip it pure or mix it into cocktails, this is as close as liquid sunshine as it can get! And if you mix it with a little Lavender Liqueur, you can almost hear the cicadas and you are in Provence! Cheers! 
Ingredients (makes about 445 millilitres/15 fluid ounces):
half a dozen large, very ripe apricots
375 millilitres/1 1/2 cup neutral alcohol, like vodka (at least 40%)
1/3 cup caster sugar
2/3 cup water
Thoroughly rinse apricots, and pat them dry.
Halve and pit apricots and place apricot halves in a sterelised jar.
Cover with vodka, and close the jar tightly. Give a good shake, and place the jar on a shelf, in a draught-free place, away from direct sunlight.
Let sit for a fortnight, shaking the jar once a day every day.
After two weeks, strain apricot-flavoured alcohol into a bowl, through a fine mesh sieve. (You can use the soaked apricots to make an!)
Meanwhile, in a small saucepan, combine caster sugar and water. Heat over a medium flame, stirring occasionally until sugar is completely dissolved.
Once it is, increase heat to high, and boil rapidly for a few minutes until syrup just thickens. Remove from the heat and allow to cool completely.
Once cooled, stir sugar syrup into strained apricot alcohol, until completely blended.
Pour Apricot Liqueur into a sterelised glass bottle and close tightly.
You can drink Apricot Liqueur pure and chilled, as a digestive, topped with chilled Champagne or mixed into cocktails...

Thyme simple syrup
Simple syrup is sugar dissolved in water, it's mostly used to make drinks. You can make your own by mixing 1 cup of water with 1 cup of sugar in a small pot on the stove, then bring to boil. Pour mixture into a jar and add 2-4 tablespoons of dried herbs for delicious flavor, place a lid on top and let it cool down for about 20 minutes. Shake the jar occasionally.
Once the syrup is room temperature, strain out the herbs and store in refrigerator until you're ready to use it. It lasts up to a month. Great for lemonade!😋

It's that time of year when I have to move to iced teas and sun teas and start getting really fancy with my tea cocktails so here's a fun syrup I just made

Collected a few jasmine flowers from the garden but not quite enough to do anything with on thier own so I picked some fig leaves, rinsed them in the sink and shoved them into the toaster to toast (carefully watching on a count of the fire risk) it would've been better to roast them in the oven or air fryer but it's hot and my air fryer needs a good cleaning

Got out my leaves once they were fragrant and toasty

Then brought them to a boil in a cup of water and a cup of the last of my vanilla sugar, left it to steep till the syrup cooled

Ta da!! It was really nice in an iced linden tea with a squeeze of lemon 🍋
