Mincemeat Porridge
On a wet and soggy and chill Saturday morning mid-January, a comforting bowl of hearty and spiced Mincemeat Porridge sounds like a good idea, doesn't it? And returning in bed, under the warm duvet, sounds even better! Happy Saturday!
Ingredients (serves 1):
1/3 cup rolled oats
1 cup semi-skimmed milk
½ teaspoon Homemade Vanilla Extract
1 heaped tablespoon Ava’s Mincemeat
1/2 tablespoon unsalted butter
1 teaspoon demerara sugar
another heaped tablespoon Ava’s Mincemeat
Spoon rolled oats in a medium saucepan. Stir in milk and Vanilla Extract.
Heat over a low flame, stirring often until mixture thickens, about 5 minutes. Stir in Ava’s Mincemeat, butter, and demerara sugar until completely melted and combined.
Remove porridge from the heat and spoon into serving bowl. Top generously with more Mincemeat.
Enjoy Mincemeat Porridge immediately.

the problem is i didnt measure my ingredients, i just put stuff in a bowl until it looked right which means i cannot share the recipe. i may not even be able to replicate it in the future
#i can guesstimate the amounts#1 cup granulated sugar 1 tsp vanilla extract 1 cup oil 2 egg 1 tbsp molasses mixed together#1 cup flour 1/2 tsp baking soda 1/2 tsp salt 1 tbsp cinnamon 3 cups of instant oats 1 cup peanut butter#the peanut butter probably should have went in the wets but i decided after mixing everything that oatmeal cookies are just better with pb#bake at 350 for 12 min#i set the timer for 10 but sat on the couch well after it went off

Toasted Oats Porridge
It is a very simple oatmeal recipe, but toasting the oats, like Nigel Slater mentioned taking a fancy to in a chapter of The Christmas Chronicles, makes this Toasted Oats Porridge an especially comforting brekkie, bringing out a delightfully nutty flavour to warm a cold and grey morning! Happy Thursday!
Ingredients (serves 1):
1/3 cup whole rolled oats
1 cup sem-skimmed milk
1 teaspoon Homemade Vanilla Extract
a pinch of fleur de sel or sea salt flakes
2 heaped teaspoons demerara sugar
Heat the bottom of your saucepan over a medium flame.
Add the rolled oats, and toast, stirring occasionally, until they take a nice golden brown hue, and are just fragrant, about 5 minutes.
Remove from the heat, and allow to cool slightly, a couple of minutes.
Stir in milk and Vanilla Extract.
Return over a low flame, sprinkle in a good pinch of fleur de sel, and cook, stirring often until mixture thickens, about 5 minutes. Stir in half of the demerara sugar until completely dissolved.
Remove porridge from the heat and spoon into serving bowl. Sprinkle with remaining demerara sugar.
Enjoy Toasted Oats Porridge hot.
