Today, I'll show you another version of the renowned Watermelon Salad with feta by adding quinoa.
It’s a refreshing salad full of summer, ideal for your backyard barbecues, picnics or as a light but nutritious lunch dish. A great sweet, earthy and salty pairing, for those who enjoy mingling fruit with cheese!
Let’s see how to prepare it.
Suitable for lacto-vegetarians (and for vegans/fasting if they use feta substitute!)
 
INGREDIENTS
Ingredients for the Salad:
•          200 gr. / 7 oz Quinoa (3-colored)
•          400 ml / 1.6 cups Water, for boiling quinoa
•          400 gr. / 14 oz Watermelon (cleaned and then weighed)
•          150 gr. / 5.5 oz Feta cheese, cubed
•          120 gr. / 4.2 oz Baby (mini) Cucumber, in thin rounds
•          2 twigs fresh Mint, finely chopped
•          2-3 twigs fresh Coriander, finely chopped
•          50-70 gr. / 1.75-2.5 oz Pomegranate seeds

Ingredients for the Dressing:
•          3 tbsp. / 45 ml Extra Virgin Olive Oil
•          1 tsp. / 5 ml Honey
•          About 2 tbsp. / 30 ml / Juice from 1 Lime
•          Ground Salt and pepper

METHOD:
A.    Boil quinoa:
1.     Note: I used 3-colored quinoa for a nice color contrast, but you could use any kind you have at home.
2.     Place quinoa in a pot with the water. Boil it over low-medium heat for 10' covered with lid.
3.     When boiled, remove from heat and strain it well using a colander.
4.     Place it in a soup plate and let it cool down completely for 1 hour.
 
B.    Prepare the dressing:
5.     In a small bowl with the Olive oil add the honey and whisk to blend it in.
6.     Pour in the lime juice.
7.     Season with ground Salt and Pepper, to taste (keep in mind that feta will be added in the salad later!)
8.     Whisk all ingredients very well until dressing is homogenized and thick. Reserve.
 
C.     Prepare and finish the Salad:
9.     Place the quinoa in a deep Salad bowl. With a fork mix the quinoa to separate its small grains and to fluff it up.
10.  Pour on top the dressing and blend it in. 
11.  Remove the rind and pips from the watermelon, and cut into approx. 2 cm / 0.8 in cubes. Reserve in a soup plate.
12.  Finely chop both fresh herbs using a mezzaluna (discard the twigs).
13.  Bring all ingredients next to the salad bowl.
14.  Start by adding first the cucumber rounds, then the pomegranate, the feta cubes and chopped herbs.
15.  Place watermelon cubes on top.
16.  With your salad spoons, toss gently all ingredients to blend them and for the dressing to be incorporated.
17.  Chill the salad now in the fridge for 2 hours max., covered with plastic wrap.

D. Serving suggestion:
Serve this beautiful, refreshing Summer Salad, chilled with a small twig of mint on top!

E. Interesting facts:
The combination of fruit with cheese and even cold cuts has been a world favourite, tried and tested even from Roman times. However, watermelon with feta is a Greek original combination. It actually makes a very good blending of potassium (in watermelon) and sodium (in feta cheese) that ensures the balance of these two electrolytes.
Largest watermelon:
The new Guinness world record for the heaviest watermelon was grown by Chris Kent (USA) of Sevierville, Tennessee, USA and weighs 159 kg (350.5 lb) as verified on 4 October 2013.

Σήμερα, θα σας δείξω μια άλλη εκδοχή της περίφημης σαλάτας με καρπούζι και φέτα προσθέτοντας κινόα.
Μια δροσερή σαλάτα γεμάτη καλοκαίρι, ιδανική για μπάρμπεκιου στην αυλή, πικνίκ ή ως ένα ελαφρύ αλλά θρεπτικό μεσημεριανό γεύμα. Ένα υπέροχο γλυκό, γήινο και αλμυρό ταίριασμα, για όσους απολαμβάνουν να ανακατεύουν φρούτο με τυρί!
Ας δούμε πώς να την ετοιμάσουμε.
Κατάλληλο για χορτοφάγους (και για βίγκαν/νηστεία αν χρησιμοποιήσετε υποκατάστατο φέτας!)
 
ΥΛΙΚΑ
Υλικά για τη σαλάτα:
• 200 γρ. / 7 oz Κινόα (τρίχρωμη)
• 400 ml / 1,6 φλ. Νερό, για το βράσιμο της κινόα
• 400 γρ. / 14 oz Καρπούζι (καθαρισμένο και μετά ζυγισμένο)
• 150 γρ. / 5,5 oz τυρί Φέτα, σε κύβους
• 120 γρ. / 4,2 oz Baby Αγγουράκια, σε λεπτές ροδέλες
• 2 κλαδάκια φρέσκο​ς Δυόσμος, ψιλοκομμένος
• 2-3 κλαδάκια φρέσκο ​​Κόλιανδρο, ψιλοκομμένο
• 50-70 γρ. / 1,75-2,5 oz σπόροι Ροδιού

Υλικά για το ντρέσινγκ:
• 3 κ.σ. / 45 ml Εξαιρετικό Παρθένο Ελαιόλαδο
• 1 κ.γ. / 5 ml Μέλι
• Περίπου 2 κ.σ. / 30 ml / Χυμός από 1 Λάιμ
• Φρεσκοαλεσμένο αλάτι και πιπέρι

ΜΕΘΟΔΟΣ:
Α. Βράστε τη κινόα:
1. Σημείωση: Χρησιμοποίησα 3χρωμη κινόα για ωραία χρωματική αντίθεση, αλλά θα μπορούσατε να χρησιμοποιήσετε οποιοδήποτε είδος έχετε στο σπίτι.
2. Βάλτε τη κινόα σε μια κατσαρόλα με το νερό. Βράστε τη σε χαμηλή προς μέτρια φωτιά για 10' σκεπασμένη με καπάκι.
3. Μόλις βράσει, αποσύρετε από τη φωτιά και στραγγίστε τη καλά με σουρωτήρι.
4. Βάλτε σε ένα πιάτο σούπας και αφήστε τη να κρυώσει εντελώς για 1 ώρα.
 
