Spanish Potato Onion Soup
4 medium onions, halved and thinly sliced [about 4 cups] 2 tablespoons olive oil 4 cups water 2 or 3 medium potatoes [about 4 cups sliced] 2 tsp. paprika 1 tsp. fresh thyme 2 large bay leaves 1/2 cup dry sherry 1 tsp. salt 1/2 tsp ground black pepper pinch of saffron
springs of fresh parsley strips of pimento dash of Tabasco or other hot pepper sauce, or pinch of cayenne
In a soup pot on medium heat, saute the onions in the oil, stirring occasionally to prevent sticking.  while they saute, bring the water to a boil in a separate pan.  Cut the potatoes in half lengthwise, and then slice each half crosswise into 1/4 inch thick slices. Keeping the slices together, cut them in half lengthwise again to form wedge-shaped pieces.
When the onions are translucent, add the paprika, thyme, and bay leaves.  Saute for a minute.  Pour the boiling water into the onion mixture and add the potatoes, sherry, salt and pepper.  Return to a boil. Then lower the heat and simmer, covered, for about 10 minutes.  Crumble in the saffron and continue to cook until the potatoes are tender.  Remove the vbay leaves.
Garnish each bowl of soup with a spring of parsley and a strip of pimento and add a dash of Tabasco or cayenne in you wish.
[Serve with crusty bread and white bean and tomato salad]

still mad i paid 13$ for shrimp combo at popeyes and this fucker gave me a fist of shrimp. brother, i think the BISCUIT is bigger than the shrimp portion??? like the box was put in vertically in a paper bag and when i looked at it horizontally, the biscuit took up half the box and the shrimp took up the other half and only went up like, maybe halfway up the box. ive bought it before and it covered up the bottom of the box PLUS biscuit on top.
also i asked for another biscuit for a friend and i was like "i could pay" and it was like 1.75$. i did not pay.
popeyes is soooo good but jeezUS is it pricey now AND they skimp on the portions. i thought fast food was supposed to be cheap, this shit expensive. also i was still violently hungry after when normally i order and have enough left for the next day.

Authentic Königsberger Klopse (German meatballs in caper sauce)
Königsberger Klopse, a traditional East German dish, made of boiled meatballs in a white sauce with capers eggs, cream and anchovies. The creamy white sauce has a distinct savory yet tangy taste that makes this dish so popular. The unique flavor combination of capers and anchovies is not typical German food, but in this case, totally delicious!

Didn’t realize that I had frozen sweet potato swapped for my butternut squash I ordered for a grocery delivery (packaging looks the same and both are small orange cubes, so it’s surprisingly easy not to notice) and … how is a girl supposed to make soup in these conditions

Hey can I ask what you did with all the potatoes? Did you just send some to alts? Did you make a bunch of soup with them? Do you still have several bags full? Please I'm so desperately curious
I'd like to say I managed to sell them on the auction house. I'd like to say I made a bunch of soup and then opened a soup kitchen. I really, really would like to say that I have the sense to just sell them to a vendor.
But no. I still have every last spud.

RUSTIC POTATO LEEK SOUP
DESCRIPTION
This Rustic Potato Leek Soup recipe is kept nice and chunky, it’s naturally gluten-free and vegan (no cream), and it’s full of the coziest, comforting, simple flavors.
INGREDIENTS
2 tablespoons olive oil (or butter) 1 medium white onion, peeled and diced 3 leeks, sliced into 1/2-inch half moons (white and light green parts only) 1 rib celery, thinly sliced 5 cloves garlic, minced 1/2 cup dry white wine 1 1/4 pounds Yukon Gold potatoes, cut into bite-sized chunks 6 cups vegetable stock 4 sprigs fresh thyme 2 bay leaves 1/4 teaspoon cayenne (or less, if you prefer) fine sea salt and freshly-cracked black pepper optional toppings: homemade croutons, grated Parmesan, chopped fresh chives
INSTRUCTIONS
Sauté the veggies. Heat olive oil (or butter) in a large stockpot over medium-high heat. Add the onion and sauté for 5 minutes, stirring occasionally. Add the leeks, celery and garlic and sauté for 3 minutes, stirring frequently.
[Note: I reserved about 1/3 of the soup and blended the rest with an immersion blender, adding back in the potato and leek. Tasted great, creamy texture without cream.]
Serve. Serve warm, garnished with whatever toppings sound good, and enjoy!

Letting sausages roast in the oven will eliminate splatter to bother with on the stove, and no need to hover over them while they cook. Lean chicken sausages with basil and feta, sweet potatoes, russets, caramelized fennel and brussels sprouts with the crispy bits. Something for everyone!
