Deluxe ramen at a place I’ve been meaning to try! I rarely choose deluxe (特製) because it’s so expensive, but this place has such good marketing about their ingredients and strict selection process that I couldn’t pass up trying one of everything……

The chashu was quality meat and well cooked but plainly seasoned for my taste, the wontons were very generously portioned and pretty tasty, the egg was standard, and the noods had absolutely excellent texture and taste. Next time I’d try their shio broth rather than shoyu—there’s not much variation in shoyu, and it ends up tasting largely the same everywhere.

Shoyu ramen from Yama, in Downtown Morgantown. Unquestionably one of my favorite meals from one of my favorite restaurants.

I’ve always been partial to cramped establishments. There’s something about sitting nearly shoulder to shoulder with perfect strangers in a cramped room that makes the food taste better.

Homemade Shoyu Ramen Noodles Recipe (Soy Sauce Flavored Chuka Soba)

INGREDIENTS:

2 portions ramen noodles

BROTH

1000 ml water

3 chicken wings

10 g dried sardines (niboshi) 

15 g bonito flakes katsuobushi

10 g dried kelp (kombu)

20 g ginger root

2 cloves garlic

50 g Japanese leeks (naganegi) green part

TARE

½ tbsp lard

50 g chicken skin

100 ml water

50 ml soy sauce

1 tbsp mirin

1 tbsp sake

½ tsp sugar

1 pinch salt

TOPPING SUGGESTIONS
