This Paleo-friendly recipe combines the rich flavors of Portobello mushrooms, salty prosciutto, and creamy baked eggs for a satisfying and protein-packed breakfast or brunch option.
Ingredients: 4 large Portobello mushroom caps. 4 slices of prosciutto. 4 large eggs. Salt and pepper to taste. Fresh parsley, chopped, for garnish optional.
Instructions: Preheat the oven to 375F 190C. Remove the stems from the Portobello mushroom caps and carefully scrape out the gills using a spoon. Wrap each mushroom cap with a slice of prosciutto, ensuring it covers the inside of the cap. Place the prosciutto-filled mushroom caps on a baking sheet lined with parchment paper or lightly greased. Crack an egg into each mushroom cap. Season with salt and pepper to taste. Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still runny, or to your desired doneness. Garnish with chopped fresh parsley, if desired, before serving.

Cook Time: 20 minutes

I’ve been experimenting with paprikash recently. It’s usually made with chicken — but I wanted vegetarian so I substituted mushrooms — the last time, with portobellos. That version was the best because portobellos are large and have such a firm-but-tender texture. This recipe has a rich, thick sauce and the cold sour cream on top of the hot mushroom! Oh my!
