As a professional AuHD haver, I think that before any recipe can call itself "quick and easy" it needs to be made by at least one neurodivergent person and one person with an illness or disability that limits the amount of work they can do in a kitchen.
Caramelizing onions is NOT quick and easy. Having to chop and prepare more than one kind of vegetable (some days even ONE vegetable) is NOT quick and easy. Having to make sure there's no bad textured fats and tendons in the chicken thighs is NOT easy. I'm just going to name and shame the New York fucking Times for calling matar paneer a quick weeknight dish ok.
To me, quick and easy is a bunch of things I can throw in a pot or pan and leave alone with minimal oversight and minimal cleaning up afterwards. I can count on one hand how many recipes I've found that are actually quick and easy.
Never mind the grocery shopping, which can be its own separate post.

Don’t judge a book by its cover! According to my seasoned judgement, a 1 litre cooker does not only serve as a cooking gadget, but with proper technique and recipes, can be a handy tool for bachelors, small families or even students who are pressed for time.
A personal example is when I had to help my son during his hostel days. It was easy to prepare dal and rice and other creative meals such as paneer bhurji, masala sandwiches, even fried noodles. What makes it even better is that it heats up quick, is easy to clean, and small so that it does not take much space.
In this mode of learning, here are some recipes that work great with 1 litre pressure cookers:
1. Paneer Bhurji (Quick Sabzi)
My go to fix for last minute dinners. Only a few ingredients are required to make this dish which include stuffed crumbled paneer, onions, tomatoes and masalas.
My method is as followed:
Before you start, make sure to pour some oil into the saucepan.
Add in your cut up onions, green chillies, and tomatoes—simmer till brown.
In order add in turmeric, red chilli powder, garam masala.
Finally add paneer, combine for 5 minutes and dish would be ready.
Close the lid; let it cook on low heat until you hear one whistle.
Pair it with roti or put it in a sandwich. It is quick and protein-rich, as well as delicious.
2. Stuffed Masala Sandwich (No Tava Needed)
While many people prefer sandwich makers or pans for toasting sandwiches, I have a different approach. I experimented when we lost power and discovered that light toasting could be achieved using a one liter pressure cooker.
This is how I do it:
Grease the bottom of the cooker lightly.
Add stuffed sandwich (potato or paneer filling) to the cooker.
Cover the lid without the whistle on and keep the flame very low.
Wait 2-3 minutes, then flip and toast the other side.
The sandwich turns crisp and golden and is wonderful with evening tea or as a light dinner.
3. Instant Namkeen Mix (Evening Snack)
If you've ever roasted makhana or poha in a kadai, try doing it in a small pressure cooker.
Here are the steps:
Roast peanuts and either sev or a combination of cornflakes and poha in the cooker.
Add a handful of curry leaves, mustard seeds, and a touch of hing.
