Ingredients: 1 cup Arborio rice. 4 cups chicken or vegetable broth. 1 cup frozen peas. 6 slices bacon, chopped. 1 small onion, finely chopped. 2 cloves garlic, minced. 1/2 cup dry white wine. 1/2 cup grated Parmesan cheese. 2 tablespoons fresh mint leaves, chopped. 2 tablespoons butter. Salt and pepper to taste.
Instructions: The chicken or vegetable broth should be heated in a saucepan over low heat and kept warm. Cook the chopped bacon in a big skillet or pan over medium heat until it crisps up. Take out the bacon from the pan and place it on a plate covered with paper towels. Add the minced garlic and chopped onion to the same skillet. Fry them in the bacon grease until they are fragrant and translucent. Add the Arborio rice and cook, stirring frequently, for two to three minutes, or until the rice is lightly toasted. After adding the dry white wine, cook it until most of it evaporates. One ladleful at a time, start adding the heated broth to the rice mixture. Add more broth after the liquid has been thoroughly mixed and absorbed. Continue cooking the rice for another 18 to 20 minutes, or until it is creamy and cooked to your preferred doneness. During the final five minutes of cooking, stir in the frozen peas. Take the skillet off of the burner and mix in the butter, chopped mint leaves, and grated Parmesan cheese. To taste, add salt and pepper for seasoning. Spoon the creamy pea and bacon risotto into bowls and top with extra mint leaves and crispy bacon pieces. Instructions:

TRUFFLE AND SEAFOOD RISOTTO - low-fat and low-calorie amazing risotto with truffle carpaccio and grilled seafood and langoustine
Method:
Warm-up vegetable stock. Cook for 1 min carnaroli rice on an oil sprayed pan. Add dry white wine. After the wine evaporates, add about a cup of the stock. Mix the rice. When the stock evaporates add another cup of stock. Repeat the process for around 20 minutes until the rice is al dente. Add a bit of truffle and mix. Add a bit of parmesan to give a taste. Add salt and pepper to taste. Grill for about 2 minutes the seafood on a spray oiled pan, add salt and pepper. Serve the risotto immediately, and top it with truffle carpaccio, parmesan, and seafood.
