Coconut Overnight Oats
Coconut yoghurt gives these Coconut Overnight Oats a delightfully Summer-y flavour --to think I used to not like coconut at all! Besides, this high-protein breakfast, ready when you rise, is just what you need when you know you have a long day ahead of you! Happy Saturday!
Ingredients (serves 1):
1/2 cup (high-protein) coconut yoghurt
1 teaspoon Homemade Vanilla Extract
1/3 cup whole rolled oats
fresh berries, rinsed, to serve (optional)
In a small bowl, combine coconut yoghurt and Vanilla Extract. Give a good stir until well-blended. Then, gently fold in whole rolled oats until completely combined.
Spoon mixture into serving bowl, and cover with cling film. Store in the refrigerator overnight.
The next day, remove cling film, and enjoy Coconut Overnight Oats with fresh berries, if desired.

#it is seriously the easiest thing in the world to make#2 eggs. any milk or cream or whatever you have on hand. oat milk works too. maybe a third of a cup I never measure#lump of sugar. brown if you’re feeling crazy. splash of vanilla extract#cinnamon (just go ham)#nutmeg (heard this makes you hallucinate if you add too much but I’ve added a lot and never had anything happen) (freshly grated if you can)#pinch or two of salt. whisk. dunk your bread (any bread) (thicker is better and don’t use bread that’s too soft unless you’re ok with soggy)#(I use cinnamon raisin bread if I have it)#heat up pan. butter in pan. bread in pan. like a minute or two on each side bro idk this depends on your pan setup#get that shit crispy#oh yeah when I say dunk the bread I mean like 30 seconds in the egg mixture each side#when you put it in the pan make sure whatever side was down in the batter last is facing up in the pan.#for toppings keep it simple I do fruit and or vanilla greek yogurt#if you’re a sicko you can do syrup and all that but to me. Chobani vanilla greek yogurt

Honey and Nutmeg Porridge
On a cold morning, this Honey and Nutmeg Porridge, steaming in a deep bowl, makes a lovely breakfast. The warming flavours of honey and nutmeg are beautifully brightened up by the addition of fresh berries! Happy Thursday!
Ingredients (serves 1):
1/3 cup rolled oats
Nutmeg
1 cup semi-skimmed milk
½ teaspoon Homemade Vanilla Extract
2 teaspoons fragrant pure honey (like heather or Provence Flowers Honey)
fresh fruit, like blueberries or Red Currants, to garnish (optional)
more honey for drizzling
Spoon rolled oats in a medium saucepan. Grate in about 1/2 teaspoon nutmeg. Stir in milk and Vanilla Extract.
Heat over a low flame, stirring often until mixture thickens, about 5 minutes. Stir in honey until completely dissolved.
Remove porridge from the heat and spoon into serving bowl. Top with blueberries and Red Currants, if using, sprinkle with a grating of nutmeg, and drizzle with honey.
Enjoy Honey and Nutmeg Porridge immediately.
