So the one reason to go to Arkansas is to drive through a town named "Flippin," where everything sounds like a euphemism. Flippin Fire Dept. Flippin School. Flippin Police. Etc.
While that does sound charming, I don't know that justifies a trip to Arkansas
#when I was considering moving to georgia#a place I had not been yet#I was at this hole in the wall thai restaurant with a friend#and the tables were soooo close together#and there was a couple next to us#and the one boyfriend was just like hissing that he was NOT going to move to Arkansas#he didn't care HOW good his bf's job offer was#he was NOT GOING#he could get a job ANYWHERE ELSE#and while GA is not quite on the same level as Arkansas I was like gosh that is what i'm feeling right now#it's soooo far south#anyway I did move to GA and it was fine#although that feels disingenuous#I very rarely left the city and in the city I very rarely met anyone who was actually FROM GA#this one time I stopped for gas in what is apparently a small shitty town#and I'm white but apparently I was OBVIOUSLY not from around there#because there were like five old men sitting at the bar of the little gas station restaurant#who stopped talking when I walked in and just... watched me#as I bought a snack for the road and asked where the bathroom was#just silently disapprovingly watching this outsider... utilize a gas station#the girl working the register seemed apologetic#when i went back out to my car I could see all them watching me from the window#so I do think there are parts of GA that straight up suck#and had I been a different race I think my safety would have been in question that day#but Atlanta was fine for the most part#weirdly full of people from Chicago

#talk#Mold is safe to remove in some instances but not most any building with unhygienic practices in one corner has it in the kitchen too#You get given food by strangers any time you go to a restaurant it is not the concept of a person you don't know that unnerves you it is a#lack of regulation and confirmed compliance to safety standards#Which is why everywhere is legally required to have their safety score framed in a place visible to customers#Which btw speaking as a food service worker anything under an 85 veers into serious risk territory because restaurants are stricter on#Inspection days. So really you want to be subtracting 5-10 points from any given rating and judging based on that.#Like I'm not saying high levels of disgust boil down to a lack of exposure to the reality of food service and distribution but I do think#most people would be more confident and thus less disgusted by certain things if they just understood them better#Hence my previous post.

18. A memorable meal this year? okay great question. so I was in Maine earlier this year and I went to fore street for a special occasion....this fucking restaurant. we opened with a summer salad, essentially radicchio, mixed greens strawberries, some sort of nuts, and some sort of cheese, and you can essentially get this salad anywhere but this is the best rendition of it I have EVER had, the radicchio was zingy, the lettuce was so tender, the strawberries were so good I thought they might had been macerated in sugar. and then to follow that we had smoked squid with cherry tomatoes and a pesto, and it was insanely good, it was genuinely fucked up how good it was. The squid was both part of the mantle and the tentacles and the mantle was so tender and chewy that it almost tasted like savory linguine. I had some roast chicken for my entree but the salad and squid really defined the meal for me. I also went to a restaurant here earlier this year, for valentine's day, and had face melting transcendent baba ganoush with house made gluten free crackers.....i was like wow so THIS is eggplant huh? incredible. like my entree for that meal was this amazing braised stew with pistachos and rose water that came beautifully prepared but the baba ganoush was the stand out. decedent, gorgeous, I want to go back so badly.
20. What’s something you learned this year? i learned a lot about US foreign policy during the aughts! I got better at conflict! I used to find it high stakes and thus to be avoided at all costs and now I just see it as a part of life! I also learned how to do knitted cables and how to waltz

I still mask because I can't avert my eyes from the obvious signs that it has never gone away since 2020. Like, I'm often not even good at noticing subtlety IRL, but these signs are not hard to find. People are in denial.
AND I still avoid eating in restaurants because eating is the one thing you have to take off your mask for, and I am not doing that in some indoor and enclosed environment where hundreds if not thousands of people have been unmasked that day alone.

#i feel this so so much.#people really are in denial and believe they're exempt from reality#frustrating and infuriating feel like understatements at this point.#and i too don't feel comfortable eating indoors at aaallll.#i would need to be the only person in the restaurant in order for me to feel comfortable with that. and even then are the employees masking#if I'm not at home i 100% prefer to eat somewhere as isolated as possible.#ideally somewhere with a comfortable view and lots of nature around me to add a layer of safety and ease.#during this course im taking I've been enjoying my lunch at a street pier and finding some ease with watching the view of the river & plant#it's the little things that help.#also of course!!! i know all the recent recalls seem weird like they're everyday, but you gotta take people being off track and lack of training at best and people just not giving a shit at worst. there are companies providing next to no time to actually train employees because it's make money serve customers or make the thing as fast as possible no matter what with no room for the time for "silly regulations" and employees who are NOT trainers being told or expected to train new employees, which does not happen and if it does it's on the fly and doesn't always go well. next thing you know this company isn't doing things properly and their product is recalled for listeria. that company is a shit show on wheels and their product is recalled for salmonella. the next company has workers who aren't paid enough and don't care, the next one has workers that weren't trained correctly if at all, the next company is understaffed to hell and back, the next company has management on site that has never heard of a serve safe certification in their life, some times people aren't mentally present, it's not like we just came back off the heels of a global event that took many lives someone was family to or anything. did we forget about the housing crisis all the sudden? employee mental state matters too. some companies are figuring that out the hard way. the government isn't "recalling all the meat" or some shit for some agenda. some times the work places producing it are just a shit show because money is being put over safety by those at the top.
there's no one to properly train because companies do not want to pay for it. firing employees who need raises or refuse to cut corners, or for other stupid reasons like being late every now and again, (surprise, people have kids or family emergencies or are just stuck in traffic. shit happens beyond their control.) was a problem before, but now that corporate (insert company here) is trying to regain the horrendous amount of control they never should have had that slipped away from them in the pandemic when everyone had money from another source and competing with other companies these are the ingredients for a mess, we're just finally feeling the effects of it. of course there are recalls. look at your own work place, we know this is a problem, why are people surprised when the regulations that are supposed to prevent this from happening aren't followed and somehow shockingly it ends up in the thing those regulations were put in place to avoid?
