Teriyaki Chicken with Roasted Vegetable and Red Quinoa Lettuce Wrap. • 1) Marinate chicken thighs for 12 hours in a lemon soy garlic marinade. 2) Small dice mushrooms, red onion, tomato, red pepper, green pepper, yellow pepper, jalapeño pepper, carrots and garlic. 3) Pan sear chicken thighs in olive oil. 4) Remove from pan and let rest for 5 minutes. 5) Pan roast vegetable mixture in same pan the chicken was cooked in. 6) Small dice chicken thighs and add to vegetable mixture in pan. 7) Turn heat to high and squeeze fresh lemon over mixture. #SBtaste: Wild Alaskan Cod Tacos with Cilantro Salad. • It's a lifestyle. •• 1) Small julienne sweet peppers, jalapeño, garlic, black olives, kalamata olives, carrots and red onion. 2) Pick fresh cilantro leaves and add to small julienne vegetable mixture. 3) Juice one lemon and one lime and toss with cilantro and vegetables to make a light salad. 4) Heat oven to lightly crisp tortilla shells. 5) Heat sauté pan on high. Salt and Pepper cod filets.
