GLORIOUS BEEF

Uno sguardo approfondito sulla storia dell’industria americana della carne raccontata da un mastro macellaio.

Tutto ebbe inizio quando Anthony LaFrieda decise di fare i bagagli e trasferire la sua famiglia dall’Italia a New York in cerca di una vita migliore, aprendo la prima macelleria al dettaglio della famiglia nel 1922 a Flatbush, Brooklyn. Quasi 100 anni dopo, il suo bisnipote, Pat LaFrieda, macellaio di quarta generazione e meat supplier di terza generazione, è al timone di un’azienda a conduzione familiare che dal suo esordio ha attraversato due Guerre, la Grande Depressione, gli anni tumultuosi in cui New York City veniva chiamata la Fear City, la caduta delle Torri Gemelle, uragani senza precedenti e persino una pandemia.

La maggior parte dei consumatori oggi non conosce la quantità di tempo, l’impegno e il lavoro necessari per portare un taglio di carne nel nostro piatto. E poi, quali sono le reali implicazioni dei bovini nutriti con erba sui cambiamenti climatici? Cosa comporta la lavorazione della carne negli impianti di trasformazione? Perché classificazione, etichettatura e tracciabilità sono essenziali per il consumatore? E qual è, alla fine di tutto, il problema di fondo, la questione essenziale che sta dietro il mangiare o no la carne? Ci sono due lati di ogni storia; tuttavia, nel caso dell’industria americana della carne bovina, solo una sua parte sembra venga attualmente comunicata. In Glorious Beef, LaFrieda condivide l’eredità della sua famiglia e ci svela ogni fase del processo necessario per portare davvero la carne “dal pascolo al piatto” e le verità che stanno dietro alla narrazione dell’evoluzione di questo settore nel suo grande Paese.