Β. Ετοιμάστε το ντρέσινγκ:
5. Σε ένα μικρό μπολ με το ελαιόλαδο προσθέστε το μέλι και χτυπήστε να ομογενοποιηθεί.
6. Ρίξτε μέσα το χυμό λάιμ.
7. Αλατοπιπερώστε, κατά βούληση (έχετε υπόψη ότι αργότερα στη σαλάτα θα βάλετε και φέτα!)
8. Χτυπήστε πολύ καλά με το σύρμα όλα τα υλικά μέχρι το ντρέσινγκ να ομογενοποιηθεί και να γίνει πηχτό. Βάλτε στην άκρη.
 
Γ. Ετοιμάστε και τελειώστε τη Σαλάτα:
9. Τοποθετήστε τη κινόα σε μια βαθιά σαλατιέρα. Με ένα πιρούνι ανακατέψτε την κινόα για να χωριστούν οι μικροί κόκκοι της και να αφρατέψει.
10. Ρίξτε από πάνω το ντρέσινγκ και ανακατέψτε.
11. Αφαιρέστε τη φλούδα και τα κουκούτσια από το καρπούζι και κόψτε το σε περίπου 2 cm / 0,8 in. κύβους. Βάλτε τα σε ένα πιάτο σούπας.
12. Ψιλοκόψτε και τα δύο φρέσκα μυρωδικά χρησιμοποιώντας mezzaluna (πετάξτε τα κλαδάκια τους πρώτα).
13. Φέρτε όλα τα υλικά δίπλα στη σαλατιέρα.
14. Ξεκινήστε προσθέτοντας πρώτα τα αγγουράκια, μετά το ρόδι, τους κύβους φέτας και τα ψιλοκομμένα μυρωδικά.
15. Τοποθετήστε από πάνω τους κύβους από καρπούζι.
16. Με τις κουτάλες σαλάτας, ανακατέψτε απαλά όλα τα υλικά για να αναμειχθούν και να ενσωματωθεί το ντρέσινγκ.
17. Βάλτε τη σαλάτα τώρα στο ψυγείο για 2 ώρες το πολύ, καλυμμένη με πλαστική μεμβράνη, να κρυώσει.

Σερβίρετε αυτή την πανέμορφη, δροσερή καλοκαιρινή σαλάτα, κρύα με ένα μικρό κλαδάκι δυόσμου από πάνω!

Ο συνδυασμός φρούτων με τυριά και ακόμη και αλλαντικών ήταν πάντα αγαπημένος, δοκιμασμένος ακόμη και από τους ρωμαϊκούς χρόνους. Ωστόσο, το καρπούζι με φέτα είναι ένας ελληνικός αυθεντικός συνδυασμός. Στην πραγματικότητα κάνει μια πολύ καλή ανάμειξη καλίου (στο καρπούζι) και νατρίου (στη φέτα) που εξασφαλίζει την ισορροπία των δύο αυτών ηλεκτρολυτών.

Melon Day
Melon Day takes place on the second Sunday in August. This year, it takes place on August 13. On this special day, we celebrate cantaloupes, galias, and all the other muskmelons, specifically those belonging to the people of Turkmenistan. If you’re like us, you may have confused watermelons for melons at least once in your life, however, these two fruits are very different even though they stem from the same family. Melons, particularly muskmelons, have an important agricultural heritage and are the pride of the people of Turkmenistan, a country located in Central Asia. Today, they honor not only their well-groomed muskmelons but a fine crossbreed, named after their first president, the Turkmenbashi melon.
History of Melon Day
They are hard, musky, and netted on the outside, but soft, succulent, and orange or white on the inside. Today, all the hype is about muskmelons, these juicy fruits that are not to be confused with any other kind of melon. We often find ourselves placing all melons in the same category, but this is an oversight on our part. Muskmelons are quite different from all other melons, and this can be attributed to their physical features and taste. They typically have smooth, ribbed, wrinkled, or netted exteriors with sweet flesh that is yellow or white. Some examples of muskmelons are cantaloupes, honeydews, and galias.
Although we are celebrating all kinds of muskmelons today, Melon Day originated in Turkmenistan and holds cultural significance for its people. For those who may not know, Turkmenistan is the least populated country found in Central Asia. They are known for their beautiful culture, heritage, and also their delicious melons. Turkmenistan is responsible for approximately 400 of the melon varieties we have today. They grow and cultivate muskmelons in great numbers, and this has been an integral part of their history and culture for decades.
Melons hold such importance that one of the crossbreed products is named after their first president, Saparmurat Niyazov, who is also the creator of this holiday. He preferred to be known as ‘Turkmenbashi,’ which means ‘leader of the people.’ The Turkmenbashi melon is revered for its aroma, taste, and hefty size.

Is Melon Day a public holiday?
Melon Day is a national, public holiday in Turkmenistan. Although this holiday is now acknowledged in a few other countries, it only remains a public holiday in its founding federation. Citizens are not required to go to work or school on this day and are encouraged to join in the holiday’s festivities.
Why are they called muskmelons?
Muskmelons were given their name based on their aroma. These fruits have a particularly flavorful smell when ripe. ‘Musk’ is the Persian word for ‘perfume’ and is the perfect description for the sweet aroma of ripe muskmelons.
